
I don’t know about you, but I don’t think there is a better tasting combination than peanut butter and jam. The flavours just have a way of complimenting each other so well.
The other day, when I was looking to make an indulgent yet healthy breakfast treat, I knew that I had to have these ingredients in my morning snack.

Vegan Peanut Butter and Jam Glo Bites
Ingredients:
Crust
-
1/4 cup Earth Balance (vegan margarine)
-
1/4 cup sucanat (brown sugar probably works)
-
1 cup spelt flour
-
1/4 c milled flax
-
1 t cinnamon
Filling:
-
½ t baking powder
-
1 t vanilla
-
¼ cup Whole Wheat Pastry Flour
-
¼ cup cane sugar
-
½ cup PB
-
½ cup almond milk
-
Jam
-
Dark Chocolate chips (optional)
Directions: Mix crust together with a hand blender in a medium sized bowl. Place approx 1 tsp of crust dough into pre-greased mini muffin tin (or use 1 T of crust in a regular muffin tin). Press down to create a mini crust making sure the crust comes up on the sides a bit. Add filling, filling the tin about half only, and top with jam and chocolate or carob chips. Bake at 350F for 15 minutes. Makes 24 mini cups.
Note. You can also experiment by putting the jam on top of the crust but before the filling layer. I would suggest not mixing the jam into the filling though because the taste sort of gets lost in all of the other ingredients.

The crust turned out absolutely delicious. I think this is one of the best tasting crusts I have ever made!
In the photo above, I used a mini tart pan. I think this was my favourite size, although the mini ones were super cute.
These tasted out of this world delicious!!! I am seriously addicted. They make such a fun breakfast treat on days when you just aren’t feeling the regular stuff or when you want to make something special on the weekend. When they bake in the oven the whole house smells just wonderful too! Just delicious.

Okay, so I made these PB&J Glo bites like I said I was gonna do today and boy were they yummy!!!!

Happy Thursday! I’m currently reading “Born To Run” by Christopher McDougall, it’s about the Tarahumara (or Raramuri, which means “the running people”) and they fully believe in Chia Seeds (as well as ultramarathon running). Before your blog and this book I hadn’t really heard or known much about Chia Seeds. The Tarahumara brew them into a drink and consume this drink all the time, giving them immense stamina and endurance! I’m super excited to try Chia seeds so I hope I get picked! I think those would make a great dessert too! When my husband and I were dating, I saw him mix just peanut butter and jam and eat it with a spoon. I thought it was crazy at first, now I do it too! PB&J is such a good combo, so is PB& dark chocolate!!

I made these yesterday using wholewheat flour, and subbing peanut butter for Earth Balance. BEST CRUST I HAVE EVER EATEN! :D Something went wrong with my filling though…ooops.

these look yum! Think I can replace the spelt flour with whole wheat pastry flour or brown rice flour?
i just made these and they are delicious!! i had to add a little more earth balance to get the crust to stick together a bit more. How do you get them out the muffin tin? i used a 12 cup muffin tin and i sprayed it with oil hoping this would help me get them out…..but the crust did stick to the tin and didn’t come out clean. how could one over come this? would silicone cups help?

My favorite protein bar is an amazing peanut butter and jam flavour so I know I will love these. And the mini size is perfect for a quick snack on a road trip too!
