Easy Summer Bean Salad and Maple Butter Roasted Squash

Usually around mid-to-late August, I can’t help but think about Fall.

Don’t get me wrong, I love summer and cherish every second of it (and yes our summer in Canada can be counted by the second!), but my mind wanders to thoughts of Fall around this time.

Crisp, bright, crunchy, and cool fall.

Pumpkin.

Comfy sweaters.

The smell of fireplaces and those final uses of the BBQ.

Raking leaves until the blisters on my fingers hurt so bad, I must come inside.

Ok, so maybe fall isn’t all it is cracked up to be. I just can’t decide if I am on Team Summer or Team Fall right now.

Tonight’s recipes are a clear reflection of my indecisiveness toward the seasons.

First, I decided I would make a summer bean salad so delicious and easy, I’d feel like I was sitting on the beach at some posh women’s yoga retreat. My body was also in post-vacation shock, so anything longer than 10 minutes to prepare was simply out of the question.

Second, I decided I would honour my Fall cravings with a beautiful Maple Butter Baked Pepper Squash so warm and fuzzy I’d feel like I was cuddled up in front of a bonfire wearing a big hooded sweatshirt.

This meal is for those days when you are town between your love for summer and your yearnings for Fall.

Easy & Delicious Summer Bean Salad

Ingredients:

  • 1.5 cups cooked black beans
  • 1.5 cups cooked kidney beans
  • 1/2 large green pepper, diced
  • 1 large patty pan squash, diced
  • 1/4 red onion, diced
  • 1 corn on the cob, corn removed
  • 2-3 tbsp sunflower seeds
  • Easy Bean Salad Vinaigrette (3 tbsp vinegar, 2 tbsp sunflower oil, 1 tbsp pure maple syrup, 1/4 tsp Himalayan sea salt, 1/8 tsp freshly ground black pepper)
  • 1/4-1/2 tsp Dried parsley
  • Sea salt and pepper to taste

 

Directions: Dice vegetables and throw all ingredients except the vinaigrette and sunflower seeds into a large bowl. Set aside. In a small bowl prepare the Easy Bean Salad Vinaigrette. Pour the vinaigrette over the diced vegetables and bean mixture and mix well until coated. Sprinkle with sunflower seeds and parsley and additional sea salt and pepper if necessary. Serves 4-5.

This tastes incredible, not to mention it is healthy and filled with protein, healthy fats, and fibre.

Simple food is delicious food.

To satisfy my Fall cravings, I served it with a baked Courge Pepper Squash.

Maple Butter Roasted Courge Pepper Squash

Ingredients:

  • 1 Courge Pepper Squash, split in half & seeds removed
  • 2 tbsp Earth Balance
  • 1-1.5 tbsp Pure maple syrup
  • Pinch sea salt
  • 1 tsp Sucanat (or brown sugar)

 

Directions: Place about 2-3 inches of water in a large & deep casserole dish. Take prepped squash (sliced in half and seeds removed) and place cut side down into the water. Bake at 425F for about 30 minutes or until tender. Remove from oven and cool for about 10 minutes. Flip squash and immediately place Earth Balance, Sucanat, maple Syrup, and sea salt over top of both halves. Serve immediately. Serves 2.

The squash tastes like a warm, sweet embrace on a chilly night.

Or maybe I am just weird like that.

Either way you have to try this. Quite possibly the best tasting squash I have ever had! Buttery, sweet, and slightly crunchy from the Sucanat. Ohhhhh me oh my.

I LOVE fall! Football, pumpkin everything, sweatshirts, hot chocolates…..and it helps that I live in Seattle, we only have a week long heat wave every year!

I love fall and I love all your recipes! I too love when meals are quick. The Banana Soft Serve is a hit around here. I make it for my girls for breakfast and they get so excited! Ice Cream for breakfast! And people think Vegans are deprived…

It’s definitely a toss up for me! Summer is so beautiful and relaxing, and the days seems so much longer. But fall reminds me of school starting up again and the excitment the start of school brings. It always motivates me and feels like a fresh start! And the cozy sweaters and clothes don’t hurt either!

Yes! I love love love fall: football games, snuggies (hehe), corn mazes, pumpkin patches, Thanksgiving, changing tree colors…I could seriously go on and on. My favorite fall dish is easy: pumpkin pie all the way.

Wow the squash sound fabulous! Can’t wait to try it, going to the farmers market saturday hope I find some squash. I am also undecided, on one hand I love the long lazy days of summer and all the local fresh fruit. But on the other hand I love the changing colors, cooler tempuratures, and warm savoury food’s that come with fall. Also im crazy about haloween ( Im like a big kid when it comes to that holiday ). But when it comes to fall my favorite food is a warm apple crisp topped with roasted walnuts and vanilla soy ice cream. I have a apple tree in my back yard and after the first frost the apples are red, sweet and delicious in anything and everything!

Oh WOW the squash looks amazing! i cant wait till they start stocking different types of squash here! only a couple more weeks now.
Now summer is drawing to a close i’m sad its ending but now feel like lets get on with Autumn!!

Oh I am so team FALL! I love the crisp feel to the air, wearing sweatshirts, easier running (for me at least – I am not a hot weather runner!), and have I mentioned that the pictures of the squash have me drooling over here? :)

PS – I enjoyed my Glo bar the other day from the HLS swag bag so much. Thanks for putting those in there (the Empower has always been my favorite one too!).

Annnd my favorite fall dish is probably a tie between pumpkin oatmeal and a big old pile of roasted root vegetables. Yum yum!

Definitely a Fall girl! I honestly don’t like it when it’s too hot and I would take a big sweater and jeans over shorts and a tank any day! I also love the foods! Squashes, toasted nuts, crisp apples…oh gosh…this just got me excited!

Autumn is by far my favorite season except that then winter is just around the corner. But I love its vegetables — root veggies, especially — and the smells of cinnamon, pumpkin, dead leaves, the crisp air. I’ve been CRAVING autumn lately. :D

Fall is by far the best season!! I love it when I can wear a sweater and break out the cute fall coats :) Plus, the food is the best! Pumpkin everything :)

Hi Angela-
The bean salad looks delish! I will have to try it. Here is another summer bean salad recipe that I adore and eat by the barrel:

For the salad: 1 can corn, 1 can black beans, 1 can black eyed peas, 1 can chick peas, 2 stalks diced celery 1/3 cup diced roasted red pepper (or a jar of pimentos). Dressing: 1/2 c olive oil, 1/2 c sugar, 1/3 c apple cider vinegar.

Directions: Combine all salad ingredients in a large bowl. Combine the dressing ingredients in a small sauce pan over low heat until sugar dissolves. Pour over salad and marinate over night. Drain liqud from salad in the morning. At this point, the original recipe calls for the addition of 1/2 cup of crumbled feta, which I like. However, you can omit this to keep it vegan. Not sure if there are any vegan subs for feta. Hope you like it!

This time of year always gets me excited for fall too. It’s when the mornings start getting crisp that you can tell that fall is on its way! :D My favourite fall foods are squash, root vegetables, apple desserts, and pumpkin oats!

I do love fall but I am not quite ready for it. By next month I will be all about it.
I also LOVE all forms of winter squash and I am going to keep my eyes out for a Courge Pepper Squash, it looks right up my alley.
What’s up with Himalayan sea salt? I was just in Nepal and picked up a bag of it because it looked interesting but now I am seeing it listed all over the place (and I am kicking myself for not buying more of it!).
Fall will greet us soon enough, enjoy the last days of summer!

I’m currently torn between summer and fall too. I’m in upstate NY so like your summer, ours is very short. As much as I don’t want to wish away summer, I am really excited for fall!

I hate the heat so I’m definitely on team Fall because it means that the snow will be falling soon and I’ll be able to ride my snowmobile. I also get excited about taking pictures of the Fall foliage. It’s so beautiful in Vermont with all the red maples. I can’t wait.

Definitely Team Fall! I can’t wait!! Being able to run without humidity again is reason enough to fast forward through the next few weeks.
