It has been hard to restrain myself from eating the other half of this cantaloupe since I sliced it open the other day. You see, once cantaloupes are sliced, they do not last long in this house. They are quite possibly the perfect fruit. It took every last ounce of strength in me not to demolish this beautiful fruit after my long swim on Wednesday night. I was so thirsty and this just screamed eat me. I had to look away…
I resisted and somehow triumphed over its’ luring nature. I had plans for this juicy cantaloupe. I knew I couldn’t just eat it spontaneously and ruin the planned Friday morning breakfast I had in mind. If I had eaten this, it would have been several days before another would ripen on my countertop.
But, lo and behold Friday morning did come sooner rather than later (it always does) and this morning I pranced down the staircase filled with glee. Today was the day, my friends. Of epic proportions.
Last night I threw together this fancy little mixture. Although, just between us girlfriends, it wasn’t really fancy at all. It was ridiculously easy and that is why I have become so smitten with Vegan Overnight Oats. Before bed, I grab my oats, milk, vanilla, chia seeds, and occasionally banana and chocolate protein powder. I mix. I sneak a taste. I place in the fridge and I prance away, saying, ‘Til tomorrow, vegan overnight oats…til tomorrow…’ with a sly smirk.
I come downstairs in the morning, and this awaits me…
I thanked my gourmet chef and grabbed my long-awaited cantaloupe.
Blueberry Melon Vegan Overnight Oats
Ingredients:
Vegan Overnight Oats:
- 1/3 cup regular oats
- 3/4 cup to 1 cup almond milk
- 1/2 tsp vanilla
- 1.5 tbsp blueberry jam
- 1 tbsp chia seeds
Directions: Mix together the above ingredients and place in a bowl in the fridge overnight. In the morning, stir the VOO, and pour into half of a cantaloupe. Sprinkle with shredded coconut. Enjoy with a spoon!
As much as I wanted to love this, I’m not sure if I would make it again due to the reason that the cantaloupe made the VOO very watery and the taste got lost. It was fun to eat, but if I did make it again, I would likely use half the water in my VOO.
Last night Eric and I had a fun bike ride! We biked to a near-by trail this time.
My Giro helmet rocked my world. It made the world of difference to be fitted by a pro in a bike shop! I also really love my new seat too. This seat is the bike shop’s top selling women’s seat and it is made especially for women!

The trail was quite rocky, hilly, and rough at times and I was a bit nervous biking on it. This probably sounds strange, but I am not that confident on a bike! I actually get really nervous when I go fast and I get especially nervous on rocky terrain. I had to slow down quite a bit while Eric went ahead. I haven’t been on a bike all too much, so I am guessing that I just need to get used to it and improve my skill like swimming. I much prefer being on FOOT, like trail running, so the biking is taking me out of my comfort zone…which is a good thing, right? :)
It was getting late so we kept the ride short and sweet:

- Time: 29:31 mins.
- Avg pace: 8.3/mph

I am the same way about devouring the entire cantaloupe in one sitting!
I feel pretty confident on my bike, but that could be due to the fact that I don’t go on many risky adventures. I’d probably be more paranoid if I were trail riding or riding in the rain on slippery hills.
I love biking, but I somehow always manage to wipe out! I have lots of battle wounds now. :D
Angela, I get nervous on my bike, too! I don’t know if it’s the fact that I haven’t biked too much, or that my balance is off, or that I’m naturally clumsy, but I am generally not at ALL confident on a bike! My seat is actually just slightly too low (technically) but I want it a bit lower so I can touch the ground easier! I know it’s better to have the seat at the proper height, but it’s scarier, too!
Anyways, I’m so impressed with you and Eric and wish you the best of luck with your Tri. You are quite inspiring! ;)
I love the concept of “edible bowls”. :) One of my faves has always been soup in a bread bowl! YUM!
Oh and p.s. I’m not that confident on my bike yet. I’ve gotten better. I hate going fast downhill. It scares me!
I use to say that the bike was my weakest event in triathlons. Even though I teach spinning classes biking outside is most definitely different! Something that has helped me is riding my hybrid bike to work. Getting on my road bike doesn’t seem as scarey any more. My mom, the Occupational Therepist would tell you that my motor skills have improved. You just got to get out there and do it. I still don’t like to go too fast, get nervous when there are cars, and don’t like going in the rain

I’m pretty confident on my bike. I ride a mountain bike around town a LOT and on campus to get from class to class and back home. For the most part, I just worry about drivers not paying attention to me. :(
I want to buy a bike soon, but I know I’ll be scared on it. It’s just a different feeling I guess.
I wish I liked canteloup. It’s just kind meh to me though.
I bike everyday! It’s my go-to piece of transportation which is very normal here in Germany. However, when I spent 6 months on an exchange program in America, I did not see a single cyclist at all.
Hi there – I’m a long time reader, first time commentor :)
I bike both on the road and trails…I used to be quite unsure with mountain biking. I swear, if I saw a rock, I’d fall over – I didn’t even have to be near it! What I’ve learned is to keep pedalling, keep some speed, and let the bike do the work. It still freaks me out a bit, but I just talk (okay, sometime I yell) to myself the whole time: “just keep going! You can do it jennifer! Keep pedalling! Keep pedalling!”
Seriously, I sound like a lunatic while mountain biking – but it works! Of course, if my husband or friends have gone on ahead or are behind, they might think my yelling indicates a problem, so we have an emergency word to shout out if we’re not just screaming encouragements…”BANANA!!!”
Yup – I sound like a lunatic :) But it is so much fun, and well worth pushing past your comfort zone to learn what your bike can go over in terms of terrain.

I wish I were confident biking. I hadn’t biked for at least 10 years when I finally started last summer. I had intentions of using my bike to get around (I live pretty close to downtown, where I work). A lot of people ride bikes here. Unfortunately, I found that I have terrible balance and going moderately fast on the bike scares me. I’m OK until I hit a rock or a crack in the pavement and then I freak out and fall over. It’s kinda funny. :) If I didn’t have to ride around so many cars, I think I’d be more likely to pick it up again. But it’s sort of scary and makes me self-conscious.

I’m not very comfortable on a bike either. Feet is best for me. And on rollerblades I’m a ball of nerves!
I think I’m pretty confidant on my bike, but for sme reason am afraid of crashing. Ok, not for some reason… I have my L4 L5 S1 vertebrae fused and am afraid of what could happen if I take a spill. I like going fast, but am always on concrete. My husband ALWAYS goes faster than me on the down hill stretches… boys! The fastest I’ve ever gone was 27 mph and that felt FAST!! (He went 30. hehe)
I just picked up the sweetest cant. from Trader Joe’s. Cut it up… and was gone w/i 24 hours. HAHA

I biked through England on a school trip carrying everything on the bike (gone for a month)….it was the most unbelieveable way to see a country….see, smell and feel in some case everything. England is very hilly. A couple of my fellow students wiped out going downhill…totally the bike but lucky they were ok.
Nope there is just almond milk. The water came from the cantaloupe ;)
Mmmmmm, sounds wonderful! I love eating cantaloupe (or any other sort of melon, actually!) with a spoon. I can’t believe I never thought of this!

I tried that same thing in a honeydew bowl the other day. I thought it was delicious – but I agree on the watery part.
I love the idea of jam to flavor overnight oats! I have to say, I tried your original overnight oats recipe yesterday morning and I LOVE IT. I meant to prep it again last night and was sad this morning when I realized I forgot!
I’d love to be a bike person! I still get nervous that I might fall over whenever I borrow a bike, but I really need to get over it–I have a 20 mile bike ride coming up in June and I need to get with it (and make myself safe to be around by other cyclists!)
I’d love to be more confident on a bike. I broke my jaw falling off a bike when I was about 14 and now it kind of scares me!
I rode a bike when I was in grad school in Oxford but I’d still get shaky and nervous when anywhere near traffic. Nowadays I don’t have the confidence to ride in London. I’m pretty sure I’d die!

I love all the versions of VOO that you come up with because I’ve become pretty obsessed with them myself…they are so ridiculously easy and so good for the mornings when you don’t feel like cooking or doing anything at all- lazy person’s dream for sure. I’ve been experimenting with VOO a lot..nothing compares to your concoctions though. One day I will be a good recipe creator. One day.
I never go biking. I am absolutely not confident on a bike at all. I used to be when I was a kid, then I stopped for 15 years. Two years ago I wanted to try it again, but couldn’t deal with the busy streets of Toronto. And I found that I lost my ability to bike properly. It makes me so nervous!
