Raw Chocolate Chip Cookies

I simply could not wait to post about my most recent creation in the kitchen.

I could probably live off of raw cookie dough if I had to. It is one of my most guilty pleasures. The only problem as we all know is that it is far from healthy.

Could I really create raw chocolate chip cookies that were delicious yet healthy too? I sought to find out!

Of course I researched a few raw chocolate chip cookie recipes online, and then I went to experiment!

Raw Chocolate Chip Cookies

Ingredients:

Cookie dough:

  • 1 3/4 cups ground raw cashews
  • 3/4 cup ground raw oats
  • 1/4 cup Agave Nectar
  • 2 teaspoon vanilla extract
  • 1/4 cup coconut oil

Raw chocolate chips:

  • 2 Tablespoon coconut oil
  • 1/2 cup carob powder
  • 1/2 cup cocoa powder
  • 4 T agave nectar (or maple syrup probably works)
  • 2 teaspoon vanilla

Directions:

Dough: Grind up raw cashews and raw oats in a food processor or blender. Place all cookie dough ingredients into a large bowl and mix by hand or with a spoon. OR simply place all ingredients in the processor and blend (why didn’t I do this!? lol). Mix until a dough forms and you can make a large ball. Refrigerate dough while you make the chocolate chips.

Chips: Mix all chocolate chip ingredients together in a medium sized bowl. Roll the dough out onto parchment paper and place in the freezer for about 30 minutes. Optional: Half way through at 15 mins., flip the chocolate sheet over for even freezing.

When chocolate is frozen, cut into chips. This is the fun part! I used a pastry slicer and it was SO fun making the chips.

Mix chips into dough and have fun!

Place in fridge (if you have any left that is) to harden for about 30 mins. They get real hard! Make sure to refrigerate them on parchment paper or they will stick to the plate.

Notes: If you don’t have carob powder you can substitute it for cocoa powder just as easily. Alternatively, you may be able to sub the agave nectar for maple syrup or honey. If you try this and it turns out let me know!

Also note, I cut the recipe in half to make a smaller batch. Don’t be too worried about getting exact measurements here. They will still turn out, promise.

The best part is the total prep time (not including freezing and refrigerating) was 10 minutes! So quick and easy. These would be amazing to whip up before guests come over or for a quick birthday gift.

I adapted this recipe found here. I used much less coconut oil in both mixtures, substituted raw oats for groats, and I added vanilla and agave in the chocolate chips.

Ideas:

1) Roll out dough mixture and use cookie cutters.

2) Roll dough mixture into balls and then roll in coconut.

3) Add other mix-ins instead of chocolate chips, like raisins or chopped up dates.

The taste?

These raw chocolate chip cookies BLEW MY MIND! Seriously I was NOT expecting this. I could not stop eating this stuff. It was pure heavenly bliss with some great health benefits to boot! :)

OMG! They were sooooooooooooooooo good! Thank you, I was searching for a raw choc cookie recipe to make with my daughter who has been on me for days for cookies and I did not want to make egg and sugar junk! (She gets enough of that from her father!) LOVE them! You rock sistah! This instructions, pictures all of it, amazing! Thank you x much!

oh my lord those look fabulous!!!! i wish i liked to bake/cook because those would be on the top of my list.. unfortunately i hate it and i suck at it haha. but i admire your creativity in the kitchen. you are very skilled! i would totally buy these if they were sold in boston :)

Those look amazing Angela! I usually make oatmeal chocolte chip cookies using the recipe on the quaker oats box and end up eating at least a cookie-worth of dough…

And on another note- I ran my first half-marathon today! When I finished my friends said “Wow, you’re glowing!” and I immediately thought of you! Thanks for the inspiration each and every day! And in regards to your previous post, you most definitely are a runner (and so much more)!

i definitely ran to the kitchen after seeing this! i mixed coconut oil, cocoa powder, vanilla stevia and peanut butter and then dipped dates into it. it was amazing! thanks for posting this :)

I love that you discovered raw food :-) Raw dessert and treats are just amazing!

I actually have two questions for you (time for a new FAQ ;-) ):
Now that you focus on not eating artificial sweetners and other crap foods, as well as buying organic, how come you still use makeup, shampoo, moisturizer etc. with all kinds of chemicals in them? I’ve had great experiences with using no-crap cosmetics, shampoo and so on.

Have you been doing any thoughts into simple living? Seems as if you’re on your way with having a job that you really enjoy, spending time in nature and all kinds of other things.

Finally I would like to hear if anyone is up for a challenge this week? Here in Denmark it is now monday morning and a perfect time for starting a week-challenge. Don’t buy anything except food, medicine and cannot-wait-birhtday-presents this week! I’m doing it anyways, but it would be fun to see if people were up for the challenge. It is a way to become more aware of the power money holds over us, and how we sometimes spend money mindlessly without actually needing the things we buy.

My first thought is that’s how I live my life most of the time anyways.
I guess it’s more directed at people who has extra money to spend on other things.

You are an inspiration to me. I am 18 years old and leave in Orlando FL. I came across your blog while reading a diet blog (which i don’t anymore!) and you have truly inspired me to get healthy by working out and making smart food choices!! Your relationship with your husband has inspired me to try including my boyfriend more in my workouts and I also want to try cooking more healthy meals like you make that both you and your husband will eat! (boys are so picky about health food..) I am so glad that you post all throughout the day it’s like you think everyone is your best friend on here and you make yourself so relatable! We are from Central FL too. There are great meet-up groups in Central FL and over 1,000 registered raw foodists.
Chef Olive has a great group in your area and in Mt. Dora there is a great live organic, non-GMO, gluten-free, restaurant where we meet every Thursday at 5:45. There is a free talk with price of an entree, from 6pm -7 or 7:30pm on how to make live food your lifestyle with recipes and fun facts. You can find the info on meetup.com/Lake-County-Raw-Food-Allies/ for other areas just put in meetup.com and your city or county and see what comes up for your area.
These are fantastic cookies though we used raw cacao nibs instead of the chips and we don’t eat oils so we just left it out and subbed with a little flax and 1/4 cup purified water it turned out just fine. Many times we sub oils according to the recipe and flavors with avocado, flax seeds, chia seeds, cacao or coconut butter, etc. Just be sure to keep the volume of liquid the same or add a little bit at a time to see how it sticks together.
This is a great recipe and we are so excited to get it. What substitution suggestions do you have for those who don’t choose to eat oats? Buckwheat. other nuts or seeds?
