This weekend, I had one thing on my mind: comfort food.
and tea. Lots of tea.
It’s probably not the proper thing for me to admit as a grown ass woman (sorry, it sounded much better than typing “adult”), but I absolutely love snow storms. They always bring me back to my childhood. I remember going to bed super excited and as soon as my eyes opened in the morning, I’d rush over to the window to peek out. Actually, come to think of it, I’d usually wake up in the middle of the night and peek out the window to “check on things”.
In the morning, I was either 1) super disappointed and let down by the weather man/woman or 2) CRAZY EXCITED because school was cancelled!
I bet you can guess how I felt waking up on Friday morning. I screamed to Eric, “let’s go play in the snow later!” As you can guess, he did not share my same enthusiasm.
We’ve had very little snowfall over the past few winters, so it was nice to get a good dose of snow for once. As a child growing up in the Maritimes, snow storms are in my blood. Don’t get me wrong, I’m counting down the days until spring, but sometimes a good snow day is just what you need to feel alive again.
Cozy weather called for clean-out-my-pantry comfort food. This pasta dish was thrown together based on what I had kicking around and it turned out good enough to share. The best part is, it came together in about 20 minutes or so. Easy comfort food…my favourite kind.
Quick and Easy Creamy Tomato Mushroom Pasta

A quick and easy tomato mushroom pasta thrown together in 20 minutes.
Ingredients
- 2-3 servings of pasta (I used fusili)
- 1 tsp extra virgin olive oil
- 1 small sweet onion, diced
- 3 garlic cloves, minced
- 8-oz sliced cremini mushrooms (2-3 cups sliced)*
- 1-1.5 cups canned diced tomatoes, to taste
- 3/4 cup fresh basil leaves, chopped
- 1/4-1/3 cup nutritional yeast, to taste
- 1.5 tbsp tomato paste
- 1 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp red pepper flakes (optional)
- 1/2 tsp fine grain sea salt, or to taste
Directions
- Bring a large pot of water to a boil. Add in your pasta and cook until Al dente, about 7-10 minutes.
- Meanwhile, heat a large skillet or wok over medium heat. Sauté the garlic and onion in the olive oil for about 5 minutes, or until translucent.
- Stir in the sliced mushrooms and diced tomato and cook for another 8-10 minutes or so over medium-high heat, until some of the water cooks off.
- Stir in the fresh basil, nutritional yeast, tomato paste, oregano, thyme, red pepper flakes. Add salt to taste. Simmer for another 5 minutes or so and adjust seasonings to taste if desired.
- Drain pasta and add back into the pot. Stir in the pasta sauce, heat, and serve immediately with Cheezy Garlic Bread if you’d like.

As a matter of fact, school was delayed 2 hours here today due to the snowy weather! My kids were happy to be able to sleep in a bit longer. I love pasta dishes with mushrooms and tomato, perfect for a cold winter day.
This sounds amazing. Kind of reminds me of a vegan goulash.
You know what’s even better than a cancellation? A school cancellation announced the night before! Then you get to sleep in and not even worry about checking the news. Boy, I wish college had closings and delays. :)

Yum this sounds so good Ange, and perfect for that crazy snowy weather we got on Friday! I also had a clean-out-the-pantry dinner that night because going to the grocery store was completely out of the question, even though it’s only 2 mins away!
That looks absolutely delicious and as for the snow? Here’s another grown ass woman declaring her love for the stuff as well! We’ve been out snowshoeing 3x this year and I’m hoping for a few more chances before the dreary rain of Spring moves in. I will gladly shovel snow, build snowmen, sled, all of it! YAY SNOW!

That snow. Omg. I grew up in MN and remember blizzards and storms like that. Be safe, dry, and warm…inside! And eat this and lots of cookies, too :) I have been so into mushrooms lately. I bought a huge container on Friday and they’re all gone! I love them – this is perfect!
same here…sometimes I just saute an entire package of mushrooms and eat the whole thing paired with some marinara sauce! Kinda stinky, but they taste good :)

I get the same kind of giddy excitement when we’re supposed to get snow. The best part is going for ‘snow walks’ the next day once everything has settled down. The world seems so quiet and still :-)

I am the same way with snow! Even though here in WI snow isn’t rare, it’s still awesome to think there is a possibility of a “snow day”!
We had snow in London today but it was only a light fall… still, it made me giddy as a child on Christmas day :) (Who am I kidding, I’m 20 and I’m still giddy on Christmas day, and probably still will be when I’m 80!) This looks like the perfect dish for this type of weather/mood.

I am SO with you on the snow enthusiasm – we love it here! I love the change of seasons and need this hibernating comfort food time of year! Playing in the snow beforehand makes the food taste oh-so-much-better!

When I met mine almost seven years ago (o dear…), he didn’t eat tomatoes, he didn’t like mushrooms and whenever I put a veggie meal on the table, I got the ‘no meat in this?!’ response. By now, we eat almost entirely vegan at home (I throw in the occasional bit of cheese or egg on his side of the dish to keep him happy), he loves tomatoes and he absolutely doesn’t mind mushrooms! I’ll admit, a lot of screaming and yelling was involved in the process (and a lot of ‘before you start, taste it.’, but he seems more adaptable to food than I ever wished for. Which doesn’t mean that yours will start eating mushrooms, but I thought I’d at least give you the hope.

This looks so great, which I find so funny for me to say because I used to be “afraid” of mushrooms! ;) Since becoming a vegetarian, though, I have discovered a new-found love for them. Adapting a vegetarian (often vegan) diet has truly changed my taste buds and cravings for the better. I love it! :)
I made this tonight for dinner and my roommate who usually makes fun of me for being vegetarian RAVED about it and even posted it to instagram with the caption “First full vegan meal ever and it was delicious #surprised.” Now if only I could find nutritional yeast for less than $13.95 a jar…
I made almost the exact same dish on Thursday and ate it every day through the weekend! We never eat leftovers that long, but there was something about it that just kept me coming back – yum!!

It’s as if you read my mind! I had some mushrooms to use up and didn’t feel like putting a lot of effort into dinner. This went over great for both me and my husband. :) I love mushrooms as much as I love pumpkin. :)
I was homeschool and am now a teacher and I still love a good snow day! When I was homeschooled, my mom and I would sometimes have rain days where we would put off school work, make some hot chocolate and read a good book under a pile of blankets. Love watching the snow fall! Looking forward to trying out this recipe soon :)

This looks delicious! I’ve always wondered, does nutritional yeast really substitute for cheese? Does it taste the same? OR just melt like cheese does? Ps. Yes, I’m a noob at a lot of the vegan/vego foods- since I’m not one of them. Although I love eating vego foods often :)
I would say it gives dishes a cheezy and creamy taste. It doesn’t look like cheese at all (they’re flakes), and it doesn’t melt like it either.
