Chocolate Peanut Butter Banana Bomb Green Monster

Check out this picture I found on the website last night! At the finish line…I actually sprinted and caught up to these three people.

By the way, that wasn’t all the food I had yesterday!

I ended up eating the rest of this Optimum bar!

It was just kinda sitting there….so…

In my belly it went! Nothing was safe near me yesterday!

I didn’t care for it much. Actually, I scraped off the icing and ate it plain. It was better without it. :) I gobbled that up and was still hungry before bed, so I had a few handfuls of cereal. I couldn’t believe it but when I went to bed I was still hunrgy! But, then I passed out from exhaustion. Eric was like, ‘I’m super hungry too’…lol…like I said, the spectator sport is HARD work! He slept for 4 hours yesterday afternoon! bahaha.

I can’t believe it, but I’m barely, barely sore at all today! This is absolutely mind-blowing to me because I am typically always sore after long runs, and I was very sore after my 10k race last month. I think my pre-and post race nutrition plus immediate and continued stretching throughout the day yesterday REALLY helped! I think I stretched about 5 times yesterday and then a long one in bed before I hit the hay. :) Stretching rocks!!!

This morning, I wanted to celebrate my race with a fun new Green Monster, I’d like to call

Chocolate Peanut Butter Banana Bomb Green Monster

 

Ingredients:

  • 1/2 serving PC extra-firm organic tofu
  • 3 cups steamed spinach (I made a big batch yesterday and put it in a glass pyrex dish)
  • 1 T PC Just Peanuts Peanut Butter
  • 1 T cocoa powder
  • 1/2 T carob powder
  • 1/2 scoop Amazing Grass Chocolate infusion powder
  • 1 cup PC low-fat soy milk
  • 1/3 cup water
  • 3 cubes ice
  • 1/2 T coconut oil
  • 1 T chia seeds
  • 1 small banana

Wow was this GM ever amazing!!! I felt like I was sipping on the smoothest, most luxurious drink ever. It was creamy, creamy, creamy! It actually made more than in the glass below and I quickly chugged it back straight out of the blender. ;)

I’ve got a crazy busy day of orders today (about 6!) so I need to get cracking in the kitchen.

Ive been trying to educate myself on vitamins lately. I learned the other day that spirulina is good for energy levels. Id love to learn more about vitamins though, maybe you could talk about the benefits of each supplement you take :)

Over the past few months I’ve come to realize to not be so afraid of healthy fats! Peanut butter, nuts, avocados…I used to avoid eating them. Now I eat atleast two tablespoons of nut butter in my oatmeal every morning and snack on nuts and avocado all the time. Tastes so good and hasn’t done anything to my waistline!

Aside from realizing that it’s all about the least processing possible, the number one most important thing I learned is:

The true superfoods are not packaged and marketed (this is not a reference to your glo bar packaging dilemma). They are picked from the soil to go straight in our mouth. They don’t have to come from the Amazon, Africa, or the Himalayas or be eaten by “ancient cultures” to be amazing. They don’t have to cost an arm and a leg, and they don’t have to have fancy, mysterious, long, or exotic names. I think too many health- oriented people, even raw foodists, forget the importance of pure, simple, local, and delicious. As the awareness of health and nutrition rises, so do incentives for companies to market it to us. We have to stop being passive consumers of everything they feed and reconnect with the basics!

I learned that HIIT (high intensity interval training) Is an amazing workout! It’s way more intense than my usual elliptical/strength training… and I sweat wayyy more.. in half the time!

Whaaa?? you weren’t in line with them… I still think you’re pretty amazing!

I just read a good article on foods with the most nutrition for your dollar (http://www.msnbc.msn.com/id/31895512/ns/health-diet_and_nutrition)… it was interesting but strange- iceburg lettuce over spinach? no way!

I’ve learned that it’s SO important to LISTEN TO YOUR BODY! Your body is one heck of a smart miracle… it knows what it’s doing. All we have to do is learn how to listen. :)

I’ve learned that it’s better to not deprive myself of any indulgences like, cheesecake (my fave dessert!). Everything is fine in moderation :)

I’ve learned to eat consistently throughout the day and to pre-plan all/most of my meals so I don’t overeat! The nutrition class that I’m currently taking really emphasized the importance of eating a variety of foods to get the most nutrients, and that’s made a big impact on me as well!

I learned that (unfortunately for me) logging my food every day really helps me stay in a healthy range. I totally overeat if I’m not thinking about logging my food!
It’s especially helpful now, when the PMS monster is ragin’!

I have learned a lot about eating raw- something I knew little to nothing about just a couple months ago. Now, I’ve tried raw tacos and soon I want to experiment with some raw “baked” goods!

I have learned so much over the past year on a natural and whole foods diet. I have realized that eating foods with “real” ingredients as opposed to artifical ones are so much better for me in the long run rather than just seemingly less fatting.

I have learned to enjoy exercise rather than dread it everyday! I have been more motivated to exercise for my well being rather than burning calories.

I’d love to try some Amazing Grass :D I have learned that exercise is better than any sort of medicine. I’ve also learned that it’s not about what you can’t eat and what you can burn, but about how well you treat your body and the health you build up by being fit :)

I’ve learned that you deserve some rest every now and then. It’s so important to give yourself a break every now and then and allow your body to recuperate!

I’ve learned to try at least one new fruit/veggie a week. The healtier I eat the healthier I feel and the healthier my skin looks.
