Gina’s Choco-Cado Pudding
![IMG_1488 IMG_1488](/wp-content/uploads/2010/02/IMG_1488_thumb.jpg)
I have wanted to make an avocado-based pudding for a while now (thanks for the reminders in yesterday’s discussion!!!). I asked Gina if she had a recipe that I could use and she provided me with her Choco-Cado Pudding recipe. It was super easy to whip up and it tastes like a dream!! I made a few small modifications that are noted beside her recipe.
[Recipe Source: The Fitnessista]
Ingredients:
- 1/4 cup almond butter
- 1/2 cup agave (dark) (I used 1/4 cup)
- 1/2 cup water (I forgot to add the water, but I loved how thick it was!)
- 1/8 cup cocoa powder
- small pinch sea salt
- 1 medium avocado
- 1 tablespoon coconut oil (I used coconut butter)
- 1 teaspoon vanilla
Directions: Throw all ingredients into a food processor and process until smooth.
It takes less than 2-3 minutes to prepare!

I asked Gina to marry me on Twitter after I made this. That pretty much sums it up!
I have never in my life tasted a pudding so delicious. Gahhhhhhhhhhh.
And no, you cannot taste the avocado at all.

Avocados are also rich in Vitamin K, Folic Acid, Vitamin B6, Potassium, Oleic acid, and carotenoids!

Wow those photos are amazing! I need to go get some avocados to make this ASAP.
Oh god, I cannot wait to try that pudding!
You read my mind! I have a bunch of avocados that are heading towards pudding-land today! :D
I love how you can’t taste the avocados AT ALL!
That looks delicious! I definitely need to try that, especially since it’s dairy free.
I consider my blog, Naturally Frugal a healthy living blog, but it’s up to you if you think it’s worth to put up ;) However, I have no idea how to embed a link so if you could help us out that would be great!
of course email away!
see here for how to embed a link: I just made a demo in GMAIL: http://images.ohsheglows.com/wp-content/uploads/2010/02/Untitled3.jpg
I had seen avocado based puddings before but was always reluctant to try them. This has convinced me – it looks phenomenal!!!
I do love a good choco-avocado pudding! This one looks fabulous (love that you left out the water–thick IS better!). Quick question re: embedded links in emails: do you do it the same way as in a comment (ie, start with html code, a= href, etc)?
I just made a demo in GMAIL: http://images.ohsheglows.com/wp-content/uploads/2010/02/Untitled3.jpg :)
Mmmmmmmmmmm! I am most definitely making this tonight!
What is the difference between coconut oil and coconut butter?
coconut butter has the flesh of the coconut mixed in :) Its very thick and creamy.
where do you get your coconut butter. I can only find coconut oil…
That pudding looks awesome, i tried making something liek that before, and it tasted AWFUL. might need to try this one!
I love creamy desserts. I love avocados. I love chocolate. This pudding looks like heaven on a spoon!
Yummm! Looks FANTASTIC!!!
I just emailed you :)

Sent you an email, thanks.
I used to make avocado pudding all the time and somehow forgot about it, but I remembered early this week while grocery shopping. Now I’m just waiting for the avocado to ripen.
Isn’t coconut butter another name for coconut oil? If not, what kind do you use?
coconut butter has the flesh of the coconut mixed in Its very thick and creamy. The kind I have now is by Artisana.
Ohhh, thanks!
You weren’t kidding with your warning!!! This looks super rich and delicious.
I agree that this recipe is enough for maybe one person. Maybe. :)
I think I need to get over my fear of avocado and try this. It looks delicious!
I believe this is almost the exact recipe from the March/April issue of the Vegetarian Times. Great magazine :D
hey kristina,
there are many versions of chocolate avocado pudding- it’s a very common treat in the raw food world and doesn’t have many ingredients.
i promise that this particular version is a gina original :)
