Holy smokes it’s Friday again!
I swear it feels like it was just Friday.
Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.
I did a 3 mile run:
- 3 min walking warm-up
- Mile 1: 6.0 mph, incline 2%
- Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
- Mile 3: 6.0 mph, incline 2%
- 2 min walking cool-down
Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.
Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.
This morning I woke up COLD. A Green Monster or juice was not going to cut it.
I was really excited to try out this new product:
Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! I could *probably* find it if I really wanted to though…if you catch my drift…
Creamy PB + J Oatmeal Parfait
Ingredients:
- 2/3 cup regular oats
- 1 T chia seeds (optional)
- 1/3 cup coconut milk
- 1/2 cup almond breeze
- 1/2 cup plus a bit more water
- pinch salt
- 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)
Layers/Toppings:
- Strawberry jam
- Nut ‘n Budder
- peanuts
Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!
YUM!
Would you like a chance to win a jar of the Almond Budder Extreme and Nut ‘n Budder?

I will be selecting TWO winners. Contest open until tonight at 11pm EST.
Have a great Friday!

My favourite new recent books are the Hunger Games and Catching Fire by Suzanne Collins. Completely absorbing–slightly disturbing–totally entertaining.
That parfait looks glorious!
Hi Angela! I’m way into science fiction (weird, I know), so my favorite fiction book would either be 1984 or Ender’s Game.
I looooove Wuthering Heights by Emily Bronte but lately I’ve been having a cheesy obsession with the Southern Vampire Mystery Series!
I would love to try that Nut n budder…looks right up my ally! I’ve been reading books by Anita Shreve. They are very fast moving good fiction stories…usually about love.
That parfait is adorable!!
I’m a goober and currently reading Harry Potter 7 to ‘get ready’ for the movie while i’m on the stairmaster!
I’m allergic to nuts but figured I’d share my favorite book/guilty pleasure
That PB sounds like Naturally More (http://www.naturallymore.com/) which is available in the US for anyone interested. It’s AWESOMELY amazing.
Your oats look sooo delicious! Yum, i think you gave me inspiration for breaky tomorrow…
One of my favourite book series is Something Blue, Something Borrowed, etc… by Emily Giffin. Each book is different than the other but ties in characters from the previous book. I love that.
This looks so great! You always give me such inspiring breakfast idea!
My book would have to be Jane Eyre!!
Oh, and My Sister’s Keeper, I bawled through the book. I love the movie, but the book is much better.
If you were to ask my favorite fiction book of all time, I’d say Stephen King’s *The Stand.*…the complete and uncut version. It’s not your typical horror novel.
Of books I’ve read RECENTLY, I really enjoyed *Solar Storms* by Linda Hogan (about Canadian Inuit groups’ fight to save their land). And if you like short stories, I recommend Sherman Alexie’s *The Lone Ranger and Tonto Fistfight in Heaven*…about Life of the Coeur D’Alene Indian Reservation. He’s the guy who did the movie *Smoke Signals* which is also really good, BTW. Sorry, I’m a nerd:)
I LOVE the oatmeal parfait idea!!! It takes oatmeal to a WHOLE new level!
As for fiction books, I generally read what’s popular, but I really enjoyed The Da Vinci Code. It might not be your cup of tea, though. Sorry!
Mmmmm almond butter …. *drool. Oh right, the book! My all time favorite would be “To Kill a Mockingbird”. More recently I love anything by Dan Brown or Dashiell Hammet.
My all time favorite book is still the Time Traveler’s Wife….I haven’t seen the movie because I”m afraid it will ruin the story for me! haha
Mark of the Lion (3 part series) by Francine Rivers!
Oooh that PB looks yummy, bummer it’s not available in the states!
Fiction book(s) I’m currently reading are the Outlander series by Diana Gabladon. Talk about addicting. She has been writing them since the early 90’s I believe and just put out the latest one in September 2009!
WOW, these butters look DELICIOUS! I’m drooling from my office right now :)
FYI, I received my very first order of Glo Bars yesterday at work and have eaten two already! YUMMMMMM.
I don’t read a lot of books, so I’m not a good resource. But it looks like everyone else posted some great suggestions. I may have to read a few of them myself :)
I’m getting an MA in English so I have LOTS of favorites: Delillo’s White Noise, Marquez’s Love in the Time of Cholera, Palahniuk’s Choke, Lawrence Hill’s Someone Knows My Name, and Elliot Perlman’s Seven Types of Ambiguity are a few.
A Separate Peace! I love Phineas’ character
she’s come undone by wally lamb is my favorite book ever.
That parfait is gorgeous!
You have to check out “The curious incident of the dog in the nighttime,” because it is my all-time favorite! It is told from the point-of-view of a child with autism.
