Holy smokes it’s Friday again!
I swear it feels like it was just Friday.
Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.
I did a 3 mile run:
- 3 min walking warm-up
- Mile 1: 6.0 mph, incline 2%
- Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
- Mile 3: 6.0 mph, incline 2%
- 2 min walking cool-down
Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.
Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.
This morning I woke up COLD. A Green Monster or juice was not going to cut it.
I was really excited to try out this new product:
Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…
Creamy PB + J Oatmeal Parfait
Ingredients:
- 2/3 cup regular oats
- 1 T chia seeds (optional)
- 1/3 cup coconut milk
- 1/2 cup almond breeze
- 1/2 cup plus a bit more water
- pinch salt
- 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)
Layers/Toppings:
- Strawberry jam
- Nut ‘n Budder
- peanuts
Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

One of my favs would be “A Thousand Splendid Suns” by Khaled Hosseini (the same author of “The Kit Runner”). I couldn’t put the book down and finished it in 2 days. For me, that is the mark of a good book. :)

As for fav fiction, hard to pick just 1 – I love to read. If its chick-lit, I love the book “Shoe Addicts Anonymous” by Beth Harbison, “Little Earthquakes” by Jennifer Weiner, and “The 10 Best Days of My Life” – forgot the author b/c its presently lent to a friend but it was adorable! For more serious fiction… I love Jodi Piccoult – “19 minutes” and “The Pact” are my favorites!

Holy YUM!! Your PB&J parfait oats look soooo amazing. My fav fiction book has to be Harry Potter. I’m such a sucker for magic and fantasy. But Twilight comes in at a VERY close second!! :)
Redeeming Love by Francine Rivers. Best love story I ever read.
The parfait looks amazing…I’ll have to try it out this weekend! My favorite fiction book is Shadow of the Wind…great mystery with a love twist. I am also in the middle of Let the Great World Spin by Colum McCann…it’s pretty great so far.
P.S…I just tried an Adore bar the other day and it was AMAZING…I will have to hide them from my boyfriend, 10 may not be enough;)
I am in Ottawa and have seen Almond Budder Extreme and Nut ‘n Budder on shelves at my Loblaws, but I wasn’t sure if it’d like it. I’m currently working my way through a Costco-sized jar of Maranatha almond butter and would certainly appreciate trying other Budders !
I would love to try either butter!!!
As for fiction: The Mermaid Chair (same author as The Secret Life of Bees), anything by Alice Hoffman, I am a HUGE Stephen King fan and last year I hit several local libraries to read these mysteries with Lucy Stone as the main character (can’t think of the author at the moment).

i recently read “the memory keeper’s daughter” which was great. sad, but good!
My favorite book as a child was called “Running out of Time.” I’m a librarian now, and I just came across it on the shelf, and plan to read it this weekend! :)
Life of Pie is probably my all time favorite fiction book!
Susanne’s Diary for Nicholas – James Patterson. I read it once before I had a baby then after my son was born – two totally different experiences!
I love to read so this is soooo hard, but anything by Lori Wick or Nicholas Sparks. Oh and the parfait looks yummy!
Anything Mitch Albom…”For One More Day” is likely my fav of his.
