Tropical Raspberry Lime Zinger

Every morning for breakfast while in Calgary, I made my favourite hot oatmeal for Diane and I. It was so chilly and rainy during our stay, the only thing on my mind was something hot. I had no desire for anything cold like vegan overnight oats or Green Monsters (except for the amazing peanut butter oatmeal smoothie my sister made me!)

On the bright side, at least it didn’t snow this June…

You know how I said the first meal I was going to have once home was hot oatmeal?

Yea, that wasn’t happening. Once back in Ontario, the heat and humidity hit us like a brick when we stepped off the plane. Hot oatmeal won’t be happening for a loooong time.

Even our tire melted while we were gone!

That tire looked about as good as I felt at that moment. Deflated and tired!

Luckily, my handy man was able to put on the spare and get us home from the airport. I’m still amazed that those tiny spare tires even work…I don’t even think it touched the ground!

The only thing we could think of once home was something cold to drink. Unfortunately, the fridge was looking pretty bare, so I gathered whatever I could find.

  • a couple old limes
  • frozen raspberries
  • coconut oil
  • 1 frost-bitten frozen banana
  • agave

I’ll take it! It turned out tropical and refreshing with a zesty kick of lime. I’ve made it a couple times since I’ve been home now. I’m glad to finally have a use for my freezer-burned raspberries that have been in the freezer since who knows when.

PS- You know your limes are old when they look like lemons. It’s a miracle we’re still alive.

Tropical Raspberry Lime Zinger

Ingredients

  • 1 cup water
  • 1 cup frozen or fresh raspberries
  • 1 large frozen banana (peel and freeze before making)
  • 2 tbsp fresh lime juice
  • 1 tsp coconut oil
  • 1 tsp agave, or to taste (or other liquid sweetener)
  • ice, if necessary

Directions

  1. Add all ingredients into the blender and blend until smooth. Adjust sweetness to taste. You may need more or less agave depending on how tart your berries are. Add ice if desired. Slurp.

I just peeled some bananas and stuck them in the freezer this morning! Going to have to pick up some raspberries at the store now :)

I made a similar drink yesterday with cherries instead of raspberries – and also threw some cucumber in there! Delish, and perfect for summer!!!

Looks gorgeous! Love the combo of limes and raspberries – I am so jealous of the heatwave Ontario is enjoying/enduring! Nothing but rain and grey here in Vancouver. At least we’ve got plenty to do inside ;) Thanks Angela!

We do too! At this rate it should last well into October (fingers crossed the weather gods are fair). For now? Lots of smoothies to cheer us up! It gets us half way there :)

I love these scavenge-the-fridge dishes. I’ve used some seriously questionable stuff before… my rule is as long as it isn’t moldy, it’s ok to eat. :)

I’m with you girls. I pay no attention to when something’s supposed to expire, but do the smell/sliminiess test. My favourite saying of my grandfather’s is: “best before, but not bad after!” :)

Fortunate that you had your handy man to change the spare. I’ve always wondered what I’d do if I was alone & stranded with a flat–I wouldn’t know the first thing to do (other than to call for help!). And those spare tires, they are kind of joke, ridiculously small, but they work, don’t they.

Jealous of your heat. It’s been mild here in Washington & I’d love to spend my days with my kids in the swimming pool, but I don’t feel justified when it’s cloudy or below 80.

I know what you mean. I’ve watched him enough that I know the steps, but I def. need practice before I’d feel comfortable changing it myself.

OMG so funny about the limes – I have 2 sitting in my kitchen that look the same as yours!!! Sorry about the tire situation – doesn’t make it very easy to get to the grocery store to refill the fridge does it!? ;) Glad Eric came to the rescue as usual. Is there anything he DOESN’T know how to fix?? Have a fantastic long weekend Ange! :)

Angela, the drinks and strawberries look delightful! It’s been 100+ here in WI the last few days so maybe I’ll have to pick up some ingredients for those at the grocery store today.

Out of curiosity, are a majority of your readers from Canada or the US? Is there a way to tell by like tracking IP addresses?

Also, didn’t have raspberries, but made this with blueberries and strawberries. Didn’t have the coconut oil and only thing I forgot was the water… so it was a very concentrated flavor. Still super yummy!

This looks so amazing and refreshing. I wish I had a glass now, it’s so hot and humid here in Buffalo. BTW is it totally bad that whenever I see your photos of these refreshing fruity drinks, I want to add tequila or rum to them? ;)

Hi Angela! I just wanted to share a little tip I discovered recently. I know you have a Vitamix (jealous!) but for your readers who don’t — most blender blades/bottom screw-on things will screw onto a wide-mouth mason jar — like a Magic Bullet, but with glass and without a million pieces. So for green monsters now, before I go to bed I pack everything into a wide-mouth mason jar besides the soy milk and frozen fruits (so spinach, peanut butter, flax seed, chia seeds, carrots, etc), screw the blender bottom on as a lid, and stick it in the fridge. I’m guessing you could go ahead and add the soy milk if you wanted the chia seeds to puff up, but I wanted to avoid sogginess. Then in the morning, I only have to add soy milk and bananas and maybe ice, and then stick it right into the blender base. Viola! I can even drink it straight from the jar! It’s so much more convenient, especially as I’m always running late in the mornings. I blend it on the lowest setting, though, just to be careful because there isn’t as much free space in the mason jar as a regular blender jar.
