Holy smokes it’s Friday again!
I swear it feels like it was just Friday.
Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.
I did a 3 mile run:
- 3 min walking warm-up
- Mile 1: 6.0 mph, incline 2%
- Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
- Mile 3: 6.0 mph, incline 2%
- 2 min walking cool-down
Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.
Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.
This morning I woke up COLD. A Green Monster or juice was not going to cut it.
I was really excited to try out this new product:
Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! I could *probably* find it if I really wanted to though…if you catch my drift…
Creamy PB + J Oatmeal Parfait
Ingredients:
- 2/3 cup regular oats
- 1 T chia seeds (optional)
- 1/3 cup coconut milk
- 1/2 cup almond breeze
- 1/2 cup plus a bit more water
- pinch salt
- 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)
Layers/Toppings:
- Strawberry jam
- Nut ‘n Budder
- peanuts
Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!
YUM!
Would you like a chance to win a jar of the Almond Budder Extreme and Nut ‘n Budder?

If you want you can tell me your all time favourite FICTON book! (Yes, I am in the market to start fiction reading again and looking for good ideas!!)
Contest is open to US and CAD residents only please.
I will be selecting TWO winners. Contest open until tonight at 11pm EST.
Have a great Friday!

i could never pick just one favorite book but the last fiction book to really stick with me was “the last song” by nicholas sparks. the movie comes out sometime this year too! oh, and that nut butter looks delish!!
yummm looks so tasty. i love the parfait idea! i agree with kristin – the time traveler’s wife is really good – you should also check out the amazing adventures of kavalier and clay by michael chabon.
harry potter is my favorite!
Besides Harry Potter, most books by Jodi Picoult are my favorite! They’re big courtroom dramas, and always keep me guessing. My two favorite by her are The Pact and Nineteen Minutes.
Pillars of the Earth by Ken Follet. It’s awesome!
I loved A Thousand Splendid Suns by Khaled Hosseini. It’s an amazing insight to the lives of Afghani women though it’s written by a man. The book both broke my heart and inspired me at the same time. It’s hard to imagine those kinds of living conditions in our “modern, western” world. I’ve never been more grateful for the freedom Western women possess.
‘parfaits! everybody loves parfaits.’….courtesy of donkey in SHREK. I’m going to test out the oatmeal parfaits at a sunday brunch , thanks for the great idea!
my favorite fiction books in recent yrs…twilight series + queen of babble series – very fluffy chic lit, but a great quick read.
MMm that parfait look so yummy! Also loving the sound of the new nut butter (and yay for Canadian products!)
As for books, the only reading I’m up to lately is textbooks, which I’m pretty sure you don’t want to be reading (although I do have one on food chemistry thats actually pretty interesting) but a while back I signed up for this online programme through my library where they e-mail you the first chapter of a book (broken up over the five days of the work week) each week according to the genres you selected. I really like it because it gives you a chance to see if you are interested and it gave me book ideas I never would have come across otherwise. I suggest you check it out!

That stuff looks delicious!
I’m having a hard time picking out a favorite fiction book. I’ll narrow it down to:
A Man in Full, Tom Wolfe
Sister Carrie, Theodore Dreiser
Anna Karenina, Tolstoy
Hi Angela!
I’ve been lurking for a long time, but I don’t think I’ve posted here yet :)
I have two different book choices for you to pick from, depending on your mood!
Sometimes I’m just looking for an easy-to-read book that’s long enough to keep me reading for a few days (I hate books I can blast through in one night!) and that’s cute enough to get me smiling. I love Marian Keys and her books “Sushi for Beginners” and “The Other Side of the Story.” They’re addictive and -really- heartwarming.
I’m a HUGE historical fiction buff and I love Philippa Gregory’s fiction novels :) “The Other Boleyn Girl” is wonderful (the movie, unfortunately, did an awful job), as is “A Respectable Trade”, for an alarming look into slavery in Britain. I can’t praise her writing enough.
Hope these help – those butters look delish!
Miss
Yum that breakfast looks amazing!
It is too hard to pick a favourite book so instead I will list my top three!
1. Water For Elephants by Sara Gruen
2. Snow Flower & The Secret Fan by Lisa See
3. The God of Animals – Aryn Kyle
You have been cranking out some fabulous meals over here!!! That parfait looks incredible!
that oatmeal parfait looks amazing!!!
i know it’s cheesy to say, but i loove the twilight series. ;p
but a book that i LOVE that i probably would never have even thought to read had my friend not suggest & lend me the book would be “beneath the marble sky” by John Shors. It’s a historical fiction love story about the taj mahal. :)
Anything by Amy Tan. The Joy Luck Club is an all time favorite of mine.
Also love Nicholas Sparks and Anita Shreve.
Ooo! I would <3 some nut butter! :)
I'm a sucker for Nicholas Sparks. They are usually pretty easy reads, and are always intriguing!
Angela, your food presentation is incredible! I don’t know how you have the patience, I would scarf down that delicious food before I ever had a chance to make it look ther perty =) Nut n’ Budders looks YUM! The almond looks even better!
I don’t get a whole lot of time to read, but I do like the Dan Brown Books (haven’t read The Lost Symbol yet though) and I like to get them when the illustrated version comes out.(it makes it feel less like reading a book and more like reading a magazine, or journal or something.)
Yowza, lots of comments.:) I would love to try that brand. I have so manyy books I like. Are you wanting to read suspense? The Sue Grafton series are really good, they start from “A” and her latest is “U’. Mary higgins clarke is really good as well.
I just finished all my Glo Bars.:(
First, I’d like to say, I love your blog! I’m a new follower and am enjoying it. I’m also a runner and recovering from an injury so reading how you recovered and are back to running is giving me hope that I can come back fully to running again.
My favorite book is “The Pact” by Jodi Piccolut. The made-for-tv movie was horrible, the book was excellent. Another great book by her is “Nineteen Minutes”. I’ve recently gotten into some memoirs, such as those by Stephanie Klein, “Moose” and “Straight Up and Dirty”. I know you asked for one but you couldn’t go wrong with any of those!
That parfait looks awesome and thanks for the great blog!
I love love love all things peanut butter so I really want to win! I like the classics when it comes to fiction. Jane Eyre is a good read, as is anything Jane Austen. Pride and Prejudice is just better as it is written!
