An Ode To Toast: 4 Easy (But Drool-Worthy) Vegan Combos

Just like smoothies, I make toast just about every day of the week in some form or other. It’s one of my favourite quick and easy lunches or snacks. It’s hard to beat the comforting, warm, and crunchy experience that toast provides in just a few minutes. Plus, the flavour possibilities are endless! I’ve always preferred an open-faced sandwich to the traditional kind because I can load on the toppings as much as I please and if it ever gets out of control I just eat it with a knife and fork. Fancy, right? Since we’ll soon be relying on our toaster quite a bit during our kitchen reno in August, I thought it would be nice to round up some of my favourite toast combos of late – two savoury and two sweet. For my chia seed jam recipe, see this post. Note: You can use any kind of fruit you prefer. Some large fruit pieces (like frozen mango or strawberries) will benefit from a gentle mashing near the middle of cooking.

I shared this beauty on Instagram the other day and it had a great response which is why I thought a toast round-up might be a nice change of pace! This combo is probably my most made toast ever…I just can’t get enough of it. Tip: I love the Kirkland brand of organic slow-roasted tomatoes found at Costco! They are totally dreamy on toast and in homemade pesto.

Hi there — Can anyone answer this: I have bags of almond meal, and I don’t have a good blender or FP. When a recipe, such as the nutty herb croutons, calls for 1 cup of almonds ground up, can someone tell me what the equivalent is for almond meal? In other words, does 1 cup almonds ground up = less than 1 cup almond meal or = more than 1 cup almond meal? I’ve been googling and found inconsistent answers! Thanks very much.

Hi Sarah, It’s from a bakery called Organic Works (GF + Vegan oat, buckwheat, and flax bread) HOpe this helps!

The Grown-Up PB&J and The Elvis just made my morning breakfast list! I always wake up with a sweet tooth so I try to find sweeter things to eat in the morning that aren’t cinnamon buns and syrupy pancakes. Thank you so much for these suggestions! I am on such a hugh toast kick these days myself. I definitely am more of the sweet toast than a savoury toast type. Will definitely be trying out the elvis, it looks sooooo good!!

Ohhh I say YES to all of these!!!! Toast is pretty much the best–so versatile, crunchy, and yummy. :D I usually have it with nut butter, banana, chia seeds, and yogurt on top with cinnamon. Or the savory kind–melted cheese, hummus (sometimes deli meat, hehe), avocado, spinach, and SRIRAACHAAAAA

So difficult to find in my neck of the woods in France…would you be willing to share your Ezekiel Bread recipe?! I tried it once and found it delicious! Love all four of these toast ideas to accompany the bread! Bonafide raspberry chia jam freak…and the maple bean version with its protein jolt needs to be made!

My favourite sandwich is avocado + tomato sauce, and I LOVE hemp seeds, so I’m sure you made The Vegan Delight just for me ;)

And I think I’m going to try The Elvis with my recently-discovered pumpkin seed spread (yummo) and some of the best raw vegan chocolate in the world (Pana Chocolate).

So much good food to enjoy, thank you. I’m drooling already :D

I LOVE toast! I am so glad to see a blogger who has no fear of bread! In Spain (where I come from) bread is a basic ingredient in most of our meals. I usually like to keep it simple and eat toast with olive oil and salt. I also love to add some natural juicy tomato, olive oil, salt and pepper. Another combination that I love is butter and sugar or white wine and sugar (yes! wine, it is an old tradition and totally reminds me of my grandfather).

Love this for a quick, easy lunch. The third time I made it I had no tomatoes so I spread the toast with some tomato paste and it was still great.
