Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

I love anything Kurt Vonnegut! Cats Cradle and Breakfast of Champions are my fav. His books are classics and he is very well respected literary-speaking. His style is a little out there, though.

Oh my. Nut ‘n Buddah…looks awesome. It’s creaminess reminds me of my favorite brand of cashew butter.

My favorite fiction book? Oh gosh, I’d say it would be anything by Willa Cather, a Nebraska native (I’m from Nebraska, born and raised!) My favorite title of hers is “O, Pioneers!”

I am a big fiction reader and my all time favorites are the Stephanie Plum Series by Janet Evonovich. The are such a great escape and I promise they will make you laugh out loud!

Oh there’s nothing I like better than a nut butter on a nice crunchy apple! Excellent pre-run food in my opinion!

Some of my favourite fiction selections are: Cats Eye, To Kill A Mockingbird, Dance of the Happy Shades, Winter of Our Discontent, Age of Innocence, The Good Earth, and of course anything Austen!

A couple of my favorite books are The Glass Castle by Jeanette Walls and then anything by Sophie Kinsella. She writes such great “escape” books!

mmmm… That looks delish! I love Jane Austen novels – Mansfield Park and Pride & Prejudice are my faves!! And anything by Kurt Vonnegut – makes me LAUGH and makes me THINK.

Oh yum looks delish!! If you’re in the mood for some “chic lit” I love Sophie Kinsella books. She wrote all the Shopaholic books, and a few more. They’re fun!

Favourite fiction books right now, Twilight series! There I admit it, I am a grown woman and I read them – they are sooooo good how can you not!!

I too would love to know where you bought the nut butter. My son is a huge peanut butter fan and I would love to try that for him.

That Nut Budder looks sooo good!!! Yummmm!

I must admit that I love really easy, romance books when I’m not in school. Nora Roberts and Nicholas Sparks are good for that. However, I also love anything by Jodi Picoult (she pulls the emotions out of you), Emilly Griffin, and Cathy Kelley. If you want, I can send you a lot of them :)

That parfait looks great! I’m going to have to try that!
It’s fun to see everyone’s book suggestions. Last summer I read Edgar Sawtelle and really enjoyed it. A little weird, but still good. And of course, you have the Twilight books, The DaVinci Code, and any of the Janet Evanovich books.
So, this isn’t fiction, but I just read Animal, Vegetable, Miracle by Barbara Kingsolver, and it was great!
Ok, I am guessing you will have a gazillion titles to search through now with all of your comments!
