Hey guys!
Hope you are having a fabulous Thursday. I am trucking along and trying not to get too stressed out that I am really behind in my preparation for Saturday’s market. I had a few set backs this morning! I’m really hoping the clock ticks a bit slower from now until Saturday morning.
I thought I would show you what wonderful goodies arrived in this week’s CSA! We have a lot of SCARFING to do!
Eric and I both noticed that the volume of our half share has increased this week! Must be getting into the plentiful season!
We agreed it is impossible not to have a super clean diet when you have a CSA share. So many veggies to eat! Eric also said that he has noticed he has a lot more energy since eating less processed foods and more veggies. I think he is slowly discovering that good wholesome foods = happier Eric! I think when people make changes to their diet, they really have to experience the benefits first hand before they will believe it…
Apples, cucumber, green onions, garlic scapes (mhauhuaa), lettuce, fresh basil, etc.

Also, can you believe I have never had fresh basil at home before?
Am I supposed to plant this? I do not have a green thumb, although I do try! Last summer I planted herbs (from the seeds) and they didn’t grow. Maybe I just did it wrong?
The basil smells SO good! Eric and I were drooling in the car over it.
I knew exactly what I wanted for lunch today….
A toasted sandwich with fresh basil, tomatoes, cucumbers, hummus, avocado, EVOO, pepper, and sea salt!
This was INCREDIBLE!!!! I almost died when I tasted how good fresh basil is on a sandwich!!!
Seriously, how did I not know this?

CSA is such a good idea! I wonder if there is even something like that in Calgary?
For the herb (or any other kind of veggie, herb, lettuce of some sort), you can plant it, or put it in water, or just leave it. That stuff will last forever (or until you eat it all) I swear! At the market I work at, it is one of the most commonly asked questions.
Yum! That produce looks awesome – I need to look into getting some kind of CSA share! I’m hoping (and praying, and crossing all fingers and toes) that my fiance will begin to like eating REAL foods after we get married. Did it take Eric a while to get used to it?
You should put the fresh basil leaves in a GM! It adds a great kick…so does parsley and even cilantro!

Fresh basil is amazing! I throw it on everything, salads, pasta (obviously), sandwiches, garnish soups, stirfries, EVERYTHING!
My favorite thing to do with basil is make brushetta by chopping up tomatoes, a few olives, loads of basil, and garlic (optional, I am not always in the mood for raw garlic but just a tad goes a long way), mix in a drizzle of quality olive oil, salt and pepper. I eat it on salad in place of dressing but it is delicious as a topper for bread or crackers (or rice, quinoa, pasta…).
i’ve never had fresh basil ever before today either!!! i got some to put it in the blender for a raw soup (‘garden vegetable’). SO good! i love fresh herbs!
and you’re making me crave organic strawberries… i think i’m going to have to get some tomorrow from whole foods. you make me want to join the csa!
heidi swanson has a cookbook called Super Natural Cooking – she has a recipe in it for your beloved scapes…it’s a garlic scape soup and it looks AMAZING!!!
That looks like it may be Russian Kale… or maybe Beet Greens? Or mustard greens.
I’m not too good with identitfying them, I just eat ’em!

Hi,
If you like basil try adding some along with lemon to couscous or quinoa. It gives it a light springy taste and is really good! Sometimes I do black beans, quionoa, lemon, basil and add other herbs around the house.

I love how small good organic strawberries are. They are just perfect bite sized.
