Easy Summer Bean Salad and Maple Butter Roasted Squash

Usually around mid-to-late August, I can’t help but think about Fall.

Don’t get me wrong, I love summer and cherish every second of it (and yes our summer in Canada can be counted by the second!), but my mind wanders to thoughts of Fall around this time.

Crisp, bright, crunchy, and cool fall.

Pumpkin.

Comfy sweaters.

The smell of fireplaces and those final uses of the BBQ.

Raking leaves until the blisters on my fingers hurt so bad, I must come inside.

Ok, so maybe fall isn’t all it is cracked up to be. I just can’t decide if I am on Team Summer or Team Fall right now.

Tonight’s recipes are a clear reflection of my indecisiveness toward the seasons.

First, I decided I would make a summer bean salad so delicious and easy, I’d feel like I was sitting on the beach at some posh women’s yoga retreat. My body was also in post-vacation shock, so anything longer than 10 minutes to prepare was simply out of the question.

Second, I decided I would honour my Fall cravings with a beautiful Maple Butter Baked Pepper Squash so warm and fuzzy I’d feel like I was cuddled up in front of a bonfire wearing a big hooded sweatshirt.

This meal is for those days when you are town between your love for summer and your yearnings for Fall.

Easy & Delicious Summer Bean Salad

Ingredients:

  • 1.5 cups cooked black beans
  • 1.5 cups cooked kidney beans
  • 1/2 large green pepper, diced
  • 1 large patty pan squash, diced
  • 1/4 red onion, diced
  • 1 corn on the cob, corn removed
  • 2-3 tbsp sunflower seeds
  • Easy Bean Salad Vinaigrette (3 tbsp vinegar, 2 tbsp sunflower oil, 1 tbsp pure maple syrup, 1/4 tsp Himalayan sea salt, 1/8 tsp freshly ground black pepper)
  • 1/4-1/2 tsp Dried parsley
  • Sea salt and pepper to taste

 

Directions: Dice vegetables and throw all ingredients except the vinaigrette and sunflower seeds into a large bowl. Set aside. In a small bowl prepare the Easy Bean Salad Vinaigrette. Pour the vinaigrette over the diced vegetables and bean mixture and mix well until coated. Sprinkle with sunflower seeds and parsley and additional sea salt and pepper if necessary. Serves 4-5.

This tastes incredible, not to mention it is healthy and filled with protein, healthy fats, and fibre.

Simple food is delicious food.

To satisfy my Fall cravings, I served it with a baked Courge Pepper Squash.

Maple Butter Roasted Courge Pepper Squash

Ingredients:

  • 1 Courge Pepper Squash, split in half & seeds removed
  • 2 tbsp Earth Balance
  • 1-1.5 tbsp Pure maple syrup
  • Pinch sea salt
  • 1 tsp Sucanat (or brown sugar)

 

Directions: Place about 2-3 inches of water in a large & deep casserole dish. Take prepped squash (sliced in half and seeds removed) and place cut side down into the water. Bake at 425F for about 30 minutes or until tender. Remove from oven and cool for about 10 minutes. Flip squash and immediately place Earth Balance, Sucanat, maple Syrup, and sea salt over top of both halves. Serve immediately. Serves 2.

The squash tastes like a warm, sweet embrace on a chilly night.

Or maybe I am just weird like that.

Either way you have to try this. Quite possibly the best tasting squash I have ever had! Buttery, sweet, and slightly crunchy from the Sucanat. Ohhhhh me oh my.

I think I’m Team Summer, but lately there have been little hints of Fall and it has me really looking forward to the season now. I think I’m undecided like you! I love how in the fall, nothing seems better than a warm beverage… tea, cider, hot chocolate. It’s so yummy!

Can I choose Team Summall? As in the time of year where summer and fall meet, usually about mid September? yah, I just made up a 5th season. That’s how I roll ;)
It’s a little crisper, but still warm. The sun is shining and it’s not pitch black outside afterwork, so you can still get a run in until about 7:30PM. The leaves are just changing colour, but they are on still on the trees, and you can still head down to the beach and enjoy the sunsets or you can stay home and enjoy your patio and BBQ.

I’ve been meaning to tell you that I am in love with the carrot cake scuffins you posted about a few weeks ago. They are awesome for a pre run snack. I also made some last weekend subbing shredded zucchini for the carrot and choc. chips for the raisins and they were great. Thanks for the awesome recipe!

I can’t decide which team I am on! lol We’ve had the most mild summer I can remember… until now! It’s been 80+ degrees for the past few days. (A high of 76 up until now was HOT.) Fall = Summer this year ?

My favorite types of recipes for fall are stews, soups, chili, roasted vegetables, roasted squash, hot oatmeal. I’ve only been blogging since March and I can’t wait to see what kinds of things I come up with this Fall.

I used to be all about summer but after this scorcher I’m on Team Fall for sure. Besides, I’m dying for some apples from the orchard.

I’m definitely cheering for Team Summer, but I do get excited about fall and its sense of coziness. I’m really looking forward to the classics – pumpkins and apples. I have aspirations to make and can oodles of applesauce and apple butter.

Kathi – Oh how I love to read. Let’s see if you’re in the mood for non-fiction about our food system you can’t go wrong with “The Omnivore’s Dilemma.” Or if you need your fiction fix “The Help” was a great read. I also just finished “Both Ways is the Only Way I Want It,” which was interesting – each chapter was its own kind of open ended story. It’s the type of book that makes me wish I was in a book club so I could discuss it with someone. Or you could always go with a classic and re-read “To Kill a Mockingbird.” Really I could go on and on about this, but I’ll reign myself in.

I love summer, and I try and soak up every second of it that I can. But when the days start getting noticably shorter, Im ready for fall. I LOVE the orange leaves and the crisp air. Besides, its been so freaking hot outside I’ve only been able to run once or twice a week.

I am dreaming of fall.
My favorite season is Winter. I love the nip in the air and the rain and the smell of the stores when they start carrying Christmas things. This year I will be moving out of Southern California in time for the real seasons to begin and I am so excited to see the colors on the trees change for the first time ever :)

TEAM FALL! :) And wow, this is such a beautiful post! I am yearning for fall now. I think I love fall because it’s the beginning of the holiday season. The pumpkin pie and apple cider don’t hurt either. ;)

i’ve been craving fall lately too…so much so that i keep getting excited if i even see a dead leaf on the ground! i can’t wait til the aspens start changing and i need a jacket to wear at night :)
