Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

The Narnia series is my favorite collection of fiction. I love the worlds created and it reminds me of being a little kid every time I read it again :)

They parfait looks soooo good! My favorite fiction book is Twilight I’ve read it 5 times lol. I love to read, I’m a bit of a nerd!

I read this a long time ago, but I absolutely loved “The Lovely Bones” by Alice Sebold. :) Jodi Picoult books are awesome too (including My Sister’s Keeper)!

I just finished reading the Sookie Stackhouse saga by Charlaine Harris. These are the books that True Blood is based on. Loved them. Also recommend the Twilight series and Jean M. Auel who did the Clan of the Cavebear series.

That parfait looks soooo good. The last fiction book that I remember reading that I really liked was Scribbler of Dreams.

Hi, Anything by Elin Hilderbrand, all of her novels take place on Nantucket Island, one of my very favorite places. She wrote books such as The Blue Bistro (which is a wonderful book for anyone who loves to cook/bake or interested in having a restaurant), Nantucket Nights, The Beach Club, A Summer Affair, The Castaways, Barefoot, Summer People and The Love Season . I’ve read them all and they are great! Enjoy!

That parfait looks DELISH!!..O ya, My fav fiction book right now is “The Road” by Cormac McCarthy.

WOW nut n budder looks delicious!! I am going to be a huge dork and fess up to the Harry Potter series being my favorite set of fiction books. not that I have time to read for pleasure while in college anyway :(

You are so creative, I can never get that creative in the mornings with my breakfast!

I love anything by Nicholas Sparks or Jodi Picoult. I really liked “My Sisters Keeper”…the book. Still haven’t gotten to see the movie yet.

I’m into fantasy and SF. It’s so hard to choose favorites, but if you’re interested in going in that direction, “The Crystal Cave” by Mary Stewart is a classic Arthurian tale that has greatly influenced how we see Camelot, and Merlin in particular, today.

That parfait is genius…and it looks beautiful!!!

Hmm…favorite book…that is such a hard question. I used to be really into nonfiction when I was younger so my tastes may be a bit juvenile. : ) I do love Regina Doman’s books a lot. Hopefully that counts even though it isn’t one single book.

My favorite fiction book is “The Red Tent!” You won’t be sorry you read it!!! I have gifted it to 3 or 4 people and everyone loved it! HIGHLY RECOMMENDED!!!
