Creamy PB + J Oatmeal Parfait

Holy smokes it’s Friday again!

I swear it feels like it was just Friday.

Yesterday’s workout was FUN. I love the feeling of renewed enthusiasm after a day off.

I did a 3 mile run:

  • 3 min walking warm-up
  • Mile 1: 6.0 mph, incline 2%
  • Mile 2: 6.5 mph, incline 5% (such a hard mile!!!)
  • Mile 3: 6.0 mph, incline 2%
  • 2 min walking cool-down

Mile 2 was a LONG, hard mile. I stopped half way through to get water. After the run, I did the ab-solute workout (18 mins of abs) and Booty Booster workout from the Booty Camp Fitness DVD.

Since I have been doing strength training my appetite has gone way up! I wonder if that is because my body is expending more energy repairing my muscle tears? Either way I have been one huge Hunger Monster lately.

This morning I woke up COLD. A Green Monster or juice was not going to cut it.

I was really excited to try out this new product:

Nut ‘n Budder contains peanuts, almonds, flaxseed oil, organic sugar, and flaxseed. It is only available in Canada right now (you don’t hear that on blogs too often!). It is seriously addicting, subtly sweet, and very creamy. I had to hide it in the back of the Lazy Susan! :mrgreen: I could *probably* find it if I really wanted to though…if you catch my drift…

Creamy PB + J Oatmeal Parfait

Ingredients:

  • 2/3 cup regular oats
  • 1 T chia seeds (optional)
  • 1/3 cup coconut milk
  • 1/2 cup almond breeze
  • 1/2 cup plus a bit more water
  • pinch salt
  • 1/2 banana (optional- I didn’t have one so I used chia seeds to thicken it up nicely)

Layers/Toppings:

  • Strawberry jam
  • Nut ‘n Budder
  • peanuts

Directions: Mix together oats, chia seeds, coconut milk, salt, banana, almond milk, and water. Bring to a boil and then cook on low, stirring frequently, for about 10 minutes. Take a glass and drop in a layer of jam, then oats, then PB, then oats, then jam, etc. Sprinkle with peanuts and enjoy!

Those nut butters look great — I live in the GTA as well and have never seen them…where did you get them?

As for Fiction…it’s so hard to pick one favourite, but a favourite author is Lionel Shriver. She’s smart and her prose is so beautiful. We Need to Talk About Kevin and Post-Birthday World are both can’t-put-down (missed my Subway stop twice) reads.

I could never just pick one book I love. My favories though are Ann Marie MacDonald’s books, too bad she’s not writing anymore. Simply amazing stories!

That breakfast looks so yum!

My fave author is Nicholas Sparks- I’ve read all his books and loved everyone. They always have an adventure, but also a love story. I’d recommend any of them for sure! My favorite one is The Guardian.

I don’t know about my favorite, but The Shell Seekers by Rosamunde Pilcher is just a fun, absorbing, girly read.

Yum!!

I liked The Lovely Bones, Sweetness in the Belly, The Sookie Stackhouse Series (for some easy reading), and any Patricia Cornwell (though they are scary!)

Holy yum! That looks delicious!!

My favorite book is The Alchemist by Paul Coehlo, it’s short but such a good message about the power of dreams and listening to your heart. I also secretly hearted all the Twilight books, and then there’s Those Who Save Us by Jenna Blum which is about family secrets and living through Nazi Germany during WWII. Hope you find a good one!!

I just ran out of almond butter so I am desperately in need of replenishment–and I would love to try some of this Canadian delicacy! Off the top of my head, if you enjoyed Atonement, Ian McEwan’s Enduring Love is a also great novel.

I second Jodi Picoult. And surprisingly, the Twilight books are excellent. One of my favorite chick story books is Summer Sisters by Judy Blume. I’ve read that one almost 10 times and it’s one of the only books I have ever read more than once :)

Some of my favourite books (of fiction) are The Time Traveller’s Wife, 1984, The Kite Runner, and The Poisonwood Bible. They all got me thinking.

That Almond Butter Extreme looks amazing!

First of all, that oatmeal parfait looks AWESOME!

I love reading so picking a favorite book is really difficult! I pretty much have a favorite for every genre.

I’m a HUGE fan of the Harry Potter series. You do have to get over the two/ three book hump before they really get enjoyable. They books themselves are so well written!

I also really like Chuck Palahniuk’s book (Fight Club and Lullaby are my favorite’s by him.) His books are written for a certain kind of audience though.

In the realm of memoirs (that may or may not actually be true) Chelsea Handler’s books (My Horizontal Life and Are You There Vodka, It’s Me Chelsea) are both great laugh out loud books. Augsten Boroughs (Running with Scissors) is also a really great book.

As far as “chick lit” goes, I really like Jennifer Weiner. In Her Shoes is my favorite of her books, but they ewre all enjoyable.
