For those of you who were asking, the Vanilla Bean Paste is from William Sonoma. I bought it when I was using up my gift card the other week. I’m sure you can find it online for cheaper though!
This morning’s breakfast was my treat for working so late last night!
I also snuck in a humid 3 mile run. The humidity was thick!
The run:
Distance: 3.21 miles
Time: 27:59
Avg pace: 8:43 min/mile
It was a good run, but a gross + humid run. Still, I will take humidity over snow and ice any day! My camelbak saved the day as usual.

Maple Peanut Butter, Banana & Jam Pancake Stack
Adapted from Healthy Spelt Pancakes for one.
Ingredients:
- 1/2 cup spelt flour
- 1/2 tsp cinnamon
- tiny pinch sea salt
- 1 tsp baking powder (I use aluminum-free)
- 1/2 c unsweetened almond milk (or milk of your choice)
Syrup + filling:
- Pure maple syrup
- Peanut butter
- Jam
- Unsweet. coconut
- Cacao nibs
- Sliced banana
- Blueberries
- Raspberries
Directions: Mix all dry ingredients together the night before and place in container. In the morning, heat a skillet on medium while mixing the batter. Add the milk to dry ingredients and stir well. Spray the skillet with non stick oil and spoon the batter onto the skillet on med-low temperature. Flip pancakes when bubbles pop and cook other side. Layer with sliced banana, peanut butter, jam, and other toppings as you wish!
Makes 4 baby pancakes.

After the Acura 10 miler, I have been following your blog. I especially love the posters’ discussion on “negative thoughts”. Many thanks for all of your deligent work on the blog everyday.
Your idea of _enjoying_ healthy cooking & eating – instead of struggling with it for the sake of health – has really inspired me. I used to live on meat and junks (e.g. instand noodles/dinners & pops). Now, I am eating a much more alkaline diet. When I wash vegetables – a process I used to hate – I think about the fun you have when cooking and I try to feel the same. Hey, it works! Now, I am not struggling to stay away from junk food but actually finding good food enjoyable. (And I also feel the same about yoga. It is no longer something I have to do only for health – and I ended up not doing it since I dreaded the process but only desired the result.) Thanks for sharing your own story so openly with us.
While I was in San Francisco last week, I found an Americanized Korean place which serves amazing salads. I especially can’t forget its eggplant, & I have been trying to figure out how to make similar ones at home. I think the eggplants were baked with just a bit of seasoning on top. I need to experiment. If you have know of any great eggplant recipes, please let us know :-)
You & your family will have a wonderful time in Paris. I always run into many nice people & feel revitalized when I’m on a trip. I guess we take off our guard & are more cheerful during a vacation, and this affects how others respond to us.
I ran the San Francisco Half Marathon on July 25. It sounds like crazy :-) Just a couple of months ago, I would have never thought that this was possible. But somehow, I did it. But the most amazing part is that when I reviewed the photos taken along the course by the organizer, I realized that I was actually smiling in every single one of them! I can’t believe it! And it all started with your Acura Race report which inspired me to break the 5km mark. (My original plan was going to just settle for 5km as my limit.) THANKS! Do you have any advice for cooking with/for a significant other with a COMPLETELY different outlook on food?
I’m trying really hard to eat healthy and want my boyfriend’s support… he doesn’t need to become vegan, vegetarian, or drink green smoothies, I just don’t want food to drive us apart and I would love to make food that we both enjoy and feel good eating.
Any advice or suggestions would be great, I’m guessing more people than me struggle with this :)
Getting my boyfriend to eat a bit better has been such a struggle! Especially since he is a picky eater and only likes about two different kinds of vegetables, yikes. Getting him to exercise with me is even harder. You are definitely not alone in this…any advice would be fab.
If he likes those two vegetables, then get creative with them! Try different things with the things he *already* likes! (example — if he loves burgers, try out turkey burgers, bison burger, venison burger. . . you get the idea). Try to figure out why he likes certain things, then figure out if there are healthy things that are similar to them, and see if he’ll give it a try.
And take it easy. . . food and exercise are lifestyle habits, and can’t be changes overnight.
My husband and I started out eating pretty different foods: I ate spaghetti squash, and he was pretty much pizza and burgers. I’d say that in the last 5 years we’ve both changed a good bit. Here is what I discovered:
1. The main thing I found helpful was to be honest about what I was doing. For instance, using brown rice instead of white rice. No sneaky substitutions. He was always upset to try something and know it wasn’t the “real thing”. . . better to just request he try it.
2. If it’s healthy and he likes it: make it. He loves homemade salsa, guacamole, and crunch veggies. Guess what? We eat a lot of that! OK. . . so there are some chips that accompany it, but considering a couple of years ago he would never have eaten an avocado, this is a big deal. He also discovered that lean turkey and fish were pretty good. . . we eat that routinely, too.
3. Adapt your own tastes. . . turns out my husband is a fan of super spicey food. So, instead of really creamy/fatty dressings, we now use a lot of hot sauces/spices in food. I’ve developed a taste for hot sauce myself, and this has ended up making me a bit healthier.
4. Read the recipes in Men’s Health. They are really, really good. My husband swooned over a salmon quinoa salad, likewise a buffalo chicken salad. We eat that a lot now.
Exercise. . . not so much. He does some push-ups now, and plays sports periodically with friends, but it’s not something we share, and I’m OK with that.

Lol, when I say he is picky, I mean…legit picky. He doesn’t like seafood (my fav food number 1), or cheese (fav food number 2), anything creamy, or any meats other than chicken and steak, and I swear I am SO tired of eating zucchini haha! His problem mainly is that he has already embedded in his head that he hates something, so even if he likes the way it tastes, his brain is telling him he hates it.
He’s getting better with being active. I just think our lifestyles should align, at least sometimes. Mostly, I’m just tired of cooking two different dinners every night, and I really just want him to be a healthy man so he can live a long happy life. I’m not asking him NOT to eat bad things, just to try new stuff. I guess we’ll see! Thanks!
Take heart. It took my husband 5 years before he’d eat a tomato. . . even now, vegetables and fruit are quite a challenges (as is any sauce that is not completely smooth). People change over time. . . the key is over time.
Eric used to be like that. He wouldnt eat vegetables barely at all. After 10 years he is trying them out lol. It took a long time. Have patience. It is hard for ppl to change.

That breakfast is EPIC!! It’s obvious you were excited based on the number of pics you took ;) I love pancakes but seem to crash afterwards. You obviously don’t have this issue now, but have you ever had that experience?
