Green Monster Pancakes

It was bound to happen, right?? :)
Ingredients:
- 1 cup milk (I used vanilla soy milk)
- 1/2 cup coconut milk
- 1 tsp vanilla extract
- 1 ripe banana
- 1 cup spinach
- pinch of salt
- 1/2 tsp nutmeg
- 1 tsp baking powder
- 1 1/2 cup spelt flour
- walnuts for garnish
Directions: In a blender, puree together the first 5 ingredients. In a medium sized bowl, mix together the dry ingredients by hand. Add the wet ingredients to the dry and mix well. Pour onto a pre-greased, pre-heated (medium- low) non stick skillet. Cook on one side until bubbles begin to burst and then flip and cook for another minute.
Makes about 8-10 medium sized pancakes.
Recipe adapted from ED&BV, called ‘Banana Cream Pancakes’
Note: I found the banana taste got lost in the pancake. Next time, I would coarsely chop the banana (or at least half of it) and stir it into the mixture at the end before cooking. That way you can get a few chunks of banana here and there. :)

These were just awesome! Of course we couldn’t taste the spinach at all! I ate about 2/3 of my plate and then I was stuffed!

Well, I am off to finish organizing the kitchen. I was up until about midnight in the kitchen doing all of my labeling and organizing! I am at it most of the day today. Eric sanded down the rooms last night and today is primer day (2 coats- one this AM and one tonight!).
I am going to a friend’s bachelorette party tonight– should be so much fun. I think we are going to a drag show?????

If you can’t taste the spinach, I think green pancakes are a fantastic idea. ;) The drag show sounds like it’ll be a doozy! Great job accomplishing so much this week too.
I love the idea of a recap! That way, I can make sure I got all the recipes saved that I wanted to try and check to see if I missed anything! I vote for YES for the new feature! :D

I absolutely love pancakes and this is a great way to get in more veggies….. we’ll have to try it with our kids someday… i’m sure we can make up a story about the hint of green in the pancakes haha.

I love kitchen organizing, I told my boyfriend’s Mom I’ll organize her cabinets for Mother’s Day and I’m actually excited about it, kind of weird right? You never know what you’ll find hidden though!
Those green pancakes look awesome. By the way I tried out some of your recipes this week. Tuesday night I made a batch of raw chocolate chip cookies. They were a hit with everyone. And yesterday I used your recipe for spelt tortillas, but with wheat flour bc that’s what I had. I never realized how easy it was to make these- and I love wraps. Thanks Angela.
I just wanted to drop you a note to say I LOVE reading your blog! I have become an addict of the smoothie’s now as well – thanks to you! But, in addition to the Almond Breeze, I put a cup of Activia yogurt (vanilla, peach or strawberry) along with the ground flax seed, fruit and spinich. It not only fills you up, but keeps you right on the mark. Daily. =). You had asked one time how do you get your man to drink it? I started without the spinich so it looked like a regular shake, which he LOVED. Then I incorporated all the extra’s flax seed, spirulina and spinich…First you get them hooked, THEN you change it up! He now makes them for us in the morning before work so we can start the morning healthy!
