Our mystery plant- which we were told is a Yucca Plant has BLOSSOMED before our eyes! When we got back from the market on Saturday it was in bloom. So gorgeous!!

We had such a restful and fun night last night! It was much needed. I slept a solid 8 hours and woke up feeling like a new girl with a new lease on life. The sun was shining and it was gorgeous outside.
I started my morning off by channeling my inner Beetlejuice!
I had this energizing juice made up of 1 super large beet + 1 small beet and 1 lemon. It was divine!
Then I literally ran out the door for a run to beat the heat! It was 20C out there and I knew that it would be getting very hot if I didn’t get out there fast.
No Eric by my side today…he slept til 10am this morning! I must have worn him out yesterday. :tongue:

The run got very hot and I sipped my Camelbak dry by the time I was home.
I was starving for breakfast after I came down from my shower. I almost didn’t think I would be able to wait for pancakes to cook!

I made my Healthy Spelt Pancakes for One this morning. I also made a new sauce for topping that was out of this world delicious! I’ve seen a lot of bloggers putting mashed up banana on their pancakes and I always wanted to try it out. I made a jacked up coconut butter, banana, and maple syrup sauce this morning…I had about 1 tbsp of coconut butter left in the jar so I just heated it up and mixed it all in the jar to save a dish.
Banana Coconut Maple Creamy Pancake Sauce
Ingredients:
- 1/2 banana (not frozen)
- 1 tbsp coconut butter
- 1/2 tbsp pure maple syrup
Directions: Heat up the coconut butter so it is soft and then mix all ingredients together, making sure to mash up the banana.
Oh dear meeeeeeeeeee.

I topped the pancakes with the sauce, cacao nibs, unsweetened coconut, and the other half of the banana. Oh yes, and a strawberry on top!

This was a breakfast that dreams are made of!
The Banana Coconut Maple Creamy Pancake Sauce was incredible. I will be doing this again for sure.
I am off to get ready for the Calico Cafe meet up this afternoon! I am so excited to try out a new vegetarian restaurant and get together with some girlfriends.

Your pace is so fast! My pace on my runs has suddenly gone in the toilet. We have been at the mid 50’s for all of summer, then suddenly this past week it has been 90+ degrees. Yikes! Talk about a severe change. My body has been in shock.

Oh wow, those pancakes look so good. I always use the batter part of your healthy pb swirl pancakes recipe to make pancakes. I love it. Now, I’ll have to try this sauce on top!

Mamma mia, your pancakes… yum yum!!! I always read your goodmorning when here the morning is just gone, hehehe I don’t know how many hours do we have for “time zone” (jet lag?). I always have to say “yum, tomorrow morning I’ll try that!” and I think about the delicious GM or breakfast all day long! ;)
I love maple syrup and I like bananas too. I want to look for raw cacao nibs. I hope I can find itt here too.

Ah, I forgot to write you a recipe for a Green Monster (but it desn’t have spinach but basil:
2 ripen peaches
basil as you like
cinnamon pouder
ice cubes
and if you want to add some sweet , add for exemple 1 little spoon cane sugar.
Mix all and drink! It taste great and refreshing :)

Wow, that plant is gorgeous! Loving your pancake sauce as well! Bananas and maple syrup meld beautifully with pancakes so I can just imagine how much better the addition of coconut butter would be to that mix. So yum! Have fun at the meet up!
You are SO lucky to have a yucca plant in your back yard! That stuff is amazing, especially baked with fresh garlic and butter (or vegan marg., whatever…) and served with Cuban black beans and rice. A few years ago I worked at a school across the street from a Cuban restaurant and I must have spent hundreds of dollars there just ordering yucca!
So cool u can eat it!

I had to tell you that I used your trick today of getting dressed to work out, even when you’re not really in the mood. I put on my yoga clothes, and poked around the house until finally I just started my yoga tape. I feel a million times better after doing that workout, it was just what I needed. Thanks for the inspiration!
