Tropical Mango, Banana, & Pineapple Kale Salad with Creamy Pineapple Lime Coconut Dressing

As I type this post, we’re getting a snow storm. It’s so beautiful out, but I can’t help but dream of the summer. I can barely remember what the forest looks like all green and full of life. Right now, it’s stark white and eerily still.

I don’t know about you, but I‘ve got a bad case of cabin fever lately. I get this urge to run races just to get outside, declutter the house, and buy a huge pineapple at the grocery store. I also feel like I’m slowly going to go stir crazy if I have to plant my butt on the couch for a second longer. I really can’t bring myself to watch another reality show either. I mean, Ice T and Coco…really?

I’d rather pick lint off my sweater.

But I find myself watching it anyways, while I pick lint off my sweater and tell Sketchie to stop eating it.

Mmm, lint. Yum.

Then I come to my senses and remember that Up All Night is on and everything is well in the world again.

If I’m feeling really desperate for warm weather, sometimes I’ll eat food that reminds me of the tropics. The tropical fruit that I usually pass up at the grocery store, is now a craving that can’t be ignored. It’s a splurge that just might save my sanity, at least for now.

Tropical Mango, Banana, Pineapple Kale Salad with Creamy Pineapple Lime Coconut Dressing

Vegan, gluten-free, no bake/raw, refined sugar-free, soy-free

The next best thing to going on a tropical vacation. Let’s call this a staycation salad, shall we?

2 large or 4 small salads
Prep time
Cook time
0 Minutes

For the dressing
  • 1 cup chopped fresh pineapple
  • 1/4 cup fresh lime juice
  • 3/4 cup coconut milk (I used So Delicious original, see below)
  • 1/4 tsp kosher salt
  • 1 tbsp chia seeds
  • 1 tbsp coconut oil, melted
For the salad
  • 5 cups packed kale, stems removed and roughly torn
  • 1 ripe mango, chopped
  • 1/2 large banana, chopped
  • 1/2 cup fresh pineapple, chopped
  • 1 tbsp shredded dried coconut
  • 1/4 cup roughly chopped macadamia nuts

1. In a blender, blend all dressing ingredients until smooth.2. Meanwhile, prepare the kale and add about 2/3 of the dressing to the kale and massage it in with your fingers. While it marinates, chop the fruit.3. Mix everything together, top with coconut and mac nuts, and serve.

This dressing is something I whipped up on a whim to pair with the flavours of the fruit. I usually have the hardest time making salad dressing (I’m so picky with them), but I loved this one immediately. It’s one of those dressings you can eat with a spoon too…seriously.

I used chia seeds to help thicken the salad dressing. They probably aren’t absolutely necessary, but they do help. I’m really not a fan of using things like xanthum gum as thickeners, so chia seeds are a nice, all-natural alternative.

Blend the dressing ingredients and let it sit and thicken while you prepare the kale. Now, pour about 2/3 of the dressing onto the kale leaves and massage it in with your fingers, letting it marinate while you chop the fruit and nuts.

Mix it all together, squeeze on some lime juice, and you’re good to go!

When I eat this salad, I don’t see a snow storm outside.

I see a sunny white sand beach, clear blue sky, and glistening turquoise water. I’m sitting at a beachside bar enjoying this salad with a sarong tied around my waist and a wide rimmed hat.

You are all there enjoying the beach too. HI!

We’re rehydrating with a tropical smoothie made with 1 cup coconut milk, 1/2 cup frozen pineapple, 1 frozen banana, and 1 tbsp fresh lime juice. Add some rum too…we’re on the beach, after all.

Life is good.

When I wake up from my dream, I feel like Cinderella after the clock struck midnight. Only instead of a glass slipper, all I’m left with is some questionable peach nail polish and a kitchen that needs a major cleaning. Pineapple juice is STICKY.

Should I wear my wide rimmed hat while I shovel the driveway?

3 Lauren @ What Lauren Likes February 24, 2012

Sigh seeing this makes me want warm weather too! Looks amazing :)

4 Gina @ Running to the Kitchen February 24, 2012

Since my pleading for a tropical vacation is being ignored by my husband, I might just have to resort to this too. Pineapple sounds lovely right now as I stare at the random 3 inches of snow we got last night that I was totally unprepared for!

5 Kristy @ KristyRuns February 24, 2012

Way to brighten up winter! I want to make that smoothie today! And that is the best nail polish color ever.

6 kim collazo February 24, 2012

9 Heather (Heather's Dish) February 24, 2012

looks like vacation on a plate!

10 Angela @ Happy Fit Mama February 24, 2012

I don’t have a real vacation planned for awhile so I’ll have to vacation through my food. Pineapple and coconut = tropical bliss! :)

11 Abby @ Fig & Fork February 24, 2012

We finally got snow in Minnesota too – this salad will be perfect way to escape wintery reality! There’s something about kale and pineapple together that just works!

12 Katie February 29, 2012

And its snowing again today in Minnesota! The salad looks so delicious, and I would say if not adding rum….maybe tequila would be a good idea!? Just a thought :) Thanks for the beautiful salad to brighten up the snowy day!

13 Lauren @ A Full Measure of Happiness February 24, 2012

I’ve been feeling the same way here in NY–luckily no snowstorm, in fact, it was 60 degrees yesterday and I had all the windows wide open! Now it’s back to cooler weather, but I’m hoping our mild winter stays mild!

14 Jamie @ Don't Forget the Cinnamon February 24, 2012

I’ve never thought to add banana to a green salad before but it sounds awesome!!

15 Rachel B February 24, 2012

you are adorable haha i’m anxiously awaiting the snow so I have an excuse to make your hot chocolate!! but that smoothie sounds like it has summer breakfast written all over it.. maybe add a scoop of protein powder and spinach and it can be the tropical green monster?

16 Angela (Oh She Glows) February 24, 2012

mmm that would make a nice breakfast :)

17 Alex @ Raw Recovery February 24, 2012

Oh I am definitely trying this dressing! I love fruity dressings and it is raining here in Philly and maybe I can convince myself I’m in Hawaii if I make this dressing and turn the heat up really high. I’m sure that will work. The deck looks great by the way! So pretty covered with snow :)

18 Angela (Oh She Glows) February 24, 2012

Thanks Alex! I will forward your compliment along to the deck master ;)

19 LizAshlee February 24, 2012

I love the bright colors…I am ready for the sunshine too..spring can you hear us??? Have a wonderful Friday..stay warm!

20 Angela @ Eat Spin Run Repeat February 24, 2012

Oh wow, all that’s missing is the beach!!!! I hear ya – the weather is crazy gross and I’m getting cabin fever too. All I want is to run on a REAL road and not have to bundle up to walk outside! Hopefully it’ll be over by this afternoon like they’ve been saying on the radio. In the meantime, I’ll just sit in my windowless office, gaze at photos of your salad, and pretend like there’s a beautiful ocean with sun shining outside!! ;) PS LOVE your nail colour!

21 Joss February 24, 2012

Boooo..they said it was supposed to be a snow storm…but I woke up and it’s just ice rain? i was all excited and wanted snowmageddon lol…I’m about an hour away from Toronto – so i wonder if up that way is getting more?

I think that salad looks absolutely delish! Love the idea of making it tropical based :D My parents have been in aruba for the past 6 weeks (2 more weeks to go) and then they go on a cruise…I am so jealous :(

22 [email protected] KatieDid February 24, 2012

Have barely had ANY snow in vermont, it’s sort of absurd and I feel bad for all the skiers but I’m sort of loving it. And I think I want to drink that dressssing, yum!!

23 Beks February 24, 2012

Haha! This is one of the funnier entries I’ve read in awhile. That salad looks amazing. I’m going to have to try it. We just got more snow last night in Iowa, so I’m needing something tropical. I’m picturing myself moving to Hawaii. It’s a good daydream.

24 Robyn February 24, 2012

Oh Yum! this sounds/looks so good,,,and I just happen to have a little pineapple left<3…so no excuses!
And definately go all the way,,,wear the hat…lol!

25 Andrea February 24, 2012

Mmmm I am loving tropical-ness right now as well :) I’m practically drinking gallons of tropical smoothies lately! We got a ton of snow last night so the best thing to do for breakfast was a tropical smoothie. Though I have to say, the snow is kind of beautiful. Loving the picture of Sketchie! Have a great day, Angela :)

26 Laura @ Sprint 2 the Table February 24, 2012

I could use a stay-cation (or a real vacation!). If I can brave the rain, I’m going to get some pineapple and have this salad instead. I bet it would be awesome with a little mint an some blueberries too!

27 Mandy Jo February 24, 2012

YUM! This looks and sounds amazing! Perfect pre-vacation salad to prepare me for my trip to Hawaii next week! Hope that doesnt make you all jealous. :)
Love the nail polish too!

28 Angela (Oh She Glows) February 24, 2012

Ah, have fun!! :) Bring me back from fresh fruit??

29 Mandy Jo February 24, 2012

Deal! As long as you promise to whip me up something delicious out of them! :)

30 Angela (Oh She Glows) February 24, 2012

Im sure we could work something out…heh

31 Mandy Jo February 27, 2012

Great! looks like you’ll be making a trip to Idaho- on your bucket list I’m sure! :)
I made this salad last night in preparation for Hawaii and it was delicious! Thank you! (I used to hate raw kale until I made the Weekend Glow Kale Salad and now this! Hmmmm you have made me a kale lover! :) )

32 Angela (Oh She Glows) February 27, 2012

Glad to hear that!

33 Hailey February 24, 2012

Aww Sketchie is super cute, looks like my cat Ellie! This salad looks so yummy!! How long do you let the kale marinate? I have tried marinated kale salads and I always feel like I’m eating chewy, tough raw kale. Terrible. Do you just get regular kale? I’ve heard before that smaller leafed kale is better for raw salads, but I don’t know if there’s any truth to that.

And what’s questionable about the nail polish? Looks great!!

34 Angela (Oh She Glows) February 24, 2012

I suggest trying dinasaur/lacinato kale..very smooth, flat and mild tasting!

35 Hailey February 24, 2012

Awesome, will do thanks! That’s the purple stuff, right? I always just feel like some kind of animal or something chewing the raw kale for such a long time haha.

36 Angela (Oh She Glows) February 24, 2012

haha yea I know the feeling.
It’s a deep green colour. I’m not sure if they have it in a purple variety though, quite possible.

37 osgmom February 24, 2012

You had me at Tropical Mango — this salad sounds to die for! Oh can’t wait to buy these ingredients and whip it up. Can Sketchy get any more photogenic?? You didn’t take after me because I don’t look good in peach, but I know you can rock it :) Glad you are making the best of the snow … Spring is just around the corner!

38 Angela (Oh She Glows) February 24, 2012

I think peach looks lovely on you! but then again I think every colour does.

39 Tiffany February 24, 2012

I can’t wait to make this! I guess I shouldn’t complain about weather here since it’s supposed to be 80 degrees here in southern Ca!

40 [email protected] February 24, 2012

YUM!! I think I’ll be taking a “staycation” in the near future!! The weather near me is sunny and spring-like so this salad will just remind me even more how much I’m lovin’ the weather. Thanks for this awesome recipe-they are always the best!

41 Becca February 24, 2012

You’re hilarious. Love the humor of the post!

42 Rhona February 24, 2012

Ok, this looks absolutely amazing! Pineapple is my crack, seriously. I could eat and eat and then my tongue would be all raw from the acid but I can’t help it. What a wonderful and happy looking salad for the sad weather we are having outside. I WILL be making this stat.

43 Angela (Oh She Glows) February 24, 2012

same with us…I think it’s both our fav fruit…with fresh cherries being a close second, perhaps?

44 jenna February 24, 2012

you are so fabulous! it cracks me up! can’t wait to try this salad and dressing! it sounds so refreshing.

love that nail color! festive.

45 Anna @ On Anna's Plate February 24, 2012

I’ve been eating TONS of pineapple lately!! I guess I’ve been craving summer too :-) Not too far off, really!

46 Amanda February 24, 2012

So funny :) Also, loving the peach polish…it’ll look gorgeous in contrast with the white snow! Ha!

47 Angela (Oh She Glows) February 24, 2012

hah I never thought of it that way ;)

48 Ashley February 24, 2012

This salad looks so yummy! I live in Florida so we are getting the sunny spring weather (not to rub it in ;)! I plan on making this salad soon! Thanks for all of the great recipes! I made your salad in a jar last night but I added a bunch of arugula to the top to make it bigger. :) PS- when are you going to change your picture from pumpkins to something spring-y?

49 Angela (Oh She Glows) February 24, 2012

That sounds like a nice addition to the salad.
Oh the header…I’m so uninspired for the header! haha. Every time I go to shoot it, the snow melts. I might have to jump straight to spring…

50 Krysta February 24, 2012

Yes, wear the hat! ;)

51 Chelsea @ Naturally Sweet Recipes February 24, 2012

What a great nail polish color! Your nails look beautiful!

52 Yellow Haired Girl February 24, 2012

ALL I’ve done lately is dream of summertime. I moved into my current apartment in the fall … and I have this huge, beautiful balcony that will be just perfect for sitting in the sun with a beverage. I. Can’t. Wait.

That salad looks great … definitely easing the winter blues!

53 Angela (Oh She Glows) February 24, 2012

the balcony sounds so nice :)

54 Tia @ Veggies and Pearls February 24, 2012

I say wear the hat! Here in Missouri it has been ridiculously warm. Yesterday it was 56 degrees at 9am, so I happily threw on a halter top and shorts! Of course, later in the day it got colder and I regretted my decision, but it was nice while it lasted! If it gets above 50 degrees, I always wear my shorts.

55 Angela (Oh She Glows) February 24, 2012

haha you gotta rock the shorts and tanks while you can!

56 Amanda February 24, 2012

I understand how you feel all too well. This week is the first week all winter we haven’t had visible patches of grass everywhere. It has snowed every day, it’s my week off, and my oven is broken. I did however make some of your delicious veggie burgers the other day while I dreamed of summer and hiking in the rockies. I feel a rendevous with this salad will happen in the near future…. with a pina colada…. and maybe a swim suit….. in the bath tub. I miss sunshine.

57 [email protected] February 24, 2012

This sounds so inventive and yummy! Yes on the wide-rimmed hat show shoveling!

58 Amanda @ AmandaRunsNY February 24, 2012

Cute post…I can’t decide if it makes we wish I was on the beach or in the middle of a snowstorm instead of in NY on a cold, dark and rainy day.

59 Kathy February 24, 2012

Ooooh Angela …what a perfect salad for me Downunder in Perth ….all those wonderful ingredients are well & truly in-season…off to the markets in the morning (Saturday) to get a beautiful fresh pineapple & mangoes to make it.
I just loved your photo of your deck/verandah….reminded me so much of my deck in Vancouver except I had a couple of big Douglas firs & bird feeders as well (which our resident squirrel visited too !)….loved the silence of snow …aaah…memories :)))

60 Tiff February 24, 2012

I adore Sketchie!

61 Lauren (PB&G) February 24, 2012

Oh wow this looks fantastic! Maybe I’ll go buy some kale and pineapple..

62 Averie @ Love Veggies and Yoga February 24, 2012

Pretty nail polish and gorgeous salad! I am a huge fan of pineapple in just about anything…salads, on it’s own, on pizza, in smoothies, you name it, pineapple and mango both…love them. Add coconut and banana and lime…I could almost pretend I was drinking a pina colada while I was eating…kale :)

Stay warm!

63 Meagan February 24, 2012

This is perfect timing! I’m going to a lunch thing this weekend and said I’d bring a fruit dish. Then I realized the girl who is cooking rarely has a side of veggies in her meals, so I was trying to think of something green and fruity to bring. This dish sounds awesome. And we live in Hawaii, so at least the pineapple will not be a problem to find!

64 Moni'sMeals February 24, 2012

I do not blame you one bit! I too would be making pina coladas and googling FIJI! :)

They both seem so refreshing these 2 recipes of yours…and pineapple is just so amazing. Nothing like it too when you are on an island when it is sooo fresh. :) My 2 times to Maui and all I did was obsess over how fresh the pineapples tasted.

Stay warm. :)
At least shoveling the snow is a killer workout!

65 Kale Crusaders February 24, 2012

How did you know I was going through a massaged kale salad slump? Thanks for the inspiration!

66 Amber @ Assistance for Single Mothers February 24, 2012

I had one of these salads the other day and it was quite delicious. I enjoyed the pineapples the best because pineapples are my favorite fruit.

67 Karen February 24, 2012

As I sit here, I am both laughing at your tropical fantasy and commiserating along with you on last evening’s snow pile up. I love the image of you shoveling in your wide brimmed hat and peach nail polish…you are hysterical! Oh, and the tropical themed kale salad sounds fabulous…must buy pineapple today!

68 Nicole February 24, 2012

It’s 85 degrees out today where I live in Florida! This salad looks delish! I might just pick up some mangos from the store this weekend.

69 Liz @ Tip Top Shape February 24, 2012

This is the perfect gloomy weather cure! Love it!! And, I’ve wanted to start watching Up All Night for a while. That’s the one with Maya Rudolph, right?

70 Angela (Oh She Glows) February 24, 2012

yes, she is AMAZING!!! Actually im in love with the entire cast. Eric and I said it’s the best new comedy since The Office :)

71 Meghan @ Making Love In the Kitchen February 24, 2012

Yum! Love the look of the tropical salad. I’m all about pretending it is a different season through flavours. A little coconut here, a little pineapple there, a bit of mango and voila- you are back in the tropics.

72 [email protected] for the Soul February 24, 2012

awwww although snow sounds wonderful right now, from the way you describe it, it must be torturous! But great thing you have this amazing recipe ;) It sounds really refreshing~And omshhhh Sketchie looks!!!! Eeeek.
ps: you seriously crack me up, Angela! “picking lint off my sweater” :P

73 Cait's Plate February 24, 2012

My backyard looks just like yours today!! We weren’t expecting snow at all so it was definitely a surprise to wake up to!

74 Amanda February 24, 2012

How colorful! Some of my favorite fruits paired with some healthy kale? I think so. Thank you for the never-ending delicious recipes, Angela :)

75 Stacy @ Say It With Sprinkles February 24, 2012

I juuuust bought a pineapple, mangos, kale, and bananas yesterday – I think it must be a sign! =)

76 Amber K February 24, 2012

I am so with you on the xanthan gum hate! Especially because it completely upsets my stomach. I’m going to have to try using chia seeds to thicken things!

77 Tracy February 24, 2012

This looks amazing, I can’t wait to try it out over the weekend! I love tropical flavors, especially pineapple (I have a similar tropical oatmeal recipe, minus the kale and salad dressing, lol). YUM!

78 Tracy February 26, 2012

Ok, I made this salad yesterday and it was amazing! Even my non-healthy eating fiance (who took one look and said he would only commit to trying a small bite) was telling friends about how good this salad was. All of the flavors blend together so well and the dressing is delicious. I made a few substitutions to try to use up what I had on hand- spinach instead of kale (wish I had kale right now!), lemon juice instead of lime (thank you Costco for 4 lb boxes of Meyer Lemons), and pistachios instead of macadamia nuts. I can’t wait to make this again with the original ingredients! Just in case I haven’t conveyed how much I liked this salad, I actually finished off the leftovers for breakfast (I just considered it a deconstructed green monster). :)

79 Angela (Oh She Glows) February 26, 2012

haha awesome Tracy!! Glad you enjoyed it :)

80 Laura @ LauraLivesLife February 24, 2012

I have the hardest time during the winter too – I hate being cooped up inside, but I do not deal with cold well. I’m a total baby! This recipe totally inspired me – I think I need to spice things up and stop wallowing!

81 TeenyLittleSuperChef February 24, 2012

I love how you brought the tropics to the tundra that is Canada! Thanks for warming up my day with this awesome salad. I can’t wait to give it a try. I’m always looking for new ways to dress up my greens. This sounds heavenly! Have a great day out by the beach :)

82 Anna @ The Guiltless Life February 24, 2012

Haha it always kills me how my cats just eat clumps of their own fur or lint around – so gross. And then of course there’s the inevitable hairball that I have to deal with so…yeah.

I love how fresh this salad looks! I always enjoy combining fruit in salads. Yum :).

83 Kelly @ Foodie Fiasco February 24, 2012

I’m so sorry you’re cold, Angela. (But you’ve got a delicious way of taking care of it!)

Hmmm… I guess you’ll just have to come live with me in LA for a bit! ;)

84 Jolene ( February 24, 2012

This sounds soooooo good Angela! I have made your weekend glo kale salad multiple times and it is always a hit. Can’t wait to try this one!

Your recipes are my all-time favourite. I have made so many of them over and over and over!

85 Margaret February 24, 2012

I’m in Sydney Australia, so obviously it’s summer right now but I’m surprised you could buy a fresh mango. It’s impossible to buy mangoes in winter here. In fact they’re really only available for 3 months of the year.

99 Lizzie February 25, 2012

I’m glad I’m not the only one! On my “To Do” list for the weekend I found myself adding things like clean out and scrub entire fridge, clean cupboards, and reorganize bathroom lotions and potions. Early onset spring cleaning I guess.

I was super disappointed when I went to the grocery store yesterday because pineapple was on sale and I also have been craving it, but they didn’t have any! I struggle with meal planning this time of year because half of me wants to be eating fruits and salads, the other half of me is still in hot, comfort food mode. Come on summer!

100 Amanda February 25, 2012

This salad looks so good – especially in the snowy winter months!

Watching the snowflakes fall from my window, it will be wonderful to imagine that I’m on the beach, after all! Thank you so much for sharing the recipe. Could you please drop me an email so we can chat?

Oh, and Sketchie is so adorable! He looks a lot like our cat, Suzy, who loves eating lint, too.

102 Ann February 25, 2012

Hey Christina, Thank you so much. I think I wrote some on my FAQ page but as for a “how to” post I will keep that in mind. Thanks for the suggestion!

106 Heathy February 25, 2012

Oh yum this salad looks great Angela. I’m in Costa Rica with an abundance of all the fruits you mention here (and even brought chia) – just no kale. But will try this with lettuce!
I’m from Ontario too and happy to get out of the cold and snow for a while.

107 laura February 25, 2012

OH my goodness! This makes me want spring&summer to come even sooner.
Im going to my yoga studios potluck tomorrow and would totally make this to share if I didn’t live in a dorm without a kitchen. :)

Good thing there’s food to help us get away from the snow! Or in my case, rain! Lots and lots and lots of it!
As a matter of fact…it nearly flooded a farm nearby my neighborhood…

It’s almost March – not toooooo long until summer! In the meantime, thanks for the taste of the tropics! And I hope you are having a wonderful – if a bit cold – weekend!

114 Drisana (SoulShineBlog) February 26, 2012

Definitely rock the wide rimmed hat!

115 [email protected] February 26, 2012

I’m always trying to sneak kale into stuff. This looks tasty!

116 Lexi @ Cura Personalis Foodie February 26, 2012

With Spring Break 1 week away, I will definitely support the large-brimmed hat/smoothie-drinking bandwagon :)

117 Jen February 26, 2012

Really awesome dressing – my hubby and I inhaled our salads!!

118 Angela (Oh She Glows) February 26, 2012

So glad to hear that :)

119 Snack Girl February 29, 2012

Wow! Pineapple and kale – I would never have come up with that combo. Thanks for the idea – I will have to give it a try. It just started snowing here – and I did a pineapple recipe today too -

120 Farmgal February 29, 2012

Made the “virgin” piña colada recipe that you suggested at the end of your post for a special family night treat for my kids. You are now their hero! Thanks for all of your great and healthy ideas! Salad is next on my list…

121 Angela (Oh She Glows) March 1, 2012

aha that’s awesome, glad it was enjoyed!

122 Sara March 1, 2012

JUST as soon as I thought I’ve seen it all or was contented by how many recipes I’ve been able to replicate of yours, you yet again BLOW ME AWAY. This looks absolutely incredible! I shall make this in the very near future.

I have not gotten to say my over-due thanks to you, Angela Liddon, that I can officially eat, create, and love my vegan lifestyle. :)

Also, I would have definitely voted for your blog, but I rather not make an account.

123 Angela (Oh She Glows) March 1, 2012

Thank you Sara! :) So happy to hear that!

124 Jenn March 1, 2012

LOVE LOVE LOVE that pic of your kitty! Too hilarious!

That salad looks yummy. I could probably do without the kale though. For some reason, I can’t yet put greens and fruit together. Love pineapple! It’s my absolute favorite fruit in the world… paired with coconut and I’m in dreamland!! Thanks for sharing the recipe. The dressing sounds magnificent!

125 Elisa March 3, 2012

The salad looks great! I’ve seen a lot of ginger used with pineapple lately. It might go well here, too?!

126 Angela (Oh She Glows) March 4, 2012

Yes I think it would go very well :)

127 Rufina Gillette March 5, 2012

Love this recipe! Looking forward to trying it this week! Ever since I fell in love with The Veggie Grill’s All Hail Kale Salad with a papaya-ginger dressing (recipe can be found on-line), I can never get enough kale!! Thanks for what looks like another fantastic flavor combination. :)

128 Mandie March 12, 2012

Thank you for sharing your accomplishments and hurdles, very inspiring! And, I cannot wait to try this salad well as many of your others!

129 Rosanna April 2, 2012

Looks amazing! I have never tried a kale salad before, and I’m attempting to make this one for my family’s Easter dinner this weekend…do you think it would work to marinate the kale overnight in the dressing? I’m planning out my cooking schedule, and I’m slightly concerned the kale might be too bitter for my less-than-used-to-raw-things family….I read that even marinating kale overnight doesn’t wilt it too much. Your thoughts?

130 Angela (Oh She Glows) April 2, 2012

I too haven’t tried marinating overnight, so I’m really not sure. I would think it would hold up since it’s kale, but not sure how the fruit would keep overnight? my other weekend glow kale salad does hold up the next day (made with a tahini dressing) though.

131 Stacey April 11, 2012

I ate half of it last night and the rest for lunch today. It help up just fine over night. Because of the acidity in the dressing, the banana didn’t even brown!

132 Stacey April 11, 2012

I adore kale salads and this one is no exceptions. I made it and shared it with my co-workers and they couldn’t stop raving.
I blogged about my experience making it. Thanks for such great recipes.

133 Angela (Oh She Glows) April 12, 2012

Glad to hear that! :)

134 Wellness Professor May 23, 2012

Coconuts are abundant where i live but i do not eat them often. Perhaps i would grow fond of them if i make a nice recipe like the one you have made. I have to try your recipe. Thanks for sharing this.

135 Julie August 1, 2012

This salad sounds amazing. I’ve had such a tough time with that polish. It seems to never dry!

136 Cathy Lamb August 2, 2013

I just made this and it is sooooo good. Thanks

137 Jessica August 20, 2014

I just made this for dinner last night and LOVED it! So delicious :) I tweaked it a bit to use ingredients I had on hand though; almond milk instead of coconut milk for the dressing , and extra mango and banana in place of the pineapple, spinach instead of kale and almonds instead of macadamia nuts…so not really quite the same anymore but still delicious!
