Hey guys!
Last night we had a big family get together for Eric’s birthday. It was fun! :) We went out to celebrate and let the good times roll.
There was nothing vegan on the menu so I just asked the server if the chef could surprise me with a vegan dish and luckily he was more than willing. I was excited to see what he came up with!
This came out…
It was a Thai inspired stir-fry with rice and tofu complete with a Cashew sauce. It was pretty good although I am not a tofu fan, so I picked around it. :)
The rest of the evening was spent with family, kicking-back and catching up. :) It was a great night. My in laws are staying here to house-sit and cat-sit while we are in Chicago. Sketchie is very happy because he LOVES when his grandma and grandpa come to visit! I think he likes them more than us…
Eric and I have a big memory box that we store all of our notes and cards in since we started dating in 2000. I decided to go through it and bring back a few blasts from the past!
I admit, it was a bit hard stifling my giggles this morning when I read through our old notes. Said notes will never see the light of day on this blog. But I can show you a few safe ones… ;)

I used my Healthy Spelt Pancakes For One recipe (and doubled it) and I added his favourite pancake toppings- chocolate chips, coconut, and cherries. :)
I had some as well as my mother-in-law! She told me that she grew up in Ireland eating pancakes without maple syrup! Her mom used to serve them with margarine, sugar, lemon juice, and a sprinkle of icing sugar. Sounds amazing!

The birthday that sticks out the most in my mind was a surprise birthday party Eric threw for me on my 23rd birthday. He flew out my dad and best friend just for the party (I hadn’t seen them in ages!). Needless to say, the tears, drinks, and laughs flowed like wata.








Awww wow that was so fun so see the birthdays throughout the years! My husband and I have a box of notes and cards and stuff too — actually I’m starting to scrapbook it all! I’m not sure what my most memorable birthday was.. probably my 23 rd birthday because John proposed to be 4 days before it! :)
I love birthdays. Unfortunately I remember the bad ones just as much as the good ones. I just turned 30 a few months ago and that one will be memorable thanks to family.

Fave Bdays were when I was 11 and my Mom surprised me with a trip to Disneyworld in FL (we lived in WI and it was January so it was awesome).

My most memorable (certainly not the best) bday was my 18th. My brother and best friend came to town from far away to surprise me and my friends threw me a surprise party. But the night before, I got REALLY sick. Monday morning, my appendix came out :(.

Last year, there was a huge snowstorm on my birthday. It was so bad that all of my friends couldn’t drive in it. That didn’t stop the party though…my boyfriend has a huge truck and picked them all up so we could celebrate! I was so happy that everything worked out and it would have never been possible without Bill and his monster truck.

Awww those cards are so cute!! They remind me of me & my boyf, we found some old birthday cards while tidying the house recently, it was so fun to look back at things like moving to Dublin (a big move for us) and be happy with how things turned out.
Yep in Ireland we have lemon and sugar on pancakes! I never liked pancakes since I don’t like eggs, so discovering vegan pancakes was brilliant. When Pancake Tuesday (the Catholic holiday Shrove Tuesday) occurs every year nearly every home, religious or not, makes pancakes with lemon & sugar or chocolate. Maple syrup is seen as unusual here…!
Gosh I’m not sure what my best birthday was…! I got to work in a health food shop (for an article I was writing) on my birthday this year and that was pretty great – the best place to work on my birthday ;)

For my 40th, I had a Red Tent party for myself. The Red Tent is a book of historical fiction that takes place back in biblical times. It talks about how the women took care of each other in the Red Tent either after they had a baby or during their period. So, I had all my girlfriends over and we had “girlie” food and drinks and had a lovely time. Here’s the catch, my husband’s birthday is a week after mine. We were going to have “Laurie and Bruce are turning 80” but I ditched him for the Red Tent. In 5 years, I think we’ll have our 100th party!
I think we have similar artistic abilities ;)
Those pancakes look scrumptious. I need to stop being lazy in the morning and make myself some pancakes!
I think my most memorable birthday would be my 21st birthday because it was my senior year of college, our first home football game that season (Go Hokies), and all my besties were 21 so we partied down town all weekend!!

My most memorable birthday was just last year for my 30th. My boyfriend planned the whole thing and it was themed to all of the places I have visited so far in my life. Everyone got a “passport” when they arrived (courtesy of “Air Therese”) and throughout the house there were stations representing Cobourg (where I was born), Toronto (where I live), Japan (where I lived for over a year), Australia, New Zealand and the Dominican Repulic (where I visited). At each station there was a sample of drink and food that represented those places. He even travelled two hours by transit out of his way that morning to buy me fresh “melon pan” (Japanese melon bread) up in Markham as I kept raving about it. But everyone was to try one of each and get a stamp on their passport and then they’d get a prize!
My best friend, later in the evening, presented a slide show of pictures that my friends and family submitted of my life thus far.
It was, truly, the best birthday EVER!
I grew up having my pancakes with lemon and sugar too, although the pancakes themselves were a bit different, more like a crepe (just flour, milk and eggs in a 1:1:1 ratio, cooked fairly thin). We’d butter the pancakes, then add lemon juice and brown sugar, and roll them up to eat. So tasty! Sometimes when I visit my parents my mom makes them for me even now. :D
This is seriously SO adorable!! Reminds me of the cards my high school boyfriend and I used to share. I just love how much you guys love each other. Makes me smile!! HAPPY BIRTHDAY ERIC!
My last birthday would have to be my best. I decided to dedicate my 25th year to my own growth and it has been going awesomely so far! :) I also spent the weekend doing all of my favorite things so that was pretty cool, too. :)
That is so cute that you’ve saved those cards. I want to do that with my bf as well. We have stashed some cards away so far (dating for 1.5 yrs now). My grandparents have done the same and are no almost 80. Each anniversary they dig through the box and read some to each other. Now THAT is love and truly adorable. Hope you two enjoy his bday together after he returns from work!

Aww those cards are SO cute! My favorite birthday memory was just this past one (last December). It was my 21st birthday and my first birthday spent with my amazing boyfriend. He was so cute! He showered me with gifts and flowers and we acted like tourists in our own city and stayed in a fancy hotel downtown and I got treated to a lovely spa package… ahhh I wish I could re-live that moment over and over again!

A memorable birthday was my 16th: I wrote and passed my beginner’s driver’s license that day! I really felt like I was becoming an adult!
