Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

all time top favorite fiction book is more of a series! John Sandford Prey series is awesome!

Some of my favorite fiction books are Time Traveler’s Wife and Life of Pi.

So hard to pick, but my favorite fiction book is technically a “young adult” book. The Giver by Lois Lowry. I first read it in 8th grade, then studied it for a childrens literatur class in college and its still wonderful 10 years later.

I love, Love nut butter ;)

I’ve been reading alot of non fiction lately, a miilion little pieces, a wolf at the table, running with scissors, ect. All very good! A book that comes to mind though is suzannes diary for Nicholas. Read it over 5 years ago and I can remember every part

I love the James Patterson series of the Women’s Murder Club. Great if you like mysteries. I recommend starting with number one “1st To Die” and working your way through. They are great reads!

“The Help” by Kathryn Stockett!!!!!!! You must read it, sooo good! I love all nut butters and would LOVE to try Nut n Budder!!

I will read just about everything, but my absolute favorite is a science fiction novel titled Ender’s Game. I read this book in my teens, and have probably reread this novel at least 10 times!

Hey, its hard to pick just one, but I love The Time Traveler’s Wife. Marley and Me would be a close second – (the book is wayyy better than the movie).

That Nut Budder looks delightful. One of my favorite fiction books I’ve read is A Lantern In Her Hand (it’s an old one…published 1928)! Another wonderful story (more of a biography) is My Sergei.

Mmmm…looks yummy…..if I don’t win I may just go to Loblaws and pick some up (I have seen it but wasn’t sure if I should buy it)… Just read My Sisters Keeper….its a good book!

As far as books go, I am a bit of a sci-fi/fantasy geek.
My favorite series (can read it over and over) is the Legend of the Seeker series by Terry Goodkind.

They actually recently started a TV show modeled after the series. It’s on WGN or something like that in the US!

you probably don’t remember, but when you asked about favourite nut butters, i said ‘nut n’ budder’, so i juuust about peed myself with excitement when i saw this. i may or may not need a new pair of pants right now. and YES i would like to win the nut buttery pair!

as for favourite fiction, i think harry potter is always going to be the guy for me.

That looks awesome!

I think I would have to say that my all time favorite fiction book is Anna Karenina. I know it looks awfully daunting and LONG (it is quite long), but I really loved it and never got bored reading it.

I also adore the Harry Potter series, it is such a nice way to just escape and forget about the “muggle” world for a little while!

“year of wonders” by geraldine brooks is one of my favorites. it’s engrossing, heart wrenching, magical, beautiful. everything a good book should be!

That looks sooo delicious. I just got some natural peanut butter today. First thing tomorrow that’s what I’m making. Never tried any other butter than peanut but I’ld love to try the cashew that you’ve been talking about. I really love your blog! Really!

Mmm, I want some of that Budder!!

I’m a non-fiction kind of girl but my favorite fiction book has to be Mists of Avalon by Marion Zimmer Bradley. It’s huge but it’s so worth reading.
