Good morning!
My goal last night was to get in 8 hours or more of sleep to prepare for tonight’s wedding and getting up at 4:30am tomorrow morning. I clocked in at 8 hours. Even though I kept waking up, I forced myself to stay in bed. I know it sounds strange, but sometimes I have to force myself to sleep longer because once I am awake it can be hard for me to fall back asleep even if I am still tired! My eyes shot open at 6:30am, but I had to put the covers over those peepers and trick myself into more sleep.
I sprung down the stairs for breakfast. Last night when I prepared the vegan overnight oats I was sooo excited for breakfast. I wanted to eat it right then and there.
One of today’s goals is to hydrate! I started my day with a fresh juice composed of 1/2 lemon, 3 carrots (I added one more after taking the pic), small piece ginger, 1 large beet.
Good to the last drop!
Then I made a new kind of Banana Soft Serve Vegan Overnight Oats!
I made CAROB banana soft serve!
Carob Banana Soft Serve
- 1 frozen banana
- 2 tbsp carob powder
Directions: Process banana in a food processor until smooth. Add in carob and process, scraping the sides of the bowl as necessary.
Mmmm it tasted like heaven. Almost a bit like chocolate cake batter!
Chocolate Cake Batter Vegan Overnight Oats
VOO Ingredients:
- 1/3 cup regular oats (I used Bob’s Red Mill Organic)
- 3/4-1 cup almond milk
- 1/4 scoop Amazing Grass Chocolate Infusion protein powder
- 1/2 tsp vanilla
- 1 tbsp chia seeds
Directions: Assemble the dry ingredients (chia, oats, powder) into a bowl and then add the wet (vanilla and milk) and whisk until clumps are gone. Pop in the fridge overnight or for 2 hours. In the morning make the carob banana soft serve (above) and then layer in a dish. Sprinkle with coconut. For a video tutorial see here.

You may have noticed that I have not had a green monster in several days.
Well, did I tell you that my Kitchenaid Blender is broken AGAIN!? I have had the worst experience with my KA Blender- I have already sent it back once and they sent me a new one not long ago.
Now this is happening again…
HOT.
Eric and I tried fixing it but to no avail.
So I am now in the market for a new blender!
I will never buy another Kitchenaid blender again. I don’t understand why I have had so many issues with it because I tend to love KA products (like my stand mixer!). Many of you have also emailed me and told me that you had a similar bad experience with your KA blender. I think the company needs to fix the issues asap.
I am starting to get all my stuff together for the race tomorrow…
I have decided that I WILL be bringing my Camelbak. It is supposed to be 30C and sunny so I will certainly need the extra water! The blue jacket is just for the morning in case I feel a bit cool, which I probably won’t. I am used to running my half marathon in freezing temperatures like last fall’s two races.
Eric and I were talking about the wedding tonight and how I need to make sure I fuel properly and Eric said, ‘My recommendation is to prepare something here that you can eat at home before we leave.’
He never ceases to surprise me with his insightful comments! :lol:
See you later today for VIDEO #2 (I’m on a roll!). Our in-laws will be arriving soon and then I need to get ready for the wedding. I LOVE WEDDINGS!!! Get the tissue Eric! :biggrin: There is just something about the way the bride and groom look at each other that toys with my heart strings.

I am running a 5K tomorrow, but I could only train half way into the C25K plan, so it will be a run/ walk.
I am also celebrating with my dad, he is turning 69 this weekend!

I always cry at weddings, even if I don’t know the couple that well! There’s just something about it…it gets to me!

This weekend for me is pretty much a lot of boring studying, a bit of running and some shoe shopping :)
I have been loving VOO lately! I can’t make the soft serve because it’s too early for a magic bullet in my condo, though! So jealous of your weather – it is pouring rain here. I love weddings too, have a great time tonight.
I’m going to a wedding tonight as well….my bf and I traveled down from the northeast to Baltimore yesterday to see one of his college friends get married. I’m a big mushball, and even though I don’t know the couple getting married, I’m sure I’ll love the ceremony. I just love love!

Oh. My. Gosh!!!! You’ve really outdone yourself with that VOO!!!! I had some VOO in a jar this morning, but I don’t think they compared to yours. Putting the bananay in the fridge for tomorrow…
We have a Hamilton Beach “wave” blender and have never had a problem with it. We’ve made many a green monster in it with everything from whole flax seeds to a big banana just broken in 2 pieces and it’s always pulverized everything we’ve put in there – no leaks! I hope you find a good replacement soon :)

No races here, but I did run 8 miles this morning (not my best effort, it was HOT, I did a lot of walking at the end). Going to yoga tomorrow and then to lunch with some old friends who are in town. Maybe going to grill…we got zucchini from the CSA this week!
I work weekends so the “long weekend” doesn’t really affect me. Although on Monday my husband and I will be traveling to all of our relatives’ graves to remember and place flowers.
I have that same blender! ARGHHH. I hope that does not happen to mine!
I recommend you get a Blendtec http://www.blendtec.com/default.aspx They make both home and commercial blenders. Their home machines are strong and reliable. They are expensive but you get a solid machine. We were given one for our wedding and it is a great machine.

Wow, that BSSVOO has mouthdrooling goodness written all over it! Yummy!!! My 15 year old Oster blender works pretty well for my Green Monsters among other things, but you know they always say that appliances made 10-25 years ago outlast anything made today. Soooooo true!
For our Memorial Day, my hubby is retired Army and I am from a pretty solid military family, so we had a huge party at our home yesterday that started at 5pm and went into 3am this morning….eeeke, no race for me this AM…doh! Then we went to a pool party today, so Memorial Day will be spent getting chores done, groceries bought for the week and just chillin’ and grillin in the afternoon….it’s so hot now here, 96 degrees today to be exact, so time outside is not as much during the day…ugh!
Ahh, I need to try this banana soft serve with the carob powder!!! A piece of my food processor broke where it locks into place; no, lock, no motor movement =( So I need to get some superglue and make this asap!!

For the soft serve? I have never tried it…I don’t think it would work, but I could be mistaken. Let me know if you try it!
This is a great breakfast! I’m training for a 10K and I’m running more than usual, so I have noticed that I get hungry all the time and find myself struggling a little to meet my protein needs on a vegan diet.
