Healthy Spelt Pancakes For One

January 2, 2010

IMG_8834

Do you like pancakes?

I sure do.

IMG_8847

I am a pancake lover, but I typically don’t make them for the following reasons:

  • I am not a fan of how many pancakes most recipes make when I just want a single serving
  • Whenever I make pancakes on weekends, it always turns into a big production. Mess, drips, pans, spills, small kitchen fires…you get the idea.
IMG_8835

But I am no quitter, my friends.

I decided to create a ‘Pancake for 1’ recipe and prepare the dry ingredients the night before. I also had a few requirements:

  • It had to use whole grain flour
  • High in protein and fibre
  • Be quick enough to make on a weekday morning

Preparing it the night before actually worked out quite well and it only took me about 10 minutes to make this morning. This will work wonderfully for weekday mornings.

Mission Accomplished!

Healthy Spelt Pancakes for One

IMG_8871

Ingredients:

  • 1/2 cup spelt flour
  • 1/2 t cinnamon
  • tiny pinch sea salt
  • 1 t baking powder (I use aluminum-free)
  • 1/8 t maca powder (optional)
  • 1/2 T Manitoba Harvest Hemp Protein Powder (optional)
  • 1/2 c unsweetened almond milk (or milk of your choice)

Syrup + topping ideas (see below)

Directions: Mix all dry ingredients together the night before and place in container. In the morning, heat a skillet on medium while mixing the batter. Add the milk to dry ingredients and stir well. Spray the skillet with non stick oil and spoon the batter onto the skillet on med-low temperature. Flip pancakes when bubbles pop and cook other side.

Makes 5 baby pancakes. Awww how cute.

I made the low sugar coconut oil syrup (see below). This is my go-to pancake syrup. So amazing. It doesn’t give you that sick feeling like maple syrup often does.

These pancakes pack quite the nutritional punch.

215 calories for the entire batch (without maca, hemp, syrup or toppings), 8 grams of protein, 11 grams of fibre, 21% of the day’s iron requirements and 11% of calcium requirements!

Sprinkle some chia seeds on top and you will add some healthy omega oils, antioxidants, iron, and calcium. :)

HEALTHY SYRUP IDEAS:

Low sugar syrup:

For the syrup, I like to mix coconut oil and maple syrup for a really delicious low sugar syrup. I mix 1 tablespoon of coconut oil and 1/2 a tablespoon of pure maple syrup together and the result is pure heaven.

Low calorie syrup:

Sometimes I also mix 5 parts applesauce and 1 part agave nectar for a very low calorie yet delicious ‘syrup’.

IMG_8883 Topping Ideas:

  • Chia seeds
  • Goji berries
  • Unsweetened coconut
  • Dark chocolate
  • Cacao nibs
  • Almond or peanut butter
  • Crushed walnuts

It was a delicious, filling, and quick breakfast!

What is your ideal breakfast if you could have anything in the world?

What does your weekend breakfast routine look like compared to your weekday breakfast routine?

Off to workout + Whittle! Then work for a few hours today followed by a couple returns at the mall.

Those pancakes look so good – that first picture is positively sinful! I’m really glad that you posted the recipe just for one though.

Good luck with the interview airing and the donor match.

Those pancakes look yummy. Good job with the photos!
I always make a big batch of pancakes and freeze the leftovers. If you make small ones you can just pop them in the toaster straight out of the freezer!

I have to second this idea…we do this all the time. Big batches from scratch on the weekends which I freeze and then put in the toaster oven.

Quick and easy to get the kids off to school in the morning with a good breakfast.

Also, instead of syrup many times I spread some PB&J for the kids (haha…that way it is portable too when we are running late)

Your coconut syrup looks soooo good!

Those pancakes look awesome!
Its funny how different I eat on the weekends when it comes to breakfast. During the week its always oatmeal, but on the weekend I have more time so I’ll put in some actual effort. Im a big fan of homemade hashbrowns with poached eggs on top.

I, too, love to make pancakes but I never want a lot! Usually, I make tons of little tiny ones and foist them off on my roommate and my brother, saving only however much I want, but this recipe looks great!

Yay for pancakes for one! What a genius idea! Although actually what we usually do is just make a big batch and freeze them and thaw a few at a time :D

So exciting about the bone marrow registry! I’m a member too. I actually got contacted a few months back about someone I was a possible match with and and I did the preliminary stages… but either they’re taking their time getting back to me or it wasn’t a match this time!

Hey Angela and OSG readers! Reading Angela’s blog has helped me confront my won ED, as well as the challenges I face being gluten-free. I have recently decided to become a vegan… and haven’t felt better in my life!! I am concentrating on living a happy and healthy life through nutrition and exercise. Come read my blog [http://tryingonimperfection.blogspot.com/] where I will write about my journey to accepting myself. I’ve only written one post so far, I am trying to get the hang of blogging :)

Thanks Angela– your blogging has helped me face my inner challenges. I am excited to make positive changes!

That’s awesome that you are trying to be a donor for bone marrow transplants! I didn’t even know that is was possible to sign up for it. What a generous and thoughtful thing to do. People like you make the world go around. :)

I think it’s AWESOME that you’re adding yourself to the Bone Marrow Registry. Good for you!

My ideal breakfast, while not super healthy, is my mom’s breakfast potatoes. I LOVE them and no matter what I do I can’t ever recreate them at home.

During the week I try to make enough time for oatmeal or cereal but sometimes it’s a Clif bar as I’m running out the door. On the weekends we usually have eggs or pancakes. Yum!

As a side note – I got my order of Glo Bars the other day and they are simply amazing! My husband tried one and really likes them too – although I glare at him when he eats one because I don’t want them to run out :) THANK YOU for making such a delish product!

Wow great idea with those single serving pancakes, so helpful! Could you use whole wheat flower if you don’t have spelt??

On the weekends I definitely take more time with breakfasts, but since my favorite things (oatmeal, pb, bananas) don’t take too long, I’m usually able to have them throughout the week :)

Yes I think you can use whole wheat flour too, but you may have to adjust the amount of milk perhaps!

Great recipe – I will definitely be trying it soon!

My weekend and weekday breakfasts aren’t really any different, because I work from home, so I can take my time to make a great breakfast any day of the week. I need to remember how lucky I am for that.

Saw your interview online today (tried to catch it on TV, but must have missed it). It was definitely inspiring. And your new glow bars look fantastic.

I’m not a huge pancakes person, but that’s mostly because i don’t like really sweet things in the morning. However, the ‘syrup’ you used sounds delicious so i’ll keep this in mind next time i feel like a morning treat.

Yum- your pancakes look delicious! I am a very low maintenance girl when it comes to breakfast- I just need something that goes with almond butter!

Hope your interview aired!
