After years of drooling from the sidelines, this marks my first year participating in Vegan Mofo which challenges participating bloggers to write about vegan food for the entire month. [For more details, see the Vegan Mofo website.] Colour me excited.
I considered all kinds of random themes for September, but in the end I decided on something I know I could put my heart and soul into. Even though my sweet tooth voted for “DESSERT MONTH!!”, my head decided otherwise. Vegan Glow will showcase wholesome, vegetable-heavy vegan recipes that will leave you feeling energized. The recipes will be similar to my own style of recipe creation, but they’ll be kicked up a few notches. Given that it’s back to school and work season, I’m aiming to share as many quick and easy recipes as I can.
In other news, I now have a “thing” for making rather pathetic “glowing” suns in Photoshop. Oh dear.
What can you expect to see on Oh She Glows this month? Well, I have several recipes lined up from raw recipes and juices/smoothies to healthy desserts and energizing fall-inspired soups. And who knows what else. I sure don’t.
I hope you are hungry because it’s going to be a great month!
Up first, I’m sharing this power smoothie that I’m obsessed with lately. Power smoothies are what I call the mega dose, nutrient-packed smoothies of the bunch. You know that’s how I roll. This one surely is up there on the list of health drinks. I’ve been drinking it for breakfast several mornings a week and it makes me feel incredible. Best of all, it makes just shy of 4 cups…aka one big ass smoothie. I like big smoothies and I do not lie. All you other bloggers can’t deny…
Seeing as we’re just coming off a holiday weekend, I figured this was a good “back on track” smoothie to kick off the new month. Let’s do it up.
Here are a few reasons to chug this down, from a nutritional standpoint. I’ll talk more about the flavour in the headnote below.
Beet – cleanses the liver, purifies the blood, anti-inflammatory, source of iron
Avocado – helps lower blood pressure, lubricates joints, anti-inflammatory, loads of healthy fats, high in fibre
Strawberries – high in antioxidants, rich source of vitamin C, benefits digestion
Celery – acts as mild diuretic, promotes feeling of fullness, rich in B vitamins and fibre
Lemon – antibacterial properties, aids digestion, high in Vitamin C, detoxifies and alkalizes, mild diuretic
Virgin Coconut oil – fights viruses, fungi, and bacteria, metabolism booster, healthy MCT fats, increases good HDL cholesterol
Apple (optional) – helps balance blood sugar levels, helps lower cholesterol, aids digestion

Pink Power Detox Smoothie

Beet, strawberries, avocado, and lemon unite to create one kick-butt, surprisingly delicious, bright pink smoothie! This smoothie is lightly sweet and creamy, while packing in the detoxifying power of beet and lemon. If you're not a beet fan you might be wondering if you can taste the beet. The answer is yes you can definitely taste the beet! However, I think the beet flavour is balanced quite nicely in this smoothie (keep in mind this is coming from a beet fan).
Ingredients
- 1 cup (250 mL) water*
- 1 cup (150 g) frozen strawberries
- 1/3 cup (45 g) chopped fresh beet**
- 1/4 cup (50 g) avocado
- 1 tablespoon (15 mL) fresh lemon juice
- 1 large sweet apple (200 grams), roughly chopped
- 5 to 6 large ice cubes
- Liquid sweetener, to taste (optional)
Directions
- Add all ingredients into a high-speed blender and blend on high until smooth. Taste and add liquid sweetener, if desired.
Tip:
- * For a sweeter smoothie, try using coconut water instead of water.
- ** You might want to steam the beet until tender before blending if you don't have a Vitamix or other capable blender. I just blend it raw because I know my Vitamix can handle it.

Beet, strawberries, avocado, and lemon unite to create one kick-butt, surprisingly delicious, bright pink smoothie! This creamy & thick smoothie is not overly sweet - it's more on the tart side thanks to juice from a whole lemon. If you prefer sweeter smoothies, I suggest adding an apple to the mix or your preferred liquid sweetener. I also suggest using a small to medium sized beet, anything larger and the earthy beet might overpower the other flavours. Consider gently steaming the beet until tender before blending if you don't have a Vitamix or other capable blender. I just use the beet raw because I know my blender can handle it. Best to be safe than sorry if you are unsure!
Ingredients
- 1 cup water or coconut water
- 1/2 medium avocado, pitted
- 2 celery stalks, roughly chopped
- 1 cup strawberries (frozen preferred), hulled if necessary
- 1 small/medium beet, ends trimmed and roughly chopped*
- 1 lemon, juiced (about 3 tablespoons or so)
- 1 tablespoon coconut oil
- 4 large ice cubes
- 1 apple ( if sweeter smoothie is desired - optional), cored and roughly chopped
Directions
- Steam beet if necessary before starting. See my tips in the headnote.
- Add all ingredients into a high-speed blender and blend on high until smooth. Adjust sweetness if desired, adding an apple or liquid sweetener to taste if needed.
Tip:
1) If you are not a beet fan, try adding a handful of leafy greens instead of the beet and include the optional apple. 2) Smoothies shown in pictures does not include apple. Yield may be slightly higher with an apple added in.
I bought a Vitamix two days ago and I have this smoothie planned for tomorrow :) I can’t wait to try out all the recipes that were too heavy for our cheap blender!
LOVE this recipe. Thanks for helping to christen my new Vitamix with this lovely neon pink hue, too. Great veggie & fruit combination, and tastes fabulous.
Really dumb question – when you say the beet should be trimmed, does that mean I’m supposed to include the greens? If not, what to do with the greens? I’ve heard they can be eaten.
Yes trim off the greens – you can save them for a later use (like sauteing in a skillet with oil, salt, and garlic)
And if I make this the night before, would adding some chia seeds help to thicken it up?
made this today. The best smoothie I have tasted to date. super yum and kept me full for hours.
You have to make this TODAY. It’s so very good. I added a small hunk of ginger to add a little spice.
I really like this one in 8 oz size & I don’t even like beets, it makes me feel so healthy when I drink it.
Just made this smoothie this morning and it’s really good! I had a bad experience the last time I made a beet smoothie so I was very hesitant to try again. But I know how good beets are for you so I wanted to give this one a try! Very delicious! I did add in half of a red apple (because I was nervous) but I honestly think it doesn’t even really need it now that I’m tasting it. I’m new the the “Oh She Glows” reader base but so far I absolutely love it! Thanks so much for all the amazing recipes!
I made this and it was do delish!!! I am now a new fan of your site, thank you for sharing.
I totally got got to rate this recipe. I wishtherewas a I
This was soo good! I do not like beets at all but they work so well in the smoothie. You barely taste them! Thanks for the great recipe!
Delicious!!
Thank you. Lovely. I replace half the water with grapefruit juice to brighten the beet up a little.
Do you use that cute mason jar? And if so does it ever leak? Where can I get one?
Thanks so much for the info and smoothie recipe!
Hi, just thought I’d let you know that my local Whole Foods store had a smoothie class, and this was one of the ones they demonstrated! I’ve made this smoothie like 4 times since, it was really good :-) Finally decided to look up your blog today since I enjoyed it so much
this detox smoothie looks so yummy :)

thanks for sharing with the readers. may continue to write for the benefit of the reader.
I love beetroot in smoothies. Such a wonderful flavor. Here are my favorite smoothie combos: http://www.carobcherub.com/9-smoothies-healthy-recipes/ All natural, all vegan, 100% healthy
if this is a detox, how often can you drink this because I see it makes 4 cups
Hey Angela,
I am a huge fan of yours and have been for a long time now!! I have had your book since it came out and have tried and loved almost every single recipe! Thanks for creating such amazing and delicious concoctions!
I hope you don’t mind, I have a blog that I started a few months ago to track my journey back to health from Lyme Disease and I posted a recipe of yours: http://alittlebitoflaura.com/2015/08/21/pink-power-detox-smoothie-from-oh-she-glows/
Thanks again!!!
Laura
I’m highly allergic to coconut. Is there a way to substitute the oil for something else? Thank you
Angela! Wow this was just amazing. I was cravings something outside my regular smoothie but had made some not-so-tasty experiments. Love that it includes celery!
Wonderful smoothie! I didn’t have any strawberries so I subbed raspberries and nixed the apple as I didn’t have one. I loved it! My beet was a little on the larger side so it had a good earthy punch to it but so so SO tasty! Thanks!
This is my go-to smoothie when I need to get back on track and pump some good nutrients in my body. The energy I get from this smoothie is unreal. It feels like a while re-set for my body. I tell everyone I know about it. .. is magical!
I’ve made this recipe a few times. I’ve never used coconut oil or water in it since it has never been on hand. My SIL tried the coconut oil and said it didn’t blend well into the drink. This was the first recipe I tried from this site and I’ll admit I was a bit scared…but, everyone in my family enjoyed it. My kids happily drank all theirs and had bright red little moustaches.
I made this smoothie this morning and I was pleasantly surprised! I added a pink lady apple and didn’t add any ice…it was the perfect consistency and it was so large it took over an hour for me to finish it! Perfect fuel before my run! Thank you for sharing this :)
I just bought a VitaMix. I need to have protein with my meals. What are ways to add protein to a green smoothie?
Hi Katie, my favourite way to give green smoothies a protein boost is with the addition of hemp hearts (also called hulled hemp seeds). They’re a complete protein source, with just three tablespoons containing a whole 10 grams of protein! If you’d like a bit of recipe inspiration, you might be interested in checking out my Green Warrior Protein Smoothie on the blog. Chia seeds are another great option – I love to add a tablespoon to my smoothies. Hope this helps!
Thank you!
This looks like an awesome recipe, and what an amazing color! Wow!
Thanks you so much for sharing this pink smoothie with us.
All the best,
Dan
Hi Dan, thanks for the comment! If you give the smoothie a try, I hope you enjoy it. :)
this is yummy.. i like vegetarian juices..thanks for sharing
hm, that’s look yummy. i’ll try your recipe later, thx.
I hope you enjoy it! :)
i like it… nice post…!!!!!
Hi Angela,
Thanks for the inspiration! I had some lightly steemed beets, and no avocado and had been munching on celery already so I blended two beets with one apple, lime juice, a rich tablespoon tahini , ginger root and water. It was delicious! No extra sweetener needed.
nice share, hmmmm………… I want to try it.
How many days do you drink this?
I AM NOT A BEET FAN AND THIS WAS DELICIOUS. i added an orange and used mixed frozen berries instead of ice, but other than that, followed the recipe. the avocado makes it so creamy. you can taste a hint of beet, but the other flavors balance it well. if you’re hesitant to try because of the beets… try it!
So happy to hear this was a hit, Kayla! (Despite the beet aversion, even!)
This is incredible! I just made it and it is so delicious! Thank you for the recipe. I always made a beet juice, but never tried a beets smoothie. Didn’t have avocado and instead added half pear! IT worked!! Thank you again.
Hey Katya, While my preference is rice crisp in these bars, I do think puffed rice may work. You just might have to use a bit less than called for. Happy baking!
Looking forward to trying these 2. I love beets.
I made this and my husband loved it! I put the whole beet in (it was small/medium), and added almond milk to it. Super delicious!
