I kicked off the weekend with another fabulous Baked Breakfast Cake experiment.
Apple Pie Baked Breakfast Cake
Ingredients:
- 1/2 cup hazelnuts (filberts)
- 1/2 cup almonds
- 1/2 cup old-fashioned rolled oats (not instant)
- 3/4 cup sweetened soy yogurt OR applesauce (see note below!)
- 2 t pure vanilla extract
- 1 Tbsp agave nectar or maple syrup (Optional, mine didn’t need it)
- 2 t cinnamon
- Pinch fine sea salt
- 1 T chia seeds (optional)
- 1 scoop Manitoba harvest Vanilla Hemp Protein Powder (optional)
- 1 and 1/4 cups unsweetened almond, soy, rice, hemp milk
- 1 apple, peeled and cut into chunks
- Oats for garnish
- Maple syrup to drizzle over top once served
Directions: Preheat oven to 350F. Grease three small oven safe dishes. Throw all ingredients except the apple into the blender and blend until smooth, stopping to scrape sides if necessary. Evenly distribute the batter into the dishes and then garnish with apple and oats. Pop in the oven for about 30-35 minutes, at 350F or until golden brown. You can refrigerate for 4 days and they apparently freeze well too! Drizzle with maple syrup.
Note: I made this batch in 1 large casserole dish and it didn’t turn out- I baked it for over 1 hour and the bottom burned while the batter didn’t set. I am not sure if this is because I subbed the yogurt for applesauce OR if it just cooks better in three small dishes.
The cake batter was the thickest and creamiest yet, thanks to the soy yogurt. :D Wow, it was amazing, you could honestly eat this breakfast straight from the blender!
I did a little experiment…
I blended it first without chia seeds and then with the chia seeds. The chia seed batter was much more creamy and thick! It was still fabulous without though.
I’m also starting to prefer these baked cakes COLD, straight out of the fridge, as opposed to hot!
I have a confession. I blew my Early Rising Challenge this morning! You know what they say…eventually something’s gotta give, right? Well, this morning it did.
I awoke naturally at 6am this morning, but there was no way I was getting up. My body was crying out for more sleep, so I slept until 8:30am!!!!! Oops. I definitely needed it though. ;)
I remember learning in psychology that you should always try to get up at the same time every day (this includes weekends) to keep your body on schedule. So even if you have a late night on the weekend, you should try to get up at the same time.
It is such a hard thing to do though!
I think this will get easier for me once I am not sleep deprived like I was all week. I added it up and my average amount of sleep this week was just 5.5 hours per night- blech! I think it will get easier as I naturally start to fall asleep earlier. You need to start from somewhere.

Looks so delish! I am betting it was the size of the baking dish. I know my banana and pumpkin breads turn out much better when I use my 4-mini loaf baking dish vs. one regular sized one. The big one ends with a burnt top and bottom and “goo” in the middle. The mini ones turn out gift-worthy.

That’s great news about Breville! Don’t worry about sleeping in, you clearly needed it :) I always sleep a little later on Saturdays (6:30ish vs 5:15ish).

PS – Hey did you know they make gluten-free oats? Just thought I’d share in case you didn’t. Figured they’d be helpful in your gluten free Glo Bars :)
Yup I have tried them before…they are great. The only problem here in Canada is that we are not allowed to call a product ‘GLUTEN FREE’- if it contains uncontaminated oats. It totally blows…they are trying to get this changed though and when they do, I will be using them :)

Ahhh the apple pie looks AMAZING!! I think I might try this one first. I try to get up around the same time Saturday, but usually sleep in a little Sunday. It is tough!

I think that sometimes it’s a little too hard on yourself to expect to wake up at the same time on “off” days (weekends, holidays). I get up between 5:15 and 5:30 every morning (I’d like to back this up to 4:45 eventually so I could do the gym in the morning). On the weekends, though, it’s around 6:45 to 7. And, if we’ve got nowhere to be, I don’t set an alarm and I just wake up whenever. This morning, it was 7:30. I’m naturally a morning person, so I never really sleep too late, but expecting to wake up at 5 am every day may be too much. Some nights, you get to sleep late and you need to make up that deficit;).

It would be very similar to the original stats I posted- the only dif would be the soy yogurt vs unsweetened applesauce and the apple for the banana. My guess is that it is around 350 kcal per serving.

Angela I’m not really sure why you’re trying so hard to be an early riser. If your body works better and you get to enjoy more time with your husband then why force your body to do something different. It sounds to me like your original lifestyle was working fine. I am a big believer in not forcing your body to do something when you don’t absolutely have to. I say go back to sleeping in instead of depriving yourself of sleep. You are only going to weaken your immune system and get sick. Good Luck
I think it is a bit premature to rule out that it doesn’t work for me…it has only been 4-5 days. I actually used to get up at 6-6:30 every morning and it worked great for me :)
what a fun saturday! my sleeping patterns are normally the same…but on weekends i will sleep an extra hour or take a nap later in the day :)

I think when you’re tired, you should sleep. Regardless of time of day! Of course, I’m an awful sleeper, up at 6am no matter what time I go to bed. I would love it if my body could just let itself sleep sometimes…
