Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

Oooh your parfait is just so pretty, I would hate to eat it! Almost ;)

Favorite two fiction books of ALL time: The Time Traveler’s Wife and Pride & Prejudice. However, The Red Tent (historical fiction) was also an AMAZING read. I really think you would love it. It’s all about women (biblical time period, but you do not need biblical knowledge to “get it”) and how their stories and lives intertwine throughout their life. Really an amazing story.

Yum – love anything nut butters!

If you’re looking for something fun… you should check out the Shopaholic books by Sophia Kinsella… I don’t “LOL” while reading much but I do with her books!

Fav fiction book – Outlander by Diana Gabaldon, quite historical and has a nice love story.

That nut butter looks deliciously creamy. I don’t read much outside of assigned school reading. The last fiction I read that I really liked was The Time Traveller’s Wife.

Yay for Canadian products! I have so many fiction books that I love. A few of the more recent ones that I really enjoyed are The Curious Incident of the Dog in the Night-time, The Secret Life of Bees, Life of Pi, Middlesex, and The God of Animals. I think my favourite is The Secret Life of Bees.

That nut butter looks delicious, as does your parfait. Yum! My favorite all time fiction books are the Harry Potter series! I know they are supposed to be for kids, but I loved reading the books so much. It’s like being transported to another world. :)

Yum! Yum! You always come up with the best looking food! I would love to win a nut butter!

My favorite fiction at the moment is the Sookie Stackhouse vampire novels. I’ve never been a fan of vampire books (or fantasy for that matter) until I read Twilight and now I am hooked! The HBO series True Blood is actually based on those novels. Good luck on your fiction adventure!

holy cow that is a lot of comments! I am not into reading fiction books, although I wish I were. I have honestly only read a handful. I did read one that was AWESOME THOUGH…it is an old book by James Bram “Dracula”. Sounds like it would be stupid, but seriously it was GREAT. I actually like reading why reading it. It is written different than new books, it uses older dialect and is super intense and interesting. I told my husband about it everyday I read and he loved it too through me.

What a cute breakfast!

I’d have to say my favorite fiction book is Chuck Palahniuk’s “Invisible Monsters.” He may be gruesome, but I think all of his books have a great, moral underlying message.

If I could pick two favorites they would probably be “A Prayer For Owen Meany” by John Irving and “Middlesex” by Jeffrey Eugenides. Ask me on a different day and you’ll probably get a different answer!

I have a ton of favortie books (2-9 are probably the Harry Potter series), but my favorite was probably The Giver. I did a book report on it in middle school, and looking back, I don’t think I knew what it really meant (not sure why the teacher approved it!) but something about it stuck with me and I recently reread it and I seriously just LOVE it. It really makes you think. As for a light girlie book, read Something Borrowed and Something Blue. They’re ADORABLE and you’ll read them each in two days :)

Thanks to all the wonderful blogs i’ve been reading lately (including yours) i was introduced to the joy of almond butter. where was it all my life? i went through one jar in a week and half… maybe i need to cut back a bit.

I highly recommend Middlesex by Jeffrey Eugenides. it is a wonderful story of an individuals experience in the question of identity and sexuality. Couldn’t put it down.

Now, for another great book I recommend Devil in the White City by Erik Larson. Technically it is not a fiction book, but is a wonderfully written non-fiction historical narrative retelling the two tales in Chicago that occurred during the same timeline – the Chicago World’s Fair and the story of a serial killer. Fascinating. The writing is so well done that you tend to forget that what you are reading is non-fiction as it feels more like a novel. I recommend not googling any names listed throughout the story because if you do it will give away the stories told throughout the book.

“The Art of Racing in the Rain” by Garth Stein. It’s told from a dog’s point of view, the story of his master trying to become a professional racecar driver, and all the personal struggles he goes through. Makes me cry everytime I read it!
