Holy smokes it’s Friday again!
I swear it feels like it was just Friday.
Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.
I did a 3 mile run:
- 3 min walking warm-up
- Mile 1: 6.0 mph, incline 2%
- Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
- Mile 3: 6.0 mph, incline 2%
- 2 min walking cool-down
Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.
Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.
This morning I woke up COLD. A Green Monster or juice was not going to cut it.
I was really excited to try out this new product:
Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! I could *probably* find it if I really wanted to though…if you catch my drift…
Creamy PB + J Oatmeal Parfait
Ingredients:
- 2/3 cup regular oats
- 1 T chia seeds (optional)
- 1/3 cup coconut milk
- 1/2 cup almond breeze
- 1/2 cup plus a bit more water
- pinch salt
- 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)
Layers/Toppings:
- Strawberry jam
- Nut ‘n Budder
- peanuts
Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!
YUM!
Would you like a chance to win a jar of the Almond Budder Extreme and Nut ‘n Budder?

I don’t know that I have a favorite fiction book ever. I love reading and have a lot of books that I keep, because I love them and want to read them again. So I’ll tell you the last book I read: “Bitter is the new black.” It was a easy / fun read and pretty funny. It was actually a blogger turn author (Jen Lancaster).
Wow, that parfait looks awesome! I haven’t been doing much fiction reading lately, but my favorites are always historical mysteries, like The DaVinci Code.
Well.. I don’t read much fiction but I did read the Harry Potter books and I really enjoyed those! ;)
Ok, picking favorites of anything is impossible for me, but the most recent fiction I read was “Push” by Sapphire. It was intense but eye-opening and great character development!
The History of Love by Nicole Krauss. Look it up!
I love oats, and I *really* love any type of butter – so this breakfast combination looks DELICIOUS! Thanks for sharing.
A great fiction book: “Keeping Faith” by Jodi Picoult (really, any book by her!)
Your parfait is beautiful!! Have you read The Reading Group? A really great girly read – very interesting characters but not too heavy…I really enjoyed it!
Oh there are so many! One that I keep coming back to is Way of the Peaceful Warrior by Dan Millman. A must read.
Oh MAN!! That parfait looks SOOOOO good. Can’t wait to try it! I love your recipes….and Glo Bars. :-)
My all time favorite fiction (and there’s many) has to be “Cloud Atlas” by David Mitchell. It has to be the most interesting book I’ve read and it’s six stories in one. It’s one of those I’m sure I will read again- that happens rarely for me.
Funny you’ve mentioned how you love reading health books. I’ve been doing that for several years now and had to force myself to pick up a fiction or two as variety is necessary in my life. :-)
Love your blog!
I would love some of that amazing and nutritious nut butter! :)
My favorite fiction reads as of late: The Time Traveler’s Wife, Dear John, Nineteen Minutes, My Sister’s Keeper, The Lovely Bones, and Feeling for Bones. Enjoy!
The Princess Diary is good (even if you’ve seen the movie, there are some different parts) and Maneater by Gigi Levangie Grazer. :) Either way you will LOL- literally.
Those not n’ budders look like something I could enjoy on toast, over ice cream, on a spoon…. ahem.
My favorite fiction book of all time would have to be The Physician by Noah Gordon. An epic tale of love, deception, war, disease, and medical school in India in the 15th century. It is looooooong, but so good. I love to read ANYTHING, this book especially.
i’ve been really intrigued by those at my grocery store!! ps. that parfait is such a good idea. i may have it for dessert tonight.
The Other Boleyn Girl is FAB! I could not put this one down! I highly suggest it.
Well first of all – that breakfast looked FABULOUS!!! I tend to not let myself near the peanut butter or such cause I could eat the entire jar but really this stuff looks fantastic! Ill be headed to the great white north in March I may have to find myself a jar. As for a good fiction book…hmm well I have read tons of them. Gap Creek by Robert Morgan is a story of an unbelievably strong woman. It is well written and even though I read it many years ago I have on several occasions thinking of that main character. If you are into memoirs (which are my current addiction right now when I am not reading my nursing books for school) The Middle Place by Kelly Corrigan is fantastic :) Happy reading….
I have tried this stuff recently, found it at Zehrs (Loblaws) in the organic section! Good stuff. Oats look ah-mae-zing.
I forgot to mention — one of my favourite books is White Oleander by Janet Fitch.
Wow, 258 comments! Give-aways always bring out the lurkers ;) My favorite fiction book of aaalllll tiiiime would have to be Wuthering Heights by Emily Brontë. It’s a heart achingly beautiful story that can still be identified with today. Also, that parfait looks incredible. Sure beats my bowl of shredded wheat this morning!
I LOVE anything by Haruki Murakami! I even got my boyfriend interested in reading his works! If I had to pick a fave, it would have to be Norwegian Wood.
I love everything by Nicholas Sparks, but my favorite is A Walk to Remember.
