I simply could not wait to post about my most recent creation in the kitchen.
I could probably live off of raw cookie dough if I had to. It is one of my most guilty pleasures. The only problem as we all know is that it is far from healthy.
Could I really create raw chocolate chip cookies that were delicious yet healthy too? I sought to find out!
Of course I researched a few raw chocolate chip cookie recipes online, and then I went to experiment!
Raw Chocolate Chip Cookies

Ingredients:
Cookie dough:
- 1 3/4 cups ground raw cashews
- 3/4 cup ground raw oats
- 1/4 cup Agave Nectar
- 2 teaspoon vanilla extract
- 1/4 cup coconut oil
Raw chocolate chips:
- 2 Tablespoon coconut oil
- 1/2 cup carob powder
- 1/2 cup cocoa powder
- 4 T agave nectar (or maple syrup probably works)
- 2 teaspoon vanilla
Directions:
Dough: Grind up raw cashews and raw oats in a food processor or blender. Place all cookie dough ingredients into a large bowl and mix by hand or with a spoon. OR simply place all ingredients in the processor and blend (why didn’t I do this!? lol). Mix until a dough forms and you can make a large ball. Refrigerate dough while you make the chocolate chips.
Chips: Mix all chocolate chip ingredients together in a medium sized bowl. Roll the dough out onto parchment paper and place in the freezer for about 30 minutes. Optional: Half way through at 15 mins., flip the chocolate sheet over for even freezing.
When chocolate is frozen, cut into chips. This is the fun part! I used a pastry slicer and it was SO fun making the chips.
Mix chips into dough and have fun!
Place in fridge (if you have any left that is) to harden for about 30 mins. They get real hard! Make sure to refrigerate them on parchment paper or they will stick to the plate.
Notes: If you don’t have carob powder you can substitute it for cocoa powder just as easily. Alternatively, you may be able to sub the agave nectar for maple syrup or honey. If you try this and it turns out let me know!
Also note, I cut the recipe in half to make a smaller batch. Don’t be too worried about getting exact measurements here. They will still turn out, promise.
The best part is the total prep time (not including freezing and refrigerating) was 10 minutes! So quick and easy. These would be amazing to whip up before guests come over or for a quick birthday gift.
I adapted this recipe found here. I used much less coconut oil in both mixtures, substituted raw oats for groats, and I added vanilla and agave in the chocolate chips.

Ideas:
1) Roll out dough mixture and use cookie cutters.
2) Roll dough mixture into balls and then roll in coconut.
3) Add other mix-ins instead of chocolate chips, like raisins or chopped up dates.
The taste?
These raw chocolate chip cookies BLEW MY MIND! Seriously I was NOT expecting this. I could not stop eating this stuff. It was pure heavenly bliss with some great health benefits to boot! :)
yeah these looooooked dank so I just hooked some up…I switched the cashews with almonds and oats with sunflower seeds..added a bannana and some mushrooms…your right the chocolate issssss pppppphhhhhhuuuunnnnnnnnn….
I made these last night for my Christmas party but with maple syrup and carob chips. Juts out of the fridge they stay really sold but melt a bit at room temp but overall they are fantastic!!!
I am so looking forward to making these cookies this sunday at the christmas party at my sister’s, they look sooo good. I recently found out how many delicious recipies for raw food there are, I am trying a new one every day. So, if anyone of you have any recipe for raw food you feel I should try, cookie or normal food recipe, I would be very happy ;)
Thank you! My picky 3 yr old loves them! I used agave in the choc chips but used honey in the dough. I also left the oats a little chunky for texture. So great! So Delicious! My new fav!

do you soak the raw oats and cashews?
I am making these cookies as we speak. I am actually waiting for the “Chocolate chips” to freeze. I made a slight variation by using home made date paste in the chocolate chip mixture. I am so excited about how they are going to turn out. I was so excited when I found this recipe that even at 1:41 in the morning I had to make them at once because I knew I had all the ingrediants. I do not have any cookie cutters and I love raw coconut so I plan to take you idea and roll them in to balls covered in coconut.
I wanted to update you. These cookies were the BEST raw chocolate chip cookies I have ever had! I ate 2 before they even made it into the fridge to set. I did have with coconut and half without. And you are right, these taste just like REAL chocolate chip cookies….in fact, Even better! I am going to make double batch next time. Yummy, yummy, yummy!

I ended up using store bought vegan carob chips instead of your recipe, which I think was a big mistake. Especially since I have all the ingredients for the raw chips–i just hadn’t realized. I don’t like the chips I bought at all–taste too processed.
The dough was really good though! maybe i tad too much vanilla. I used 1/2 agave 1/2 maple and it was still yummy. Thanks for sharing the recipe!
I have a question about agave nectar use: I have recently read that agave nectar is not something found readily in nature, that it in fact has to go through serious processing much like HFCS and the resultant syrup is not much different from HFCS. What are your thoughts?
WOWOWOWOW!!! Totally amazing. I made these the day after I made “regular” chocolate chip cookies, and discovered that I like these even better!!! I used ground sprouted buckwheat instead of oats. Thank you SO much for all of the pictures and the recipe. Wow. <3

I can’t possibly describe how delicious these are. I have made them twice. The last time I made them, I ate the entire bag within a week–and I was proud of myself for showing such restraint…truly I could have eaten them all within a day! I leave out the grouts and use all cashews. TRY THESE. They are U-N-B-E-L-I-E-V-A-B-L-E.
i didn’t have cashews so i used 1 1/4 cup of almonds, 1/4 cup of pecans, and 1/4 cup of pumpkin seeds and they turned out amazingggg :)
I made these on the weekend and added some unsweetened coconut flakes and milled flax to the mix. YUM!!!

these are amazing! my boyfriend is a raw vegan, and i’m trying to get there, but i’ve been dying without chocolate. these are the perfect fix. i substituted honey for the agave (cause i’ve heard some awful stuff about the way agave is processed) and they were delicious. thanks for sharing! totally love the heart shape, too :)
