I don’t know about you, but I don’t think there is a better tasting combination than peanut butter and jam. The flavours just have a way of complimenting each other so well.
The other day, when I was looking to make an indulgent yet healthy breakfast treat, I knew that I had to have these ingredients in my morning snack.
Vegan Peanut Butter and Jam Glo Bites
Ingredients:
Crust
-
1/4 cup Earth Balance (vegan margarine)
-
1/4 cup sucanat (brown sugar probably works)
-
1 cup spelt flour
-
1/4 c milled flax
-
1 t cinnamon
Filling:
-
½ t baking powder
-
1 t vanilla
-
¼ cup Whole Wheat Pastry Flour
-
¼ cup cane sugar
-
½ cup PB
-
½ cup almond milk
-
Jam
-
Dark Chocolate chips (optional)
Directions: Mix crust together with a hand blender in a medium sized bowl. Place approx 1 tsp of crust dough into pre-greased mini muffin tin (or use 1 T of crust in a regular muffin tin). Press down to create a mini crust making sure the crust comes up on the sides a bit. Add filling, filling the tin about half only, and top with jam and chocolate or carob chips. Bake at 350F for 15 minutes. Makes 24 mini cups.
Note. You can also experiment by putting the jam on top of the crust but before the filling layer. I would suggest not mixing the jam into the filling though because the taste sort of gets lost in all of the other ingredients.
Recipe inspiration from here.
The crust turned out absolutely delicious. I think this is one of the best tasting crusts I have ever made!
In the photo above, I used a mini tart pan. I think this was my favourite size, although the mini ones were super cute.
These tasted out of this world delicious!!! I am seriously addicted. They make such a fun breakfast treat on days when you just aren’t feeling the regular stuff or when you want to make something special on the weekend. When they bake in the oven the whole house smells just wonderful too! Just delicious.

Enjoy your day!

Mmm PB and J and CHIA seeds! I wonder what would come of chia seeds sitting in a bit of jam and H2O?
Hey! These look really good- I wonder how almond butter would taste instead of PB? Also, maybe I’m just a little thick, but what is WWPF??? Thanki you for another Chia giveaway!
Those look absolutely delicious Angela! But question, what is WWPF? Because I want to make them!
I’d love to win some chia seeds. I haven’t gotten to try any yet, and I really want to!
Pick me! Pick me!
Ok, well now i can’t wait to get home and have some PB&J… too bad computer screens aren’t scratch and sniff!
Yum! I also was wondering what WWPF is… I sat here for a while contemplating the possibilities, but I honestly have no idea! Am I just having a slow moment?

I have looked at a few different stores for Chia Seeds so …yes, please!! My green monsters could use some Chia =)
Those look delicious. I think you should add these to your bakery website! I would be tons.
And chia please!
Oh wait…does it mean whole wheat pastry flour??
My sister has been using chia seeds, including your pudding, as a way of dealing with years of bowel issues and it works! A 3lb bag would go a LONG way as she only takes a tbsp a day!
If only you could mail out tarts :)
I want chia too! Then I can make lots of fun stuff!
