I have never been a big sweet and savoury person. I either want my food sweet or I want it savoury. But combined? I was always a bit skeptical. However, when I set out to test some spelt biscuits (adapted from my spelt tortilla recipe), I decided to throw in some fresh strawberries on a whim. It couldn’t be that bad, right?
Have I mentioned I love spelt?
Spelt flour has 15-20% more protein than wheat, is rich in magnesium and complex carbohydrates, and is much easier to digest than wheat protein. If you are sensitive to wheat it may be a good option for you, however please note that spelt is by no means gluten-free so it is not advised for Celiac sufferers.
Vegan Strawberry Spelt Biscuits
Ingredients:
- 1 cup whole grain spelt flour (for a more delicate biscuit use white spelt flour)
- 1.5 teaspoons aluminum-free baking powder
- Pinch of salt (I used fine grain sea salt)
- 6 tablespoons hot water
- 3 tablespoons non-hydrogenated coconut oil
- 1/2 cup diced strawberries
Directions: Preheat oven to 375F and grease a cookie sheet or line with parchment paper. Whisk dry ingredients together and then add water and oil and mix until just combined. Place dough on floured surface or on a non-stick mat and flatten dough until it is 3/4 inch thick. Place strawberries on top and press into the dough. Take a small glass or cookie cutter approx. 2-3” wide and cut out biscuits. Gently peel dough off counter and place on cookie sheet. Sprinkle with turbinado sugar. Bake for 9-10 minutes depending on oven.
Makes 10 tiny biscuits @ approx. 70 calories each.
Total prep time was about 10 minutes. Quick and easy.
I tried them sandwiched with vegan butter cream icing…
Drizzled with pure maple syrup…
And spread with a bit of Earth Balance vegan margarine. All three were delicious!
I loved these biscuits, but I think next time I would prefer them with sliced banana on top rather than strawberries. For some reason I just find bananas pair well better with savoury tastes. These would be fabulous with bananas baked into the biscuit and then spread with a bit of peanut butter. I might try that next time!
Eric is already asking when I am making the next batch! ;)

I’m off to the wedding early tomorrow. I will try my best to get a post up in the morning, but I’m not sure. The hotel has internet access so hopefully I can connect at some point during some down time.
I’m wearing a dress out of my closet that is 8 YEARS OLD if you can believe it. I bought a dress this week, but I am going to return it because I decided to save some money and wear the other dress. It has only been worn once (to my mom and stepdad’s wedding reception!) and still fits like a glove so I thought, why not wear it!?
Stay tuned for the full recap of the wedding festivities. I can’t wait! :) The weather is supposed to be gorgeous too (we’ve been having lovely summer like weather all week).

Have a great weekend whatever you are up to! I’m off to pack for the wedding tomorrow and busy myself until Eric gets home from work (sadly not until 8pm tonight!).
I love seeing all of your new creations, these little biscuits look great! You are a very inventive woman and are very talented.
Those look delicious – how creative!
Those look awesome, I am going to have to pick up spelt flour this weekend! I think they would be awesome with banana with PB too!
Oh love those ones with the buttercream icing…oh boy!
Have fun tomorrow!
YUM! Those biscuits look great!
these biscuits look great! I made basil strawberry scones not too long ago, and these reminded me of them.
no worries about the post in the am – have a safe trip to the wedding!
what a coincedence, the other night i was craving the same thing, i had fresh strawberries from the local farmers market, so i made strawberry scones, i added ground flax and hemp seed, nutmeg, lemon zest and pure vanilla….your’s look very good as well!!
I’m GF and cannot do any gluten container flour (including spelt) so the biscuits are out…BUT the vegan buttercream icing??!! Holy yum! Let me guess though you made it with tofu (I can’t do soy either)…the closest thing I can get is soaked and whipped and vitamixed some more cashews and turn them into cashew cream with agave and vanilla. But I’d love to hear your buttercream recipe!
Enjoy the wedding…girl, I give ya megaprops for wearing an 8 yr old dress, and of course for fitting into it :) all in the name of saving $. Awesome!
I’m very eager to see this dress!
You are amazing chica. I am iffy on the sweet/savory combo, but then I just remembered that I love to dip my eggs and bacon in syrup… haha.
I need to give these a whirl. Have fun at the wedding! :)
Yay! I’m so glad you made them because they look amazing! Now to add it to my list of your delicious foods to try out :-) I’m sure they’re delicious – I made strawberry bread earlier this year and it was beyond good. Actually I found strawberries for $1/lb this week so I think I’ll have to try these out soon ;-) Thanks Angela! And have fun tomorrow!
Holy yum!! Spelt is definitely great for baking :)
You have something new and amazing every day! I want to hang out in your kitchen!
Those biscuits are super pretty :)
I love spelt so much better than wheat
That’s why I only buy spelt flour
but I would love to try the actual grain
Those biscuits look super yum! Like strawberry shortcakes – soooo good.
You’re so creative with your food concoctions!
Hi Angela,
This is a totally random Q, and one that you’ve likely ansewred before to boot, but I was just curious what you wear around the hosue while you’re baking and such? On days when you don’t venture “out” do you really “get dressed”?
On days when I don’t leave the house I tend to kinda rock the jammies all day, but I have mixed feelings about how I feel about myself and my day when I do that. Sometimes I love it, but sometimes it nearly puts me in a funk.
These look so incredibly wonderful! I’ll have to try to make them in my new *TINY* Scottish oven. I have to take pictures so you can understand the wee size of the thing.
Nevertheless I am definitely making these. They look amazing!
Wow, those look awesome!
Can you substitute Canola or another Oil for the Coconut oil?
