Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

My favorite fiction book of all time is ‘To Kill A Mockingbird’ but my recent favorites are: The Help by Kathryn Stockett, The Last Song by Nicholas Sparks, and anything by Jodi Picoult!

Ooh, I’m so happy to hear you’re getting into fiction. There are so many wonderful books out there, and I’ve been skimming through all the excellent suggestions. I would however like to put my two cents in as well.
Memoirs of a Geisha is amazing, my eyes were glued to the Glass Castle, The Time Traveler’s Wife will become a classic and most recently The Help was unbelievable. I laughed, I cried and jumped for joy all in one sitting!

Why is it that when food is pretty like your parfait it tastes that much better? Yummy!

I would love some new nut butters!!! My life has been devoid of almond butter for far too long :(

Mmmm. That nut butter looks super yummy. If you’re in the mood to read something fun and light, The Shopoholic Books by Sophie Kinsella are great. Devil In the White City is a favorite of mine, but it is a bit creepy, and a true story.

Mmm that looks so good! My favourite fiction book would probably be Something Borrowed or Love the one you’re with by Emily Giffin. Actually I really like all her books!

That parfait looks amazing. I must try it! I’m reading The Time Traveller’s Wife right now and am loving it. I also loved The Memory Keeper’s Daughter and The Secret Life of Bees.

I LOOOOVe jane austen. plus you can feel like you’re reading “real” literature. :D nothing beats pride and prejudice!!

My favorite book is “Bel Canto” by Ann Patchett. I was so so sad to finish it; I wanted to live in that world (even though it involved a terrible hostage situation). I highly recommend!

So many people have already listed what I would have shared as some of my faves too. But I must say that I finally read Eat Pray, Love this past week and it was A-M-A-Z-I-N-G. Although not non-fiction as you said you were looking for, I found it to be an incredible and transformative read. It has quickly moved to my top five favorite books, fiction or non-fiction, of all time.

Also great and fun books that were already mentioned by others:
-The Confessions of a Shopaholic series
-The Life of Pi
-Poinsonwood Bible

And one that has not been mentioned:
Four Letters of Love by Niall Williams

I love all things by Chuck Pahluniuk (writer of Fight club, etc). They always make for interesting reads. I’m not much into “girly books”…

Well, these aren’t recent books but they were my all time favorite books when I was just starting high school (i.e. a long time ago-early 90’s!!)- Ordinary People by Judith Guest and the Outsiders by S.E. Hinton. I guess the last books I really loved was Prodigal Summer and Poisonwood Bible by Barbara Kingsolver.

My favorite work of fiction right now is called ON THE ROAD written by Jack Kerouac. This book is an American classic about a guy just picking up and traveling around the country during the 50’s. I’ve been so engrossed in this book for about a week now, and highly recommend it. It makes you want to just pick up and leave yourself, and soul seek.

I just started reading your blog. I joined Booty Camp for the first time last week and saw the link to Glow Bakery and then the link to your blog. Im trying to get caught up with ur blog by reading old entries lol:)
I most appreciate that you include meals and recipes. Ive been in a food rut trying to figure out what healthy things to eat so I appreciate reading ur recipes! I liked ur week of bloggin what u ate and hope there might be another installment. I also tried the Green Monster for the first time this morning and it was yummy:) I included a handful of spinach, one leaf of bok choy, 1/2 cup mixed frozen fruit and 1/4 cup soy milk. YUMMY! It will be a morning staple:)
Anyways, i just wanted to lead my support to ur blog and say thanks! It has been an encouragement to me in my own journey to glowing:) Thanks!

Favourite fiction right now…. the Outlander series by Diana Gabaldon… historical fiction with time travel thown in… and characters that you come to love…. AWESOME!
