The Larabar Experiment: Attemp #2
My second attempt at creating a homemade Larabar was even tastier than the first.
I don’t know about you, but I love cookie dough. When I bake cookies, I’m not sure whether more of it goes in my mouth or on the baking sheet. :D
So, I was naturally delighted when I found Camilla’s recipe for the Chocolate Chip Cookie Dough Larabar.
Ingredients:
1/3 cup roughly chopped dates
1/2 cup raw cashews
1 Tablespoon semi-sweet chocolate (She recommends 1/2 oz. but I just used a Tbsp. as I wasn’t sure of the measurement)
Pinch of cinnamon
1/2 Teaspoon Pure Vanilla Extract

You can get as creative as you want with these shapes! I thought my Christmas cookie cutters were a great ‘seasonal’ modification. :D

Makes 2-3 bars depending on the size you want them. The Chocolate Chip Cookie Larabars have approx 210 kcal per bar if you make three out of this recipe.

I found your blog last week and I’m HOOKED! It’s great to see a normal gal who’s got herself looking so great. It gives me hope that I can drop my extra 10 pounds without killing myself over it.
One question – how does alcohol/eating out factor into your diet? Do you avoid drinking or going to restaurants, or do you cut back on other stuff when you do?

I love this recipe! I make it all the time. I stir in the chocolate chips at the end though because I like big chunks of chocolate! :)

I made a couple substitutions because I didn’t have cashews in the house, but YUMMY doesn’t even begin to describe this!!! Thank you!! They were the perfect consistency! (BTW – I tripled the batch so I could take them to share with friends.)
I know this is an old post, but I wanted to let you know that I LOVE this recipe. I probably make it at least once a month. I gushed about it to a coworker, who was bummed that she couldn’t make it for her kids due to a nut allergy. So I created a nut-free version using sunflower seeds and tahini. It has a different taste, but is pretty good in it’s own right. I thought you’d appreciate the use of the ice cube tray to create the “bites”. Thanks again for the inspiration!

Hi, Angela. I just bought the Vega Sport “Nutritional Shake” in Chocolate and the “Performance Protein” in Berry. They are absolutely disgusting and I gag trying to drink them in Silk or Water (the recommended.) Do you have any suggestions of your recipes I could use these two products? Perferably I could bake them into something sweet, as they are veeeeery chalky textured/flavored. Please respond! I need your help! And thank you so much for this website, I love your recipes!
Have you tried adding a bit to smoothies? Try adding just a tbsp or two and see how that goes. :)
