Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

These butters look lovely, I live in Canada and have yet to see them around.

My favorite book is actually Crime and Punishment. It’s hard to get through, but gives you a lot to think about.

mmm, parfaits are delicious! :)
Summerland (by Michael Chabon) is a great book. Technically it’s written for young adults, but anyone of any age would enjoy it because it’s a really exciting but also insightful story! He is an amazing writer, too; every word fits the story perfectly, if you know what I mean. Soo good!

YUM! I LOVE different nut butters and oatmeal so I think this will be a real winner. I am going to try it out tomorrow morning! I am a book lover, so if I had to pick one off the top of my head I’d say truth and beauty by ann pachett.

First, you seriously rock. I’m comment 443!! You must be doing something right. Second, looking forward to trying Nut Budder regardless of whether I win.
Third, I read a lot non-fiction too. But one of my favorites is still the Time Traveller’s Wife (I haven’t seen the movie). Anything by Jodi Picoult. All of the Harry Potter books.
Not fiction, but a different book for you – Into Thin Air – John Krackaur (not sure how to spell that). I love going to the library and looking at new release books too. There is usually something interesting to check out.

Hi, first time replyer (just because i love literature). Okay, if you like confusing heartbreakingly good classics i recommend As I Lay Dying by William Faulkner, Brave New World by Aldous Huxley, One Hundred Years of Solitude by Gabriel Garcia Marquez. If you like long good family story Rain of Gold by Victor Villasenor, and Revolutionary Road by Richard Yates. If your more into experimental fiction then i really recommend House of Leaves ( weird and confusing, but worth it). But if you want like a love story then i recommend anything by Sarah Dessen she has the funniest characters, also All the Pretty Horses by Cormac McCarthy, anything by him is genius. If you like adult funny then i recommend Choke by Chuck Palanuick. Hope that helped some and i love all of those books.

My favourite recent fiction read is The Time Traveller’s Wife. A bit of mystery, a bit of fantasy, a bit of romance – wonderful story.

Where did you buy the NutnBudder? This parfait just may get me eating oatmeal!!

That looks soooo good! My fav fiction book..ooh..Time Traveler’s Wife, The Lovely Bones, and A Million Little Pieces or My Friend Leonard. Not sure if the last two are fiction or non. There is some debate about that.

“The Plague” by Albert Camus may be the best book ever. Period.
But “If on a winter’s night a traveler” by Italo Calvino is a pretty close second…

Wow I don’t know if I could pick my favorite ever. I’ve read so many awesome books! I love The Pact by Jodi Picolt that others have mentioned. I just read Girl with the dragon tattoo which was SO good also. SO many good books to choose from!

My favorite fiction book I ever read was Shes Come Undone by Wally Lamb-second fave The Scandolous Summer of Sissy LeBlanc-cant remember the author Im sorry =(

First, my favorite book is Jane Eye, but I also enjoyed Scarlet Letter. Recently I LOVE the books by Philippa Gregory, her most famous is probably The Other Boleyn Girl.

Second, the reason you’re more hungry is you burn more calories when you have more muscle. Since your strength training, your muscles are getting stronger and more efficient and therefore you need more food to sustain your body.
