Good morning!
Well, it is official, late night swims make it really hard to fall asleep at night!
Last night Eric and I tossed and turned until about 2am.
This morning, these were needed desperately:
That would be Four O’Clock White and Green loose leaf tea.
But, before I had a cuppa, I clearly demonstrated why I should not be cooking in the kitchen on too little sleep.

Was a mere bump on the head going to stop me? Absolutely not. I put that ice pak on my head and cooked one-handed. I was on a girl on a mission.
Remember that juicy orange I had last night before bed? Well, it turns out that oranges do nothing for hunger. They make you get up in the night to go to the bathroom, but that is about it. Of course, I knew this, but I can’t eat much before bed or I get stomach pains. I woke up this morning with a growling tummy!
You know what it said to me?
It said: Banana Pancake Sandwich– in a jiffy!
When my tummy speaks, I shall listen.
In A Jiffy Banana Pancake Sandwich
Adapted from my Healthy Spelt Pancakes for One.
Ingredients:
Pancakes:
- 1/2 cup whole grain spelt flour (other flours would probably work although you might have to adjust the milk amount)
- 1/2 tsp cinnamon
- pinch of sea salt
- 1/4 tsp baking powder
- 1 tbsp Amazing Grass Amazing Meal Chocolate protein powder (optional)
- 3/4 tsp vanilla
- 3/4 cup Almond Milk
Directions: Pre-heat skillet on medium heat and lightly coat with oil (I used coconut oil). Mix the dry ingredients together in a bowl and then add the wet ingredients and use a whisk to mix well. Pour a small amount of the mixture onto the skillet and make tiny pancakes, no larger than about 3 inches in width. Because the pancakes are tiny, you will be able to flip them very easy.
While the pancakes are cooking, slice a banana and set aside. Now combine the syrup ingredients in a small bowl.
Reduced-sugar pancake syrup:
- 1 tbsp coconut oil, melted
- 1 tbsp pure maple syrup
Now assemble the pancake sandwich by layering the pancakes with the slices of banana. Add desired toppings and syrup. I used cacao nibs as a topping, but the sky is the limit! You can also double or triple this recipe, I doubled it this morning and make them for Eric too.
I love, love, love this syrup.
Let me just say I was feeling MUCH better after this breakfast!
I love these pancakes for 1 because it is the perfect amount and I don’t feel sick after eating them like other pancakes.

I too used to think that confidence was gained through perfection, but I realized after many years when the goal is perfection nothing will EVER be enough. There will always be something else to achieve or to do before you can finally be content with yourself.
I used to base my confidence on the number on the scale, but even if that number was low, I still wasn’t there yet, so I couldn’t give myself permission to be happy. Some day, I thought. Some day I will be there. Well, you know what? That day never came.
Years went by and I GOT SICK OF WAITING to give myself permission to be happy. I was sick of wasting precious time because I didn’t think that I deserved to be happy yet. I finally had to claim confidence, slowly over time, and to realize that I was good enough as I was in that very moment.
And so are you.
Right now, you are good enough. No, you are more than good enough, you are fabulous, amazing, inspiring, unique, and capable of so much more than you dream of.

i can only sleep if i go in the sauna quickly after night swims. the heat makes me sleep. otherwise im the same..up all night tossing and turning.

Yeah, never work out late!!! It’s a huge mistake, especially for women. I used to run late if I couldn’t get a run in earlier in the day and it was awful. Long run + no sleep = very grumpy girl the next day.
Perfectly perfect is too rare to be true. But there is always perfection in imperfection- perfectly imperfect. =)
I think weekend pancakes are in order after seeing these! I completely agree with that quote. I sometimes need to take a step back and realize things are good as they are and I shouldnt be striving for something unattainable.

Reading the comment at the end of your post, the fact that we are capable of even MORE than we dream of, got me a little choked up. I am in LOVE with your spelt pancakes! I like to add walnuts into the batter and once cooked, add a thin spread of PB and sliced banana on top; absolute heaven!
I think it is SO important to feel GOOD in our skin. To know that we ARE good enough. Yes, we may be able to improve in one way or another, but for the time being… we are PERFECT!

I just turned 40 and I think I FINALLY have made peace with all of my imperfections! I have worn myself out trying to chase prefection that I have decided doesn’t even exist. I eat great, workout, and take good care of myself but still have “lumpy” arms and thighs. I am going to embrace even my lumps from now on! I am me and as long as I feel good and know that I am treating my body with respect, I am the best I can be!

Okay so the pancakes….well, I have talked my hubby into letting me make those for us on Sunday morning….woohoo! The pics made me salivate, seriously.
I have been at a point where I claimed my happiness just 4 years ago, when in 2006, so many life roadblocks occurred in my life, the death of my favorite mother-in-law, the death of 2 of our elderly animals and a few other issues. When that year was over and I knew it couldn’t get any worse, I figured….hmmmm, I think it’s time for me to be happy with who I am and I AM BEAUTIFUL, FABULOUS and all of the above as you described and so are all of you! Angela!! Mixing coconut oil with maple syrup is GENIUS!! I’m always looking for ways to incorporate healthy fats into my pancake feasts. Normally I mix nut butter with the syrup, but this sounds puuurrrfect :)
One thing I’ve recently realized is that I don’t always have to be looking for happiness. It seems like I’m always DOING things in order to find it. But happiness is possible in any current situation I’m in. I just have to allow it to happen :)

I made them as a birthday surprise-breakfast for my boyfriend this morning and he loved them. I used one tbsp of cocoa instead of the chocolate protein powder and they tasted really chocolatey (I saved one of them for myself to try them, but the pancake-banana tower was getting quite high anyway).
Oh, and then I stuck a candle on top of the tower ;-)
I just wanted to thank you for the wonderful recipe! Also because of your description, as it turned out really beautifully even though it was my very first try of a pancake breakfast. Before, I only ever made larger ones with berries in them, but never such a stack :-)

Hi Angela! Do you offer a print option for this recipe? I wouldn’t mind writing the recipe down in my notebook but I’m a very visual person and I generally like to see pictures with my recipes, so that’s why I’m asking about a print option. I don’t see one anywhere, like the rest of the wonderful recipes you have on your website.
I do have print options on my newer recipes (since 2011 probably) but not prior. Hope this helps!
