Good morning!
My goal last night was to get in 8 hours or more of sleep to prepare for tonight’s wedding and getting up at 4:30am tomorrow morning. I clocked in at 8 hours. Even though I kept waking up, I forced myself to stay in bed. I know it sounds strange, but sometimes I have to force myself to sleep longer because once I am awake it can be hard for me to fall back asleep even if I am still tired! My eyes shot open at 6:30am, but I had to put the covers over those peepers and trick myself into more sleep.
I sprung down the stairs for breakfast. Last night when I prepared the vegan overnight oats I was sooo excited for breakfast. I wanted to eat it right then and there.
One of today’s goals is to hydrate! I started my day with a fresh juice composed of 1/2 lemon, 3 carrots (I added one more after taking the pic), small piece ginger, 1 large beet.
Good to the last drop!
Then I made a new kind of Banana Soft Serve Vegan Overnight Oats!
I made CAROB banana soft serve!
Carob Banana Soft Serve
- 1 frozen banana
- 2 tbsp carob powder
Directions: Process banana in a food processor until smooth. Add in carob and process, scraping the sides of the bowl as necessary.
Mmmm it tasted like heaven. Almost a bit like chocolate cake batter!
Chocolate Cake Batter Vegan Overnight Oats
VOO Ingredients:
- 1/3 cup regular oats (I used Bob’s Red Mill Organic)
- 3/4-1 cup almond milk
- 1/4 scoop Amazing Grass Chocolate Infusion protein powder
- 1/2 tsp vanilla
- 1 tbsp chia seeds
Directions: Assemble the dry ingredients (chia, oats, powder) into a bowl and then add the wet (vanilla and milk) and whisk until clumps are gone. Pop in the fridge overnight or for 2 hours. In the morning make the carob banana soft serve (above) and then layer in a dish. Sprinkle with coconut. For a video tutorial see here.

You may have noticed that I have not had a green monster in several days.
Well, did I tell you that my Kitchenaid Blender is broken AGAIN!? I have had the worst experience with my KA Blender- I have already sent it back once and they sent me a new one not long ago.
Now this is happening again…
HOT.
Eric and I tried fixing it but to no avail.
So I am now in the market for a new blender!
I will never buy another Kitchenaid blender again. I don’t understand why I have had so many issues with it because I tend to love KA products (like my stand mixer!). Many of you have also emailed me and told me that you had a similar bad experience with your KA blender. I think the company needs to fix the issues asap.
I am starting to get all my stuff together for the race tomorrow…
I have decided that I WILL be bringing my Camelbak. It is supposed to be 30C and sunny so I will certainly need the extra water! The blue jacket is just for the morning in case I feel a bit cool, which I probably won’t. I am used to running my half marathon in freezing temperatures like last fall’s two races.
Eric and I were talking about the wedding tonight and how I need to make sure I fuel properly and Eric said, ‘My recommendation is to prepare something here that you can eat at home before we leave.’
He never ceases to surprise me with his insightful comments! :lol:
See you later today for VIDEO #2 (I’m on a roll!). Our in-laws will be arriving soon and then I need to get ready for the wedding. I LOVE WEDDINGS!!! Get the tissue Eric! :biggrin: There is just something about the way the bride and groom look at each other that toys with my heart strings.

Can I use cocoa powder instead of protein powder
i have had almost every kind of blender. With the number of smoothies I make, at least one every day, they ALL broke. Even my KA and, like you, I love KA! Finally got a VitaMix. Best investment I ever made. Works on anything I put in it. Best blender, EVER!
