An Ode To Toast: 4 Easy (But Drool-Worthy) Vegan Combos

Just like smoothies, I make toast just about every day of the week in some form or other. It’s one of my favourite quick and easy lunches or snacks. It’s hard to beat the comforting, warm, and crunchy experience that toast provides in just a few minutes. Plus, the flavour possibilities are endless! I’ve always preferred an open-faced sandwich to the traditional kind because I can load on the toppings as much as I please and if it ever gets out of control I just eat it with a knife and fork. Fancy, right? Since we’ll soon be relying on our toaster quite a bit during our kitchen reno in August, I thought it would be nice to round up some of my favourite toast combos of late – two savoury and two sweet. For my chia seed jam recipe, see this post. Note: You can use any kind of fruit you prefer. Some large fruit pieces (like frozen mango or strawberries) will benefit from a gentle mashing near the middle of cooking.

I shared this beauty on Instagram the other day and it had a great response which is why I thought a toast round-up might be a nice change of pace! This combo is probably my most made toast ever…I just can’t get enough of it. Tip: I love the Kirkland brand of organic slow-roasted tomatoes found at Costco! They are totally dreamy on toast and in homemade pesto.

The grown up PB&J looks amazing! I love raspberry so much! The Elvis looks like a great treat too!

It is funny you mentioned you eat toast daily. I have to say, it is one of my favorites. I, too, load mine down with a lot of wonderful things. Right now, my favorite is smashed avacodo , sliced tomato and salt and pepper. Simple but delicious. I am very excited about trying your suggestions. Thanks.

I am always looking for ways to change up my vegan sandwich instead of just gluten free deli meat and cheese (lol). This is awesome! (ps those slow roasted tomatoes almost look like a bacon on the avocado sandwich.

Wow these sound phenomenal! I love toast, particularly if I use Ezekiel Sprouted Sesame Bread as the base.

One of my favorites in the “Toast Hall of Fame” is this combo:

Toast 1 slice bread of choice. Spread with 1 tsp of coconut oil. Top with 1/2 mashed avocado, squeeze of lemon, squirt of Siracha and sprinkle of flaky sea salt. Add hemp hearts for protein!

It’s positively ADDICTIVE!

I am drooling!! These combinations of toasts look amazing! I can’t imagine how amazing ‘the elvis’ would tast with fresh crunchy bakery bread! Yummy!!

My stomach is loudly demanding yummy toast now…and midnight is approaching. lol. I love peanut butter toast with applesauce on top, eaten with a fork. Drizzle maple syrup for a bigger treat. I also like sliced bananas on pb toast with the syrup. Oh, boy, I’m really hungry now!

Oh Angela these look ridiculously amazing! Your recipe are all incredible. I’ve been pretty much eating on your food for the past week and I already feel so much more healthy. I had anorexia when I was 15 for a number of years and I’m still learning to nourish my body and not want to starve myself. Really tough but you’re inspiring me to look at food in a different way. Thank you for helping me focus on my health :)

Mastering a handful of tasty and nourishing toasts will be very helpful when your arms are full with baby girl…and you both want to eat…now! I have just enough time in the morning to throw in some toast. But i will be trying your toasty masterpieces soon! Thanks

My favorite toast recipe is pan con tomate. Toast whatever bread you have around. While its toasting, grate a tomato and cut a clove of garlic in half. Take out the toast, drizzle on some olive oil and then rub the garlic on the toast. Top with the grated tomato and little black pepper,

Angela, I can’t even tell you how many of your posts have gotten me out of a serious sandwich/lunch rut! It really was one of the hardest things for me when going vegan, because I couldn’t think of anything to slather on bread other than peanut butter and jelly. You rock!! :D

I’ve been having crazy bread cravings lately, I MUST go get some! Its also been very hot where I am (no AC) so anything I can prepare without having to go near the stove is a life saver! Speaking of, I’ve been trying out some of your no-bake desserts- fantastic! Thanks so much!
