Holy smokes it’s Friday again!
I swear it feels like it was just Friday.
Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.
I did a 3 mile run:
- 3 min walking warm-up
- Mile 1: 6.0 mph, incline 2%
- Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
- Mile 3: 6.0 mph, incline 2%
- 2 min walking cool-down
Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.
Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.
This morning I woke up COLD. A Green Monster or juice was not going to cut it.
I was really excited to try out this new product:
Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! I could *probably* find it if I really wanted to though…if you catch my drift…
Creamy PB + J Oatmeal Parfait
Ingredients:
- 2/3 cup regular oats
- 1 T chia seeds (optional)
- 1/3 cup coconut milk
- 1/2 cup almond breeze
- 1/2 cup plus a bit more water
- pinch salt
- 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)
Layers/Toppings:
- Strawberry jam
- Nut ‘n Budder
- peanuts
Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!
YUM!
Would you like a chance to win a jar of the Almond Budder Extreme and Nut ‘n Budder?

If you want you can tell me your all time favourite FICTON book! (Yes, I am in the market to start fiction reading again and looking for good ideas!!)
Contest is open to US and CAD residents only please.
I will be selecting TWO winners. Contest open until tonight at 11pm EST.
Have a great Friday!
Wow, that looks delicious!
I am currently reading A Confederacy of Dunces and The Learners (the sequel to an awesome book called the Cheese Monkeys)
i couldn’t pick a favorite! there are too many haha, your oats look di-vine!
i would be soooo thrilled if i won, thankyou so much for the opportunity!
First of all, holy WOW you have over 500 comments on this post. People mean serious business about this budder creation :)
I would LOVE LOVE LOVE to try it out, that creation you made looks ABSOLUTELY AHHHHMAZINGG. And I will be trying it, yummy budder or not, in the near NEAR future.
Good luck finding two deserving commenters :)
So hard to pick a favorite! The Kite Runner and Angels and Demons are 2 that I loved. The parfait looks yummy!!
Just pick one?! Ack! I’m such a bookworm that it’s definitely gonna be hard for me. Current favs:
– Five people you meet in heaven: a short but heartwarming tale
– Bloodletting and other miraculous cures: Canadian pride! Follows a group of med students through T.O. med school onto their lives as doctors. Really fascinating read
– The Tipping Point / Outliers: two non-fiction books, but trust me, they read like fiction! The author’s groundbreaking ideas on the patterns of this world are mind-boggling. Will make you see the world a whole new way, trust me
And if all else fails, google up “BBC Top 100 books”. Apparently, the average Brit’s only read 6 of the 100 on the list! (How do you measure up, Angie? I challenge you! lol :P)
btw, I don’t know if you follow Steven and Chris (the Canadian talkshow duo?), but they recently invited a nutritionist onto their show talking about good and bad fats. Most of what she said was fairly basic for the nutritionally-conscious, but she mentioned something I’d never even considered. Apparently, it’s a REALLY bad idea to cook with extra virgin olive oil as it’s monounsaturated fats turn to TRANS fats upon exposure to heat and/or light! Check this out: http://www.cbc.ca/stevenandchris/2010/02/good-fat-vs-bad-fat.html
It’s so hard to pick a favorite! But DaVinci Code and Redeeming Love are pretty high on my list and most anything by James Patterson.
Ooooh….that sounds SO yummy. Pick me! :)
I love fiction by Dan Brown – his new book is pretty good. :)
That parfait looks amazing. Using those ingredients that way never would have occurred to me. Soooo tasty.
My favorite book is The Post Office Girl. Nihlistic German anarchist exploring class tensions in post-WWI Germany. Amazing.
… BUT NOT AS AMAZING AS WINNING ONE OF THOSE NUT BUTTERS/BUDDERS WOULD BE!
Because I don’t typically finish a book very fast and finished this book in 4 days!
*~*~*~ THIS IS SUCH AN AWESOME BOOK ~*~*~*~
” Redeeming Love” – if you have a good fella it really makes you just cherish Him!
I’m a long-time reader but this is the first time I’m commenting – just couldn’t resist talking about some of my favorite things…
I LOVE oatmeal and anything that includes peanut butter. I can’t wait to try this parfait when I’m snowed in this weekend (in Northeast US). As always, thanks for great recipe ideas!
All time favorite fiction book is The Kite Runner by Khaled Hosseini. A close second is East of Eden by John Steinbeck.
The Perks of Being a Wallflower is my all time favorite fiction book! :)
I love “The History of Love” by Alison Krauss, and “Jonathan Strange & Mr. Norrell” by Susanna Clarke!
I don’t know if I have a favorite fiction book, but the last one I read was called “The Girl with the Dragon Tatoo” and it was really good!
great gatsby!
They both look so good. I wish I could “taste” over the internet. I am over PB and don’t even give it to my girls as I haven’t found a healthy one that we all like.
Two faves are the Beekeeper’s Daughter and To Kill a Mockingbird.
My Sister’s Keeper is one of my favorite books.
Also The Book Thief, The Wedding, Odd Thomas, Confessions of a Shopaholic, among many others.
“Ender’s Game” by Orson Scott Card. Best book ever!
I’d love the butter!
My favorite fiction book? Hmm. Well I happen to love the lion, the witch and the wardrobe and the whole chronicles of narnia series by c.s. lewis.
After that it would be jodi picoult and my favorite one from her is “second glance”
Oooooh I love that this is available in Canada!!! I wonder if it is sold in Saskatchewan!!? I would LOVE to try it!
My favourite fiction book is “The Outsiders.”
