No Better Feeling

Good morning!

I always tell myself that working on a weekend is something I am trying to get away from, but sometimes there is no better feeling than getting up on a Monday morning and seeing 8 parcels ready to be shipped out. And a clean house. And clean clothes hanging in the closet. And leftover enchiladas in the fridge that I’m hoping Eric doesn’t take to work.

Pumpkin Pie Parfait with Cinnamon Spiced Banana Soft Serve

Ingredients:

  • Pumpkin Pie Vegan Overnight Oats (1/3 cup oats, 1 cup almond milk, 1/3 cup canned pumpkin, 1/4 tsp pumpkin pie spice, 1.5 tbsp chia seeds, 1/2 tbsp pure maple syrup)
  • Cinnamon Spiced Banana Soft Serve (Process 1 frozen banana with 1/2 tsp cinnamon and a glug of almond milk)
  • Topping ideas: Cacao nibs, raisins, coconut, maple syrup, cinnamon, walnuts, pecans, etc.

I think I’m going to be going through a lot of pumpkin this fall!

I forgot to mention, when you make the pumpkin pie vegan overnight oats, it is ready to eat very quickly. I think it is the pumpkin that makes it really soft and it also absorbs tons of the milk. It is honestly ready to eat in less than 1/2 hour- and if you really wanted you could eat it almost instantly. I should know because I was picking at this last night when I whipped it up! ;)

ummmm YUM. Yes, I can’t wait for pumpkin. I still have a few cans in my pantry. Holding on to them for dear life!

What a cute list…I can certainly relate to a lot of these, especially that the cute factor doesn’t wear off. I’ll be at my wits end one day and I’ll look at my 5-year-old and think wow, she really is just adorable. How can I be so mad at her?

There is no better feeling than a clean house!

I totally agree – one of my favorite things to do on a Sunday night is to clean up the house in preparation for the Monday/week ahead. I always set myself a special breakfast place at the table, too! I think I know what I’ll be setting tomorrow ;) Love pumpkin, love your parfaits, can’t wait to try!

That’s the only thing I love about Mondays: The house is clean, the laundry is all done and put away, everything is organized. It’s the kind of peace and calm I need to face another week of work!

I just tried your Overnight Oat recipe for the first time last night. I make a Carob/Banana/Peanut Butter version. Now I’m no oatmeal lover but these were awesome! Even my DH who usually hates almond milk loved them.

That breakfast looks divine! I have an extra can of pumpkin from last fall but haven’t been able to do anything with it- I just don’t want that flavor during the summer! Oh well, I’ll have it on hand when pumpkin pie season rolls around :-)

Oh, you make me crave pumpkin sooooooo badly!!!!
And I haven’t found canned pumpkin in Germany yet like the one you can get in the US/Canada. So, maybe this time I should preserve pumpkin when it’s pumpkin season.

I cannot wait to get some pumpkin, seriously. I’ve been checking my grocery store weekly! I definitely love waking up Monday morning to a clean house and completed chores… it’s excellent. It’s great that you got all those orders done!
