This weekend, I had one thing on my mind: comfort food.
and tea. Lots of tea.
It’s probably not the proper thing for me to admit as a grown ass woman (sorry, it sounded much better than typing “adult”), but I absolutely love snow storms. They always bring me back to my childhood. I remember going to bed super excited and as soon as my eyes opened in the morning, I’d rush over to the window to peek out. Actually, come to think of it, I’d usually wake up in the middle of the night and peek out the window to “check on things”.
In the morning, I was either 1) super disappointed and let down by the weather man/woman or 2) CRAZY EXCITED because school was cancelled!
I bet you can guess how I felt waking up on Friday morning. I screamed to Eric, “let’s go play in the snow later!” As you can guess, he did not share my same enthusiasm.
We’ve had very little snowfall over the past few winters, so it was nice to get a good dose of snow for once. As a child growing up in the Maritimes, snow storms are in my blood. Don’t get me wrong, I’m counting down the days until spring, but sometimes a good snow day is just what you need to feel alive again.
Cozy weather called for clean-out-my-pantry comfort food. This pasta dish was thrown together based on what I had kicking around and it turned out good enough to share. The best part is, it came together in about 20 minutes or so. Easy comfort food…my favourite kind.
Featuring all new, protein-packed salads, hearty toppers, flavour boosters, and dressings you'll want to drink, my new cookbook will transform the way you think about salads. Oh, and be sure to flip to the back for a surprise dessert chapter!

Prep time
Cook time
Total time
A quick and easy tomato mushroom pasta thrown together in 20 minutes.
Ingredients
- 2-3 servings of pasta (I used fusili)
- 1 tsp extra virgin olive oil
- 1 small sweet onion, diced
- 3 garlic cloves, minced
- 8-oz sliced cremini mushrooms (2-3 cups sliced)*
- 1-1.5 cups canned diced tomatoes, to taste
- 3/4 cup fresh basil leaves, chopped
- 1/4-1/3 cup nutritional yeast, to taste
- 1.5 tbsp tomato paste
- 1 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp red pepper flakes (optional)
- 1/2 tsp fine grain sea salt, or to taste
Directions
- Bring a large pot of water to a boil. Add in your pasta and cook until Al dente, about 7-10 minutes.
- Meanwhile, heat a large skillet or wok over medium heat. Sauté the garlic and onion in the olive oil for about 5 minutes, or until translucent.
- Stir in the sliced mushrooms and diced tomato and cook for another 8-10 minutes or so over medium-high heat, until some of the water cooks off.
- Stir in the fresh basil, nutritional yeast, tomato paste, oregano, thyme, red pepper flakes. Add salt to taste. Simmer for another 5 minutes or so and adjust seasonings to taste if desired.
- Drain pasta and add back into the pot. Stir in the pasta sauce, heat, and serve immediately with Cheezy Garlic Bread if you’d like.

I love these kind of pasta dishes. Easy and full of flavor. Congrats on the nom.
As a matter of fact, school was delayed 2 hours here today due to the snowy weather! My kids were happy to be able to sleep in a bit longer. I love pasta dishes with mushrooms and tomato, perfect for a cold winter day.
This sounds amazing. Kind of reminds me of a vegan goulash.
You know what’s even better than a cancellation? A school cancellation announced the night before! Then you get to sleep in and not even worry about checking the news. Boy, I wish college had closings and delays. :)
This looks delicious. Quick and easy is right up my alley. Try to stay warm!
Every time that I see or hear “fusilli” I can’t help but think about Fusilli Jerry from Seinfeld, hehehe.
The dish looks quite yummy and perfect for warming up on a cold snowy afternoon!
This is dinner tonight! It’s like a classed up, vegan version of a major staple in my house as a kid. Awesome!
Keep warm! Stay safe!
yum the pasta looks delicious! I love easy pasta meals because they are always so delicious!
This sounds so comforting and amazing! I had a snow day from work on Friday– not nearly as nice as a snow day from school. I just stressed about the work I couldnt get done and hoped that anyone who made it in could cover everything
This looks yummy Ange. :)
By the way, I voted. You are too modest Angela!!!! Post this to your FB and Twitter accounts so people can vote for you! You have a lot of supporters and I know they would love to vote for Oh She Glows!
Thanks Tammy :) You are sweet.
Yum– what a perfectly comforting dish for a cold winter night! Love it!
Yum! This looks like the perfect meal to throw together on a snowy winter evening.
Yum this sounds so good Ange, and perfect for that crazy snowy weather we got on Friday! I also had a clean-out-the-pantry dinner that night because going to the grocery store was completely out of the question, even though it’s only 2 mins away!
That looks absolutely delicious and as for the snow? Here’s another grown ass woman declaring her love for the stuff as well! We’ve been out snowshoeing 3x this year and I’m hoping for a few more chances before the dreary rain of Spring moves in. I will gladly shovel snow, build snowmen, sled, all of it! YAY SNOW!
hah just reading your comment made me excited more for the snow!
That snow. Omg. I grew up in MN and remember blizzards and storms like that. Be safe, dry, and warm…inside! And eat this and lots of cookies, too :) I have been so into mushrooms lately. I bought a huge container on Friday and they’re all gone! I love them – this is perfect!
same here…sometimes I just saute an entire package of mushrooms and eat the whole thing paired with some marinara sauce! Kinda stinky, but they taste good :)
Simple, Amazing, Comforting, and talk about craving this! What a fantastic share; keep enjoying the snow.
Mmmmm yes. This shall hit the spot nicely. Creamy mushroom. . . .I am drooling just looking at your images.
Deliciously simple! Man I hope the snow eases for your guys soon!!! Maybe one more snow day wouldn’t hurt though right :)
Well, I certainly share your enthusiasm for snow–although I think living in California, where I never have to shovel, probably helps quite a bit with that. :) That pasta sound delicious and easy too!
haha I wouldn’t know anything about blizzards/snow storms, but I think it’s cool that you enjoy them! I always hear most people dreading them like the plague :P And this looks so yummy! You definitely have lots of tasty recipes Angela.
I get the same kind of giddy excitement when we’re supposed to get snow. The best part is going for ‘snow walks’ the next day once everything has settled down. The world seems so quiet and still :-)
