An Ode To Toast: 4 Easy (But Drool-Worthy) Vegan Combos

Just like smoothies, I make toast just about every day of the week in some form or other. It’s one of my favourite quick and easy lunches or snacks. It’s hard to beat the comforting, warm, and crunchy experience that toast provides in just a few minutes. Plus, the flavour possibilities are endless! I’ve always preferred an open-faced sandwich to the traditional kind because I can load on the toppings as much as I please and if it ever gets out of control I just eat it with a knife and fork. Fancy, right? Since we’ll soon be relying on our toaster quite a bit during our kitchen reno in August, I thought it would be nice to round up some of my favourite toast combos of late – two savoury and two sweet. For my chia seed jam recipe, see this post. Note: You can use any kind of fruit you prefer. Some large fruit pieces (like frozen mango or strawberries) will benefit from a gentle mashing near the middle of cooking.

I shared this beauty on Instagram the other day and it had a great response which is why I thought a toast round-up might be a nice change of pace! This combo is probably my most made toast ever…I just can’t get enough of it. Tip: I love the Kirkland brand of organic slow-roasted tomatoes found at Costco! They are totally dreamy on toast and in homemade pesto.

Yummy! All of these look delicious! One of my fav. combos is almond butter w/ cherry chia seed jam. (If you’re making homemade, try adding almond extract to you’re jam; it’s amazing)
Almond butter also pairs well with apricot jam. ;)
And cherry jam is awesome with pistachio butter, but obviously that’s harder to find. (I make my own, but I’ve seen it at Whole Foods too)

Waaa amazing! I made my own elvis sarnie for breakfast yesterday in fact, with a combo I like to call the Schmelvis! Banana, Mixed seed butter on one slice of bread and homemade nutella on the other mmmmmmmmmmmm.
I love your pimping up of the traditional avo on toast (today’s lunch choice) I’ll have to steal these ideas for my next lunch!

Yum! All of these look delicious. Sometimes toast is extremely underrated. Also, this might seem silly, but I love how you cut the banana in long strips rather than little rounds!

Avocado toast is a favorite of mine! If I have it around, I like to smear a little pesto on the bread before piling on the avocado, yum!

I’m with you! I think my love for toast came about when I started eating Ezekiel. It stays good a lot longer when you freeze it, so I was always popping slices int the toaster! My favorites are obviously banana and nut butter and avocado but I also really like a spread of hummus with some grilled veggies. So good!

My recent favorites:
toast+almond butter+chopped dark choco(melted)+fresh raspberries! (I dont like bananas, so raspberry works wonders!
toast+your chickpea salad from the cookbook
toast+avocado+evoo+sea salt (my favorite!)

So fun! Toast is not something I think of much (mainly because I never have bread around…), but these are very inspiring. Definitely a good alternative when my oatmeal-every-day gets old!

Yes!! I love toast!! My favorite is white sourdough with Earth Balance and fresh sliced strawberries. I also like tahini, with or without strawberry jam. When I’m being really bad, white pita toasted with Earth Balance and cinnamon sugar (hi, no food value :-) ). I recently had wheat pita toasted with leftover OSG chana masala and mango chutney! But all four of these are definitely being tried … can’t wait!

Hahaha, the beans on toast reminded me of my great uncle, he’s from the south and says he doesn’t go a day without eating beans on brown bread – “poor man’s food”. His is probably way less tasty than yours. mmmm, I love me some toast. It’s one of my all time favorite smells. I wish someone made toast scented room spray. seriously

These are all beautiful Ange! I was at Costco yesterday but totally forgot to look for those tomatoes. They’ll be on my list for next week! I love smashed avocado on toast, and I’m thinking that with some marinated sliced tempeh bacon and roasted red pepper slices would be amazing!

“The Elvis” looks like my dream! I love the combo of sunflower butter, banana, and chocolate. I usually just eat the 3 together — but if I put them on toast, it’s breakfast, right? :) You sure know how to make toast look fancy.
