Just wanted to thank you for that cheesy white bean “pesto” recipe you posted…gosh, is this terrific! So simple, so low fat, yet so rich tasting! (I added 1/2 tbs. of EVOO just to boost the pesto-likeness and satiety.)

Score! I just made my own homemade almond milk and I have leftover almond flour to make those almond meal macaroons!!
This is such a great idea. Whenever I don’t feel like making dinner, I find inspiration in looking at other people’s ideas. I also find that wonderful photos like these help me to consider the look of my meal and make it a bit more special for me and my family. Thanks for providing further inspiration via these photos!

Woah — amazing roundup. My husband and I agreed that we’d try doing a week of vegetarian eating (which probably means some vegan thrown in). So these are terrific. Periodically, I realize we are eating vegan, but it’s usually accidental, so this coming week should be interesting!
