In my belly it went! Nothing was safe near me yesterday!
I didn’t care for it much. Actually, I scraped off the icing and ate it plain. It was better without it. :) I gobbled that up and was still hungry before bed, so I had a few handfuls of cereal. I couldn’t believe it but when I went to bed I was still hunrgy! But, then I passed out from exhaustion. Eric was like, ‘I’m super hungry too’…lol…like I said, the spectator sport is HARD work! He slept for 4 hours yesterday afternoon! bahaha.
I can’t believe it, but I’m barely, barely sore at all today! This is absolutely mind-blowing to me because I am typically always sore after long runs, and I was very sore after my 10k race last month. I think my pre-and post race nutrition plus immediate and continued stretching throughout the day yesterday REALLY helped! I think I stretched about 5 times yesterday and then a long one in bed before I hit the hay. :) Stretching rocks!!!
This morning, I wanted to celebrate my race with a fun new Green Monster, I’d like to call
Chocolate Peanut Butter Banana Bomb Green Monster
Ingredients:
- 1/2 serving PC extra-firm organic tofu
- 3 cups steamed spinach (I made a big batch yesterday and put it in a glass pyrex dish)
- 1 T PC Just Peanuts Peanut Butter
- 1 T cocoa powder
- 1/2 T carob powder
- 1/2 scoop Amazing Grass Chocolate infusion powder
- 1 cup PC low-fat soy milk
- 1/3 cup water
- 3 cubes ice
- 1/2 T coconut oil
- 1 T chia seeds
- 1 small banana
Wow was this GM ever amazing!!! I felt like I was sipping on the smoothest, most luxurious drink ever. It was creamy, creamy, creamy! It actually made more than in the glass below and I quickly chugged it back straight out of the blender. ;)
I’ve got a crazy busy day of orders today (about 6!) so I need to get cracking in the kitchen.

I have learned how important it is for me to eat good foods, I splurged on vacation and ended up feeling horrible for 2+ weeks. My body does amazing things, I need to feed it amazing foods. I would love to win this contest, I have been scared to try a green monster but I printed a recipe and will try it this week.
I have learned to not be so scared of good fats, that they do help carry me through the day and give me staying power.

In the past little while, I’ve learned about the benefits of interval training. Man does it kick my butt, but I definitely feel the benefits.

i’ve learned that listening to body is important even though it’s the hardest thing ever!
I learned so much about nutrition and that exercising 7days a week is not necessary. Our BODY REQUIRES rest to function right.
through this challenge I learned to “stop” counting calories. I can’t help it but estimate in my head still BUT i don’t do it to the extreme like i used to.
I am glad and i feel so much free!
Good fats are necessary for vital health. I started to incorporate more omega-3 into my diet and i feel so much energetic!
Holy cow, chocolate and pb can be the most incredible combo! I think I will try that GM very soon!
Thing I’ve learned? Natural, organic, and wholesome foods make my body so much happier and energetic! I love how great i feel!

One thing I have learned about is the idea of organic food and why attempting to go organic is important. Before I simply tried to eat as healthy as possible, not really worried about where my food came from or the process it took to get from the ground/animal to my plate. Although I still eat processed, non-organic foods, I am much more conscientious about where my food comes and what it does to my body,.

I just learned about green monsters! I discovered your blog over the weekend and IMMEDIATELY went and made myself a green monster. I’m shocked that you can’t taste the spinach. I even convinced my boyfriend to have some. You have made me curious about Amazing Grass so this would be great!
I have learned that I really don’t have to get 60 grams of protein per day. I used to stress out about it because I am a vegetarian but I’ve read several articles that supports that eating as many as 45 grams per day is sufficient. I have stopped stressing myself out about it and I’m still building lots of muscle tone!
I became vegan almost three months ago and have learned SO much in the process. I’ve especially enjoyed learning about the benefits of kale, hemp seeds, and chia seeds thanks to you!

I’ve learned that rest is just as important as exercise, and that you should feed your body what it craves.
Something I’ve learned is the benefits of chia seeds-how you don’t need to grind them like flax to get the omega-3’s and they are a high source of fiber and protein!
Recently, I learned about the benefits of chia seeds! I had no idea how good they were for you! :)
