Get The Tissue!

Good morning!

My goal last night was to get in 8 hours or more of sleep to prepare for tonight’s wedding and getting up at 4:30am tomorrow morning. I clocked in at 8 hours. Even though I kept waking up, I forced myself to stay in bed. I know it sounds strange, but sometimes I have to force myself to sleep longer because once I am awake it can be hard for me to fall back asleep even if I am still tired! My eyes shot open at 6:30am, but I had to put the covers over those peepers and trick myself into more sleep.

I sprung down the stairs for breakfast. Last night when I prepared the vegan overnight oats I was sooo excited for breakfast. I wanted to eat it right then and there.

One of today’s goals is to hydrate! I started my day with a fresh juice composed of 1/2 lemon, 3 carrots (I added one more after taking the pic), small piece ginger, 1 large beet.

Then I made a new kind of Banana Soft Serve Vegan Overnight Oats!

I made CAROB banana soft serve!

Carob Banana Soft Serve

  • 1 frozen banana
  • 2 tbsp carob powder

 

Directions: Process banana in a food processor until smooth. Add in carob and process, scraping the sides of the bowl as necessary.

Mmmm it tasted like heaven. Almost a bit like chocolate cake batter!

Chocolate Cake Batter Vegan Overnight Oats

VOO Ingredients:

  • 1/3 cup regular oats (I used Bob’s Red Mill Organic)
  • 3/4-1 cup almond milk
  • 1/4 scoop Amazing Grass Chocolate Infusion protein powder
  • 1/2 tsp vanilla
  • 1 tbsp chia seeds

 

Directions: Assemble the dry ingredients (chia, oats, powder) into a bowl and then add the wet (vanilla and milk) and whisk until clumps are gone. Pop in the fridge overnight or for 2 hours. In the morning make the carob banana soft serve (above) and then layer in a dish. Sprinkle with coconut. For a video tutorial see here.

Wheeeeeeeeee. It was heaven. Pure heaven, my friends.

You may have noticed that I have not had a green monster in several days.

Well, did I tell you that my Kitchenaid Blender is broken AGAIN!? I have had the worst experience with my KA Blender- I have already sent it back once and they sent me a new one not long ago.

Now this is happening again…

Eric and I tried fixing it but to no avail.

So I am now in the market for a new blender!

I will never buy another Kitchenaid blender again. I don’t understand why I have had so many issues with it because I tend to love KA products (like my stand mixer!). Many of you have also emailed me and told me that you had a similar bad experience with your KA blender. I think the company needs to fix the issues asap.

I am starting to get all my stuff together for the race tomorrow…

I have decided that I WILL be bringing my Camelbak. It is supposed to be 30C and sunny so I will certainly need the extra water! The blue jacket is just for the morning in case I feel a bit cool, which I probably won’t. I am used to running my half marathon in freezing temperatures like last fall’s two races.

Eric and I were talking about the wedding tonight and how I need to make sure I fuel properly and Eric said, ‘My recommendation is to prepare something here that you can eat at home before we leave.’

He never ceases to surprise me with his insightful comments! :lol:

See you later today for VIDEO #2 (I’m on a roll!). Our in-laws will be arriving soon and then I need to get ready for the wedding. I LOVE WEDDINGS!!! Get the tissue Eric! :biggrin: There is just something about the way the bride and groom look at each other that toys with my heart strings.

I love weddings as well! I have two to go to at the end of June and early July! I’m excited for them!

This weekend is a mixture of studying, gardening, going out with friends tonight, buying a Camelbak (YAY!) and a 10k run tomorrow morning!

Good luck on your half, you’ll be in my neck of the woods so I’ll be thinking of you on my run in the morning!

And have a ball tonight!

We have a bunch of cookouts, going to a pro soccer game, and I took my first Zumba class this morning! :) So much fun! I’m now a Zumba addict! The next two days I’m forcing myself to relax with NO FORMAL exercise. :)

I guess Eric will have to get something else in addition to the tissues (cough vita cough).

I’m the total opposite with sleeping. I set 3 alarms and can turn them all off and snooze every 10 min. while going back to sleep each time and continuing my dreams too. Nothing can get me UP in the mornings. I try I try!

Vitamix needs to get their act together and send you a blenderrrr!! hehe Girl, that VOO looks ridiculous. I LOVE that glass too..I have VOO in the fridge right now but it might be a fail because I used scottish oats. They take a lot longer to cook on the stove, so I’m not sure they’re going to absorb…we shall see! Either way I will be making banana soft serve to go with breakfast! Have a great day..fun at the wedding..and GOOD luck with your run. I don’t really have much planned this weekend. I’m babysitting for a family tonight and then just trying to plow through my to-do list with fun in between :)

We have an Oster blender that seems to do pretty well. It’s held up for a few years for us. But I just recently started experimenting with Green Monsters, soooo……it really hasn’t been used too much to be honest with you. There are a billion settings on it but some of them have stopped working altogether. Not sure why, but it hasn’t stopped me. Then I recently got a smaller personal sized Hamilton Beach blender that I really like, it’s small and perfect for single servings and then I can just detach the cup portion from the motor portion and take it with me. It’s perfect for grossing out my co-workers! LOL!
We have a small party planned on Memorial Day with grilling, beer and hanging out at the pool. No races for me, I’m still working up the courage to try for a 5K.

This is the make I had same as you really did not use it much. Then I started making hummus and green monsters sadly it died after 3 months of daily use.

Cocoa works great I also add a touch of maple syrup, it is like having a bowl of soft serve ice cream. YUM

I completely agree. Vitamix needs to send you a free blender!

That breaky looks absolutely amazing! I can’t wait to have carob at my fingertips in just a few weeks when we move back to the states.

As for this weekend: No races, but major training. I just got back from a 4 hour bike ride. Tomorrow, I have an 8 mile run with a 2000 meter swim. Then, the hubs and I leave on Tuesday for our bike ride through Tuscany! so excited!

I am supposed to be running a 5-mile road race tomorrow – but I have been sick since last Wednesday with a cold/cough and the most I have run in the last week is 3 miles at my running group. Will be a game time decision, but at the very least I’ll be cheering on my husband (and more than likely thanking Angela for her sage wisdom about listening to your body!) I have a 10K at the start of July anyway. Have a friend visiting from home, so hanging out with him and dog-sitting for my boss!

I am the SAME exact way with sleeping- I will wake up early, and even if I am tired have to force myself to go back to sleep! It’s annoying!! hah

This weekend is all about relaxing after last weekend’s craziness.

I LOVE CAROB!!!! My blender, also a Kitchen Aid, just broke too and I’m also in the market for a new one. Grrrr Kitchen Aid DEF needs to get their benders in check!
