Refreshing Orange-Mint Baked Breakfast Cake

My ‘workout’ yesterday lasted 9 hours. A non-formal workout, but a workout none the less!

Unfortunately, fate did not have Avatar in our future last night. The only non sold out show was at 10:50pm. Seeing as the IMAX theatre is a 45 min. drive from us, we didn’t feel like getting home at 3am so we didn’t go.

We ended up just relaxing with a few friends and watching Conan’s last episode of Late Night- (sniff, sniff). Can I just say that man has Class, with a capitol C?!

I created my 4th Baked Breakfast cake experiment this morning.

My previous Baked Breakfast Cakes:

Refreshing Orange-Mint Baked Breakfast Cake

Ingredients:

  • 1/2 cup lightly toasted hazelnuts (filberts)
  • 1/4 cup ground almonds
  • 3/4 cup old-fashioned rolled oats (not instant)
  • 3/4 cup sweetened applesauce (or unsweetened + 1 T sweetener below)
  • 2 t pure vanilla extract
  • 4 fresh mint leaves
  • 1 Tbsp agave nectar or maple syrup
  • Pinch fine sea salt
  • 1 T chia seeds (optional)
  • 1 and 1/4 cups unsweetened almond, soy, rice, hemp milk
  • 1/4 t raw maca powder (optional)
  • 1 orange, peeled and sliced into chunks

Directions: Preheat oven to 350F. Grease three small oven safe dishes. Throw all ingredients except the orange into the blender and blend until smooth. Evenly distribute the batter into the dishes and then garnish with orange chunks. Pop in the oven for about 35 minutes at 350F or until golden brown. You can refrigerate for 4 days and they apparently freeze well too!

I have some fun news- I am applying to the Oakville Organic Farmer’s Market this Summer! I spoke with the chair of the board yesterday and she thinks my Glo Bars would be a perfect fit for the market. This farmer’s market is amazing– all vendors must be organic, sustainable, use non-GMO products, etc. Everyone knows the farmer’s on a first name basis! It is just the market I have been looking for!!!

Should I be accepted I will need to move forward quite quickly with purchasing a tent, table, hiring help, and obtaining signage/marketing materials. It would be great to have a location for my customers in the GTA to purchase the bars and I would love to meet my customers in person too. It would be a fun change of pace!

I have another full day of baking ahead of me. I need to get caught up on the 1600+ Glo Bars that I sold last week. I don’t see a day off in my future for a while!

That is so EXCITING!!! I am sure they would be a fabulous hit at Farmers markets. We don’t have any great ones around here, but when we vacation in northern Michigan there are always WONDERFUL ones!! Yaya, Ange! :)

This meal looks like such a “Florida” breakfast to me– you must be getting excited for your trip! Love that towel!

Our farmer’s market is pretty decent, but it only runs from June to October :-(

That’s so exciting! I love farmer’s markets! The one here in Ithaca is surprisingly good but my favorite one is in San Francisco!

That’s fantastic about the farmers market! I will keep my fingers crossed! Sadly, we don’t have a farmers markey in the little tiny southern town that I live in. I just rely on a CSA.

The farmers’ market I go to regularly has an awesome stand with all vegan baked goods, and it is a HUGE hit! No doubt you’ll be just as successful :)

Great news about the Farmer’s Market! I’m so lucky to have a Farmer’s Market just a few blocks from my house. Your products would be perfect! It has everything… from cheese to plants, to baked goods, to fresh everything. Signage is key, as well as some help. It’ll be a huge success! I just know it!

That is so exciting about the farmer’s market!! We do have one in our area, only one, but sadly, I am never able to go. It’s on Saturday mornings in the summer and I work every single saturday in the summer. BUT where I work at is a local successful farm. Well i work in there store but it’s on their farm. I always buy all my vegetables and a lot of fruits there in the summer. It is AMAZING how fresh it is and how awesome it is to know that what you are eating came from a field just down the road :)

Congrats on the market! Sounds like a really good one and a good location. I’m sure you’ll love it–it’s so much fun to meet customers in person! And your new breakfast cake sounds intriguing. I’d never think to pair oranges and mint (duh!), but it sounds really good. :)

We have 2 markets where I live. One is actually certified organic, the other is not. The organic one just opened up this past summer. I’ll be curious to see what it’s like this upcoming year. The big one is open May-Oct. They have vendors and such as well as the fresh produce.

Congrats on the market! Yay that sounds fun, and I hope you have the opportunity to showcase your bars!! They’d be such a huge hit! We have a seasonal farmers market near me…however, it’s set up is weird — but you can only do so much in a city. They have wonderful looking produce though — I’ll have to check when they start again!

That breakfast cake looks delicious. It sounds very refreshing.

an ORGANIC farmer’s market in Oakville? So awesome- I grew up in Oakville and never heard of the market…I did got to a farmer’s market in the parking lot of the mall before. I love the Guelph farmer’s market and went there almost every weekend. Now I live in Hamilton and love the market here…not organic though!

Exciting news about the farmer’s market! I am sure you will get accepted. There are a couple of small seasonal organic farmer’s markets around Miami, so I get to go every so often. Farmer’s market are great!

I am intent on making your breakfast cakes in the near future. They just look too good to pass up!

We have quite a few farmers marketing in NYC! I try to get to them often, and I’ll surely be going much mroe frequently when the weather gets nicer!

Good call on Avatar. While it IS an amazing movie, it’s almost 3 hours long, so I could never do a showing past 9pm…too late for me!!
