Good morning!
Yesterday, I played the role of an Undercover Blogger as I spent all of my ‘blog time’ working behind the scenes answering emails and I did not have a chance to post. I am sure you all appreciate a break from my ramblings now and then! I know I do. I am about 90% caught up on my emails now, so I will ride this high as long as I can! I also updated the Green Monster Movement with wonderful reader recipes.
Some food highlights of yesterday…
My healthy spelt pancakes for one that I doubled for Eric and I.
Mmmmmmmm!
After digesting, Eric and I headed out for a very humid Brick workout! I skipped my Brick on Friday so I decided to make up for it Sunday morning.
The bike leg:
- Distance: 5.55 miles
- Time: 31:44 mins
- Avg Pace: 5:43 min/mile
It was a great bike ride. We did mile 2 on the trail and I took the lead and did my fastest trail ride yet! I was going fast over the rocks. It was exhilarating!
Eric didn’t come for the run portion because his knee started bothering him a bit. My transition was a quick one…just over 1 minute and I was up and running!
The run leg:
- Distance: 2 miles (mile 1 = 8:27; Mile 2 = 8:14)
- Time: 16:41 mins
- Avg Pace: 8:20 min/mile
- Max pace: 6:18 min/mile (sprinting last 300 metres)
This run was super challenging! My legs were tired and I pushed myself to maintain under an 8:30 min/mile pace. I kept saying, ‘Feed The Warrior!’ and before I knew it, I was turning back after 1 mile and just had to make it home. I love out and back runs so much because the run ‘back’ always feels easier!
When I got home I needed to Feed The Warrior…this time with food!
Lunch was a huge, delicious mixed baby green salad with chickpeas, green onion, tomato, etc.
With a generous amount of my Better than Balsamic salad dressing!
It’s official: Green onions are my new favourite thing to top a salad with. It gives the salad so much flavour!

Afternoon snacks..
Chickpeas + Cheeze sauce from the other night + EVOO + vinegar + pepper:
We went over to my Aunt and Uncles for dinner and had such a nice visit! I didn’t take pictures of dinner as I was OFF DUTY! I forgot how nice it was to sit down to a meal and not whip out the camera!
After spending more time on the laptop, Eric found me like this around 11:30pm…
Good times.
Breakfast was an ‘open-faced’ bowl of Banana Soft Serve Vegan Overnight Oats…
I made Cherry Bomb Banana Soft Serve using 1 frozen banana and 6 pitted cherries.
The layers:
- Base layer = Vegan overnight oats
- Middle Layer = Cherry Bomb Banana Soft Serve
- Toppings = Unsweetened coconut, Cacao nibs, and a cherry on top!

I do take pictures if it’s a new recipe. I usually don’t document everything I eat – just not my style. If I’m out at a restaurant and the presentation of the food is really unique, I’ll snap a picture. Your cherry banana soft serve looks so refreshing! :)
I love food photography! I am not much of a photographer but I love browsing pictures of food (probably because I love food so much). I take pictures of food when A) I am impressed with the presentation at a restaraunt, B) the spread looks beautiful at a party, or C) when I make something new or am going to share pictures with friends. I would find it exhausting to photograph everything, no wonder you need an off-duty day! I am glad you do though because I enjoy them a lot!
I am so into green onions as well these days, maybe I’ll try sprouting my own as well. Congrats on powering through your admin stuff yesterday. Man before you know it you are going to have to hire a general manager!
Very rarely do I take pictures of what I eat. Sometimes I blog about it but its very rare. I don’t think I could ever remember to take a picture of everything!
Aren’t green onions the best? So easy to cut up, too!
I just started blogging, so I haven’t been brave enough to whip out the camera at things like kid’s birthday parties, etc. I’ve been taking pictures of my food for a couple of years though, I have an album on Facebook dedicated to my food pics from Italy ;) There are definitely certain people who understand blogging that I feel more comfortable taking pictures of food around.
Gosh, your “cherry bomb” breakfast is making me want to lick my computer monitor. :D
I sometimes photograph my food, but usually only for set periods of time — like I’ll have a one week challenge to myself to photograph and blog everything I eat. But other than that I only take pictures if I make something interesting or am trying out a new product/recipe and I know I want to blog about it.
Food photos make me so happy! Seriously- if I’m in a bad mood I check out new healthy recipies online — ohh yeah I’m cool like that : )

we went to dinner the other night for Jason’s birthday, I didn’t bring my big Nikon but I snuck photos from my cell phone. FIRST TIME in a restaurant ! :) I guess I’m officially a blogger now…
I take occasional photos of what I eat, I forget a lot!
Usually I take pictures but I’m far too lazy to upload them all because I find it a hassle at times to resize everything.
Green onions are also one of my favorites! I love to cut the tops off and put those in my salad and then dip the white parts in hummus as a snack.
And your pancake photo with the bananas in between each one is sensationally perfect! I love it!

I do take photos of what I eat, but only when I’m alone or around my bf. People would look at me like crazy, and I’m not ready to share that I have a blog :)
I think that my family would enjoy me taknig a night off here and there from photoblogging lol.
From your previous post, that is great on Eric to be such a great supporter! Brownie points indeed. After having been away working for 10 days and our upcoming anniversary, I was planning in buying my hubby a router too lol.

As for the camera situation, I always have it with me in case of anything and I usually DO take pictures of what I eat. I want to remember especially if I was to replicate it! :)

I take pictures of my main meals.. I pretty much NEVER take pictures at restaurants..I just like to enjoy it when I’m there and write about it later :)
I’m impressed that only six cherries made the banana soft serve that pink! I have been hoarding my cherries with the hopes of freezing them. Don’t think they will last me very long though!
I am new to food blogging, so I am still getting used to taking photos of everything I eat. I still find it embarrassing when I’m out in public. When I try to explain why (food blog), I get weird looks. Some people just don’t get it!

I can say with a certain level of conviction that I wouldn’t last two days as a food blogger – I just don’t have the patience! I can barely keep myself away from the food long enough to get it from the pot to the plate, let alone pause (multiple times?!) to snap photos. Kudos to you and all of your kind! :)
I started blogging a month ago and I’m still trying to remember to take my camera out each meal. Once I start ignoring all the strange looks I get, it’s enjoyable, but I definitely don’t feel bad if I miss a picture. And thanks for putting up my GM on the website :)!
I take pictures most of the time – sometimes I don’t plan to but I see an amazing shot so I run down for the camera :-p
But I stopped posting them regularly because my Mum got tired of the food photos! A lot of them of them go on Facebook. Some just live in my computer photo album, languishing for attention… :-p
Though I must admit – the one thing I might never post a photo of is a Green Monster. I love them, but I can’t pretend they look pretty. I was thinking about that this morning – “hmmm, what are my kids someday (and their friends) going to think about these green drinks?”
Most of the time I do take pictures of everything I eat, even at family gatherings. But when I’m out with my friends I usually don’t. And some days, like yesterday, I just took a breather and didn’t take any pictures. I almost felt guilty?! But it was also kind of refresing.
