Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

Oooh that parfait looks awesome! I bet the different textures just made it.

I could never pick my favorite book. That is like asking me to pick a favorite movie, song, or food! But I just recently read Firefly Lane and it was great!

I love books, it is hard to pick one favorite…
A few good ones, if you haven’t read them yet:
The Secret Life of Bees, The Memory Keeper’s Daughter, Where the Heart Is, and I always enjoy books by Fannie Flagg. Good luck choosing a great next read =)

ANYTHING by Emily Giffin, I just got an advance copy of her newest book not out until May because my Stepmom owns a bookstore and I can’t wait to start (and finish!) it!!

Wow that looks insanely yummy!
The best book EVER is “PILLARS OF THE EARTH” by KEN FOLLET – and this is coming from someone who LOVES to read but it takes a lot to grab me. I read this book 20 years ago and could not put it down. There are 1000 pages but you will cry when it gets close to the end because you don’t want it to be over. Funny it was on Oprah’s book club and she said the same thing. Anyone else that I talk to that has read it also says it was the greatest book of all time. Just google it and you will see how many people agree. I don’t know how he does it but it will stay with you forever. Remember “PILLARS OF THE EARTH” :)))) you won’t be sorry.

Since I consdier myself a serious Peanut Butter addict, the Nut N Budder looks delightful.

I have not read this book yet, but everyone I know raves about it. On the Road by Jack Kerouac! Happy reading

The Time Traveler’s Wife is a wonderful book….if you seen the movie it is 100x better than that! It is kinda long…but so worth it!

Love your site! And I found that I got a lot hungrier when I started weight training as well. I switched up to a lot of small meals during the day and that’s helped a lot.

My favourite fiction book (do I have to pick just one?!?) :)
Probably “The Kitchen Boy”.

I’m a big fan of Nicholas Sparks books. If you want to see Dear John, you need to read it, too! I loved “Last Song” by him and can’t wait for that movie, too!

I saw the trailer/read about on IMDB Dear John and it looked so sad! I couldn’t stop thinking about it for like 3 days and I wanted to cry every time it passed my mind. I saw Walk to Remember a looong time ago, and liked that. Why are his books and movies so sad? Not that that will stop me from reading/watching… He’s a great author.

That parfait looks awesome. I have noticed that when I start lifting heavy, I get hungry a lot more. I have found that if I replenish with protein within 15-30 mins of the lifting, then I am much better. One of my favorite fictional books is Icy Sparks by Gwyn Hyman Rubio. It’s been out a while now. I am a reading junkie! I must own the hardback too. Oh, another fantastic book (older too) is White Oleander by Janet Fitch.

Good Morning!!

The Life of Pi is my favorite fiction book.

SUCH a great story – one of those books that even though you forget some of the story over the years you always look back on it with nostalgia for the great story that was told :)

OOh and its not dauntingly huge – something that you can pick up and easily read, probably a good ‘breaker inner fiction book’ ;)

Definitely read THE ROAD by Cormac McCarthy. Amazing, quick read. And the movie is out now, too.

You NEED to read “The Saint, The Surfer and The CEO” by Robin Sharma. It was the most inspirational book and really helped me understand that I should be truly enjoying everyday to it greatest potential.

That parfait looks amazing!!! I know what I’m having for breakfast tomorrow. I’m a classics girl, so my favorite is Pride and Prejudice. A close second is Middlemarch by George Eliot. Happy reading!

hmm…way too many favourites but I loved “What is the What” by Dave Eggers and “The Book of Negroes” by Laurence Hill (it has a different name in the states.

I’m SO glad you tried this Ange – I have been eyeing it for a while in the grocery store (Frank is a PB addict) but wasn’t sure about – now I’ll buy it for him :)

I am going to bring you a stack of fiction books by my favourite author when I see you – did you ever see My Sister’s Keeper (the movie) – well it was a book first and that author writes the most heart wrentching but amazing books – they are always on controversal issues – the authors name is Jodi Picoult!

This oatmeal looks FANTASTIC! Much more fancy than my meager bowl of pumpkin oats this morning ;)

Fiction..fiction..where to start! I ADORE fiction. “The Sight” by David Clement-Davies is FANTASTIC. It’s about wolves, but it’s really deep beyond that, It always brings tears to my eyes! He has another book called “Firebringer” that is really good too.

I think my all time favorite book is Jane Eyre- such a romantic book! I also really liked Frankenstein, surprisingly. One that I just read recently that I liked pretty well was The Reader- it was made into a movie last year with Kate Winslet. Happy reading!

That nut butter looks amazing as does the parfait. My favorite fiction books are anything by Nicholas Sparks. He’s the best ever. You can’t go wrong with anything by him.

I don’t know what my all-time fave fiction book is, but the last book I read was The Lost Symbol by Dan Brown and it was amazing! Can’t wait for the movie!
