It’s Friday, right? :) Please?
The Good thing about working on the weekend:
- I don’t feel overwhelmed Monday morning.
The Bad thing about working on the weekend:
- It feels like it should be Friday.
Yesterday, Eric and I both were buzzing around getting all sorts of things accomplished. I don’t know what got into us, but we were on FIYA. Don’t you love days like that? Eric did a ton of housework, laundry, manly things in the basement, and Glo Bar labeling. ;)
I love when he gets in his cleaning-spree moods! I wish I could bottle it…
I was all business baking in the kitchen. I worked on the GF + Raw Glo Bar (getting there!) and I also made 240 Adore Glo Bars.

After baking for 10 hours, I had to COOK!
There is nothing worse than having to cook dinner after a day of physical labour. The good thing about living in the sticks is that no restaurants will deliver to you. :mrgreen: I did promise Eric the In A Jiffy Spelt Veggie Burgers! It is a good thing they are ready in a Jiffy…

Before going into the oven…
I processed too long and the burgers got very smooth. I prefer them chunky! Whoops.
I doubled the batch and made large burgers so I cranked up the heat to 400F and cooked 20 minutes on each side until golden brown.
I decided I wanted a mix of delightful toppings so I made this fun mix of salsa, avocado, and roasted red pepper hummus:

Love these burgers! I made 15 patties. Eric and I will enjoy them for lunches this week and I also froze some too.
It was a fabulous meal. I may or may not have snuck a third burger as I was putting them away. They are just so addictive.
This morning I felt like a zombie…
I awoke at 6:30am, but I could have sworn it was more like 2am. I was NOT glowing, my friends. Not glowing, no sir-eee.
I decided there was only one way to remedy this situation!

Monday Morning Monster:
- 1 cup Almond Milk
- 3 big handfuls organic spinach
- 1 tsp raw maca powder
- 1 scoop Amazing Grass Wheatgrass powder
- 1 tablespoon chia flour (ground chia seeds)
- 1 frozen banana

Isn’t this measuring cup cute? I have seen oats in measuring cups on a few blogs and I thought a GM would look cute in one!
Time to get crack-a-lackin’. Eric and I are swimming laps tonight- I’m already excited! :) Two months ago, if you told me that I would be swimming laps with my husband on a regular basis (and training for a Try-a-tri) I would have laughed in your face!
Today’s question- Have you done something or accomplished a goal that really surprised yourself and proved your doubts wrong? Are there any doubts you still haven’t proved wrong but want to?
I used to see people running half marathons and I thought to myself that I could never complete one myself. I just didn’t think I had it in me. I really surprised myself when I completed my first two last year and surpassed both of my time goals. I also used to say that I would never do a triathlon. To be honest, it still scares me, but here I am taking small steps each day to hopefully prove myself wrong. You don’t know until you try, right? ;)
Other doubts of mine that I have not proved wrong are running a marathon. I just don’t know if my injury-prone body could handle it!

Holy Glo Bars! You’ve been busy! I love the “I was not glowing” — too cute :)
I think running a 1/2 marathon with 5 weeks of training will be a success. After 3 long runs, I’m feeling confident, and I sure wasn’t 3 weeks ago!
I’m not sure why I haven’t tried your burger recipe yet, but I’ve decided I have to add it into my quick budget recipe list. I’ve been on a tuna burger spree these days, so this will be good to change it up.
Also, as far as doubts are concerned, I applied to go back to school to be a Registered Dietitian even though I didn’t have the money, wasn’t sure I’d be healthy enough, don’t have a computer at home, etc, etc, etc. Everyone thought I was crazy, and I was full of what-am-I-THINKING? doubts but I got in, got financial aid, and I’m going to school!
So yes, love bloggers like yourself that remind us we CAN do it.
I can relate to those thoughts a lot! Good for you!

Monday’s are always so hard when you don’t feel like you are glowing! But as you did, the green man will always help change the path of your day. :)
Accomplishing a surprising goal…I have two actually.
1. Starting my new business as a wellness coach and completing the wellness coach training! I just never thought I had it in me to leave my job, do something all on my own and be so IN LOVE WITH IT!
2. I’m currently doing a fitness program called Insanity. It is the hardest thing I’ve ever done and every day my goal is to just finish the workout. But I am surprised at how much strength I really have inside there! I just completed the first 14 days of it and feel amazing!
Wow, looks like a lot of work! It’s very inspiring, though :-) I work on the weekends too (waitressing), so I understand the feeling…
I’m really proud that I’ve been able to work up to running 5+ km on the treadmill over the past few years! But I still have so much trouble running outside, which is why I haven’t signed up for a race yet. This summer I want to work up to running 5 km outside and then sign up for a race, and prove my doubts wrong! :D
What a productive weekend..those are awesome when they happen!
I’m a slowly starting to “try” things out of my comfort zone and it feels amazing to take one step at a time to accomplish something that seems like a HUGE mountain.
I never thought I could run a race longer than 10k. I’ve now completed one 10 miler, one half marathon, and one marathon. And I’m running my second half on Saturday! I have totally shattered all the notions I used to have about what I can and cannot do. Even this time a year ago, I would NEVER have believed that I would think of an 8 mile run as just a fun evening jog!
Now I just need to get faster… I would love to be able to qualify for Boston, but I’m not convinced that’s something I’ll ever be able to do. However, I’ve learned that nothing is impossible!
Swimming was my accomplishment! I was so nervous I wouldn’t be able to do it. But I did. AND my husband and I actually took lessons together! We took about 6 in all I think and it was so worth it to have someone look at your form and tweak it for you. Have fun!

Totally unrelated to this blog, but once seeing the pics of all your goods in the food processor, i’ve come to the conclusion that YOU NEED a vita-mixer! I finally broke down last week at Costco & got one, and am wishing i would of got one 2 years ago when I first saw them! It’s cut 1/2 my kitchen appliances in half along w/time in half! FOR REALS tell Eric YOU NEED one, not want one…but NEED ONE! what other appliance can make hot soup in 7 minutes & the same machine make mouth watering smoothies? :)

Love the Green Monster in a measuring cup. I did this just yesterday. I had it sitting out from making my Green Monster and thought “Why make another dish I have to wash, use the measuring cup that is already dirty”. Worked perfect since I do not have a dish washer.
Wow! Productivity at its finest!! The burgers look delicious.
On your doubts about completing a marathon….. I think that you have proven that you can accomplish anything that you set your mind to!

I had those delicious banana splitz VOO this AM and they filled me up, even though I’m under the weather today due to horrible allergies and a bad head cold. Ugh!
All of your blogs about triathlons are giving me the itch to get back in again. Haven’t done a triathlon since 2008 where I did my first ocean swim and my first Olympic distance tri. Woohoo!
I have a question, if your glo-bakery shows sold out on items, can we still order and just be a back order type situation?
I LOVE BEING PRODUCTIVE!!! I feel so much better at the end of the day knowing that a lot is off of my plate and not just hanging around waiting to be completed!! :o)
