Check out this picture I found on the website last night! At the finish line…I actually sprinted and caught up to these three people.
Note:
I wasn’t anywhere near this pack!
HARD CORE!!!!!!!!!
By the way, that wasn’t all the food I had yesterday!
There was more…
I ended up eating the rest of this Optimum bar!
It was just kinda sitting there….so…
In my belly it went! Nothing was safe near me yesterday!
I didn’t care for it much. Actually, I scraped off the icing and ate it plain. It was better without it. :) I gobbled that up and was still hungry before bed, so I had a few handfuls of cereal. I couldn’t believe it but when I went to bed I was still hunrgy! But, then I passed out from exhaustion. Eric was like, ‘I’m super hungry too’…lol…like I said, the spectator sport is HARD work! He slept for 4 hours yesterday afternoon! bahaha.
I can’t believe it, but I’m barely, barely sore at all today! This is absolutely mind-blowing to me because I am typically always sore after long runs, and I was very sore after my 10k race last month. I think my pre-and post race nutrition plus immediate and continued stretching throughout the day yesterday REALLY helped! I think I stretched about 5 times yesterday and then a long one in bed before I hit the hay. :) Stretching rocks!!!
This morning, I wanted to celebrate my race with a fun new Green Monster, I’d like to call
Chocolate Peanut Butter Banana Bomb Green Monster
Ingredients:
- 1/2 serving PC extra-firm organic tofu
- 3 cups steamed spinach (I made a big batch yesterday and put it in a glass pyrex dish)
- 1 T PC Just Peanuts Peanut Butter

- 1/2 scoop Amazing Grass Chocolate infusion powder
- 1 cup PC low-fat soy milk
- 1/3 cup water
- 3 cubes ice
- 1/2 T coconut oil
- 1 T chia seeds
- 1 small banana
Wow was this GM ever amazing!!! I felt like I was sipping on the smoothest, most luxurious drink ever. It was creamy, creamy, creamy! It actually made more than in the glass below and I quickly chugged it back straight out of the blender. ;)
I’ve got a crazy busy day of orders today (about 6!) so I need to get cracking in the kitchen.
Thank you to everyone for your congrats on my race!!! You all rock!
Have a great day!
I have learned how to view food as fuel and that there is SUCH a link between eating crappy and feeling crappy. Not exactly rocket science, but somehow I’m learning to sift through the myriad of “health” advice out there.
I had to delurk for this giveaway! I love your blog because I can tell you are very passionate about what you do! Thank you for all that you do.
I just read about the benefits pumpkin seeds…they can boost your metabolism, improve your mood, strengthen bones and so much more!
I recently read that fish consumption once a week greatly decreases your risks for Alzheimer’s Disease. I have watched several grandparents suffer with this so I found that to be a nice bit of info! I would LOVE the Amazing Grass
I’ve learned that you can eat avocado pits! You can blend them into smoothies and they’re apparently VERY good for you. Super high in fiber and contain something that’s a cancer fighter. I’ve got a VitaMix blender on order and as soon as it arrives I’m adding an avocado pit to my first green monster!
I’ve been learning about our food supply…where it comes from, what’s in it, who owns it. It’s actually caused my fiance and me to overhaul our diet beyond just avoiding junk food.
If you’re interested, the movie Food, Inc or the book Omnivore’s Dilemma might be useful?
Oh, I wish I had a camera! If I did I would totally enter my green monster story!
Thanks for the opportunity to enter this contest, Angela!
you gotta eat to lose, especially if you’re running 20 miles a week and eating only minimum calories. ^^
I’ve been learning to strengthen my back and stretch my hip flexors in order to be a runner. I even learned that you should do some exercises to strengthen your FEET!!! Love Green monsters!
I’ve learned about the benefits of chia seeds!! I’ve been adding them to my morning green monster!
I’ve learned to mix up my exercise routine so I don’t do the same thing over and over and get an overuse injury.
I have learned that fueling after a workout is key to feeling good afterwards. I used to wait to eat after long runs, and would feel exhausted all day. Just a smoothie afterwards makes all the difference.
something I’ve learned recently…a calorie is not a calorie is not a calorie. Now that I’m really focusing on properly fueling my body, I’m realizing that whole foods, fruits and veggies, make all the difference in how my body functions. I’m able to run longer, stronger and harder than every before. Good stuff.
My green monster submission should be in your inbox!!
I’ve learned about the importance of x-training!
I’ve learned how easy it is to incorporate fruits & vegetables throughout the day…I just started making the spinach/wheat grass smoothies about 2 weeks ago. I make one every morning now and also add 3-4 different fruits/veg. (mango, pineapple, banana, celery, blueberries, etc.), ground flax seed, spirulina, almond milk and almond butter. It makes me feel great, both physically and mentally knowing that I’ve already had 4-5 servings of fruits/veg before 8am!
I learned to try and eat one raw meal or green monster a day will improve my skin. I don;t have bad skin to begin with but it TRULY makes a difference!
Oh darn, Just saw the giveaway ended at noon-BAH! Oh well, I still sent you a GM recipe :) And just for kicks, I have found that adding a veggie to each meal (including breakfast!) has really helped me feel super healthy!
