Happy Thanksgiving to all!
Even if it is not Thanksgiving where you live, you can enjoy this deliciously healthy pumpkin treat! These are a spin-off of the hugely popular Peanut Butter and Jam Glo Bites.
I decided these would be the perfect breakfast for Thanksgiving morning for Eric and I. They are decadent, but not overly sweet and they have a fabulous spelt crust. We both loved them and I enjoyed mine with some delicious spiced tea. No better way to start the Holiday Monday!
Vegan Spiced Pumpkin Pie Glo Bites
Ingredients:
Crust
-
1/4 cup Earth Balance (vegan margarine)

1/4 cup sucanat (brown sugar probably works)

1 cup spelt flour
-
1/4 c milled flax
-
1 t cinnamon
-
1-2 tablespoon almond milk (if crust is dry- mine was)
Filling:
-
½ t baking powder
-
1 t vanilla
-
1/2 teaspoon cinnamon
-
pinch nutmeg
-
¼ cup Whole Wheat Pastry Flour
-
¼ cup cane sugar (or regular white)
-
½ cup canned pumpkin
-
½ cup almond milk
-
Dark Chocolate chips (optional)
Directions: Mix crust together with a hand blender in a medium sized bowl. Place approx 1 tablespoon of crust in a regular muffin tin. Press down to create a mini crust making sure the crust comes up on the sides a bit. Add approximately 2 teaspoons of filling and top with dark chocolate chips if preferred. Bake at 350F for 15-20 minutes. Makes 8-12 bites depending on how thick you make the crust. Ours made 10.
I should have doubled the batch! ;)
Next time I might also try adding a bit of silken tofu to the filling as a thickening agent and a great way to get some more protein in there.

I know I do. I love adding it to my Green Monsters too. My goal is to make a vegan pumpkin pie this Fall.

Those look yummy by the way. I was inspired by all of your creations on here and decided to be creative in the kitchen. I came out with chocolate peppermint cookies (made with mashed banana and oatmeal) They turned out great! But maybe not as great as your creations :) hehe. Have a great day!

Those look divine. I actually roasted pumpkin tonight. I LOVE roasted pumpkin. Skinned w/ salt and pepper in chunks. @ 220C/400F for about 45 minutes until it caramalizes. It’s divine. What a great treat. Happy Thanksgiving.

Those look so pretty!! I do love pumpkin…I especially love to make pumpkin bread with raisins…something about the moist pumpkin and the plump raisins just screams autumn to me.

Are you kidding me? I haven’t even read this post yet but I just have to comment. I am having a major pumpkin fetish lately putting it in my smoothies, my oatmeal (which I eat at lunch or dinner). Can’t wait to read and maybe try these babies!

I have been on a major pumpkin bender… but that’s the beauty of eating within seasons, looking forward to and really enjoying particular ingredients at specific times of the year. Recent recipes were pumpkin/walnut/chocolate chip muffins, black bean/butternut squash/tempeh/pea casserole with a fab. nutritional yeast sauce, and pumpkin soup with toasted hazelnuts and chives… and they are all vegan!

Pumpkin is one of those foods that can pretty much taste good with and as anything (sweet, savory, etc). I made this pumpkin bread recipe over the weekend:

…but I substituted chopped walnuts for chocolate chips, added 2 tsp vanilla extract, and used pumpkin spice instead of cinnamon. Turned out moist and not too sweet!
I am wondering though, how would you veganize this recipe?
I would probably use 4 flax eggs and some baking powder. It would take a lot of trial and error most likely!

Those bites look deelish! I love pumpkin (and any squash for that matter). My favourite way to eat pumpkin has always been in pumpkin pie but lately I’ve enjoyed it in oatmeal and in casseroles.
To be honest, I have a near-fear of canned pumpkin. Something about the consistency and gross bland taste of the plain stuff. You have to add a plethora of spice to make it edible and then it just makes everything mushy! (or too moist if you’re baking with it).
On the other hand, I loooove freshly roasted pumpkin and toasted seeds :)
Mmmm I love pumpkin in anything. I use it in muffins/ pancake mix/ soup etc.!
Not really, we eat it all year round (in soup at least) but we don’t use it for a lot of stuff besides that and jam.
These look amazing! Since you are the professional baker, do you have an advice on making these gluten free? I am lost when it comes to gluten free baking, but that’s the way I have to bake now!

You might be able to try a GF All pupose flour and then adjust the milk depending on how dry/wet it is…
